gOOd AFterNooN!!!
I’m wrapping up the digital world here and then headed down to the bakery and to run some errands soon.
Went to Body Pump this morning. I was feeling a bit weak today and went lighter on the weights. I always feel stronger on Mondays than Fridays! I am LOVING my “commute” to the gym these days. 1 mile walk through downtown. I couldn’t ask for a better path to get from house to gym!
Lunch today was a big green salad with green pepper and carrot topped with leftover beans, 2 hidden plantains, an egg and some cheese
Eggs taste best with smoked paprika!
And a flavorful yolk
See that plantain hidden in there? That was my last bite and it was awesome!
Grapes on the side! [Said to the tune of ‘pants on the ground’]
And Happy Weekend to the rest of you : )

Yay Baby Cullen 😀
We had eggs at breakfast…yummo!!!!
Christina @ Just Running says
Commute? I guess since you’re a HLB, going to the gym does kind of count as going to work! Haha, very cool. 🙂
You make some creative salads!
Vivi @My.Beautiful.Air says
Yum what a great salad! good inspiration – im making one right now! love paprika on eggs.

I miss walking to the gym so much. Not only did it save on gas, but it was so fun walking through the ‘hood and people watching. That’s what I get for moving from city to suburbia!
Gina @ Running to the Kitchen says
Yay baby Cullen! I’m in love with his name 🙂 Happy weekend indeed!

Your photos look EXTRA vibrant and beautiful today!
I’m LOVING the salad – had a hard boiled egg this morning and now I wish I had made it a sunny side up!
Glad you have your walking routes back! There’s nothing better 🙂

What a cute placemat – so picnicky! I love saving extra awesome bites for last. I can only imagine how great that plantain was. And every time I read your blog I get so envious of your walkable/bikeable life style. It is a major consideration for me as I consider where to job search!

Another beautiful salad! Love the egg on top! And thanks, now I will have “Pants on the Ground” stuck in my head for a week! 🙂

I went to Bodypump this morning too!! Mine was at 6:00 am. I felt a bit shaky too, actually, but I think it was a combination of being very early and my latest session was somewhat recent. Feels good though! 🙂

I hate the taste of eggs. I know I’ve mentioned that in comments on here before. This morning I was browsing some old posts and kept coming across photos of different incarnations of French Toast. Now I want some French Toast. Interesting how that works. I think I can doctor the egg up enough so that it doesn’t taste too eggy and I’ll have to use a GF bread product. Multi-seed English muffins perhaps? We’ll see what happens over the weekend.
Andrea @ The Skinny Chronicles says
Happy Weekend to you too! Such a lovely salad. Loving the smoked paprika tip. I am definitely trying that this weekend.
Angel7 says
I am going to try paprika on our eggs the next time I make them.

I need to remember to try paprika next time I fry up an egg! I usually just season it with pepper, but it sounds like paprika is the way to go.
Hope @ With A Side Of Hope says
I love paprika on potatoes. I bet it would taste great on a fried egg! I love that you put eggs on a salad. I’m going to have to try it. 🙂
Lindsay @ biking before bed says

I love cubed cheese on my salads! Nothing better than a big bite of cheese!!! I tried my first plantain last month and could not get past the fact that it looked and did not taste line a banana!

My husband and I just enjoyed a beautiful downtown walk after lunch today. It was to walk off the margaritas and big plates of Mexican food. LOL. I do wish I had the downtown to walk everyday {like I used to}. I miss that.
Yeah, to baby Cullen!

don’t you just love body pump? it’s my ultimate favorite gym class…I always feel so strong afterwards (and then really sore the next day lol)

Is the smoked paprika a lot different from regular paprika?
Such a fun, colorful salad! The grapes look particularly good.
KathEats says
Yes, it’s very different – the smoke adds a ton!
Molly @ RDexposed says
It’s all about cutting into the egg and letting it run over the salad! That’s tentively on my dinner menu tonight!
Kim @ Eat, Live, and Blog says
I love runny egg on top of salads! 😀
Kristin says
Yum!! An egg in a salad? I need to try that one. Plus, those grapes seem so fresh. This looks like a delicious combination of healthy foods!
Zoe @ loseweightandgainhealth says
Still not tempted by a runny egg on salad but loving the idea of smoked paprika on an egg. That would work well. Happy weekend all you Statesiders!
J3nn (Jenn's Menu and Lifestyle Blog) says
Everything in the salad sounds like a winning combination! I like the cubed cheese; when it’s shredded, I swear I don’t taste it in salads!
