I cannot believe it’s 4:00 already! I’ve done nothing but work on the blog and workout today. And I just finished lunch!! It feels like 1:00 for me. So strange.
Got 10 hours of sleep last night and I needed it!!
Breakfast
Started the day at 7:30 with some hot tea – egg nog flavor!
Husband came down around 9 and we made apple-walnut oatmeal. I topped mine with a little brown sugar and ground flax. Yum!
Also made some blueberry coffee
Breakfast calories: ~400.
Workout
We didn’t make it to the gym until 1:00!!!!! But I got in a good workout on the Stairmaster, ET, and upper body weights. 426 calories burned.
Lunch
I knew I wanted to do a tuna salad-style meal with carrots and celery. We’re out of bread and I’ve just been loving this lunch. Husband suggested I used up some turkey he roasted this week, so I had a turkey salad instead of tuna. It was quite delicious! I used plain yogurt as the “sauce” along with red curry powder and mustard. Chopped up are celery and carrots, and it’s served over spinach and pom seeds.
On the side I had some rice crackers and 1.5 clementines (the other .5 was rotten 🙁 )
These crackers are great. I got them at the organic grocery store around here. I like the plain ones, but these herb ones are good too. But they are no Kashi cracker!
Total lunch calories: ~431.
Dessert
I had a little Belgium truffle for dessert! I got a little box of these from Trader Joe’s last week.
Dinner is on my own tonight (and in 2 hours!?!?). I’m thinking about turkey chili (we have more turkey to use up!). We’ll see!

hi kath, i was just wondering, what does ground flax taste like? and do people generally eat it to add fibre into the diet? i'm curious. 🙂

hey, i was wondering how you flavored your tofu from dinner the other night and if you had any other recipes involving tofu because i'm a vegan and i'm always looking for different ways to prepare tofu. (:

Ground flax tastes kind of nutty. Like ground up nuts or seeds? It’s quite good and a GREAT source of Omega-3s, which are super important in the diet. You should give it a try for the Omega-3s alone!
