I’m still really, really enjoying the “day in the life” of being a Clinical Dietitian! There are just so many little things that add up and are a great fit for my personality. Especially the problem solving.
After work I ate my Alliebar and kiwi and headed down to my yoga studio. I had 45 minutes to spare and went for a walk – in my Danskos (!!!) if that tells you anything about how my first day went in them 🙂 My feet weren’t necessarily walking on sunshine but they did NOT HURT and were able to walk a mile or so additional. SCORE!! I think I have found a winner. I also think that the secret to Dankos is that the heel is kind of depressed – so there isn’t pressure on it like in high heels, wedges, and other angled shoes.
YOGA was relaxing. We went to a different instructor tonight and the class was a much slower pace, but that was good for my muscle recovery. My legs feel great now and I’m ready to get back into workouts tomorrow. I’m going to ease in with the ET and biking tomorrow and run on Wednesday.
After yoga, I came home to the most DELICIOUS salad!!!
This is a perfect example of how Matt and I work together. I told him yesterday that I’d be home late and to whip up dinner. I also told him the ingredients: millet, a can of chickpeas, eggplant, pepper, nuts and raisins and told him to make something spiced with garam masala.
He executed my idea perfectly!
And here’s a recipe page with all the info: Spiced Millet Salad.
My Buddhalicious portion! (Buddha bowl availability making progress!)

KERF mentioned on Woman’s Day’s website: Granola + Yogurt as a favorite snack!

Thanks for all of the RUNNING page suggestions!! I’ll work on something, but it might be a week or so before I can put anything up (this is a busy week!!). Not sure I can cover all of your topics, but I can tell you about my experiences and what has worked for me. I’m not a running expert! (Example: I’ve never had shin splints, so I haven’t the slightest what one should do to treat them – perhaps lots of ice?!)
***
I’m going to READ in bed. Goal of the month is to read more!!! I have a stack of great novels to crack into.
Susan says
That salad will have to go onto next week’s menus here…looks great!
Lauren @ eater not a runner says
That looks SO good, I have to try millet 🙂
Maggie @ Fit.Fun.Food says
Matt sounds like such a sweetheart! Enjoy your reading! I admit I’m a bookwork as well. What are you starting with?
Kath says
Still working through “The Last Song.” It’s not going very well!
Jessica @ How Sweet It Is says
That sounds amazing! If I had asked my husband to do something like that, first he would have asked what the heck those ingredients were, then would have just throw them together and probably left them cold!
Estela @ Weekly Bite says
I want that bowl!!!! 🙂
Have a great night!
Ally says
Awesome. That salad looks awesome and that Matt is so in sync with you is awesome too. I always feel guilty in our household for being home late and stuff. I’m sure some of its self-induced but I continue to be amazed at how good you are at time-management!!
Beth @ Beth's Journey to Thin says
Mmm that salad looks great. I’ve actually never tried millet before, but I do something similar with couscous a lot. What does millet taste like??
Allie (Live Laugh Eat) says
I can’t wait to be done with school so I can READ for fun again! Whenever I even think about reading non-school stuff a little monster in my head reminds me of how much textbook reading I need to catch up on.
I’ve wanted a pair of Danskos for years now and I think with my goal to NOT have a desk job, I should get myself a pair.
Food Makes Fun Fuel says
I definitely need to get in the habit of reading for fun, not school. I have 4 magazines I haven’t touched!
Jenny says
Look at you in your lab coat! I just saw that- impressive and so pretty!
Kori & Kaci says
Everything looks delicious, and as usual, Matt is a sweetheart! =) Congrats on making it onto Woman’s Day website. That is definitely a noteworthy accomplishment. I hope you enjoy your reading!
Ana says
Kath the dinner Mat made looks awesome, does he have a recipe or the way he made it to share??
Ohh, I am waiting for that buddha bowl to show up on your open sky, it is gorgeous! By the way, I sent you an e-mail about vitamix on your open sky, did you get it? (I sent to the e-mail that showed up on your open sky page)
Thanks
Ana
Kath says
Yeah, I linked to it in the post!
Kath says
PS. I thought I replied to your email?
Ana says
No, I didn’t get your e-mail…
Ana says
I can’t find your answer Kath… you said you replied to the post, which post? ( I sent an e-mail…?? confused!)
Ana
Ana says
Ahhh, got it, you linked the recipe to the post, thanks!! I will make it this week, also like millet a lot here!!
But yes, I didn’t get any e-mails about the vitamix…
Emmalinda says
Would you share the stack of novels you’re hoping to read? I take my teacher licensure test in 2 weeks–and I’m ready to do some serious reading after that!
Kath says
I don’t even know the titles! They’re just up there. Will share when I open them.
Annie@stronghealthyfit says
That salad looks great! I have yet to try millet. Maybe it will be the next grain I try. Sounds like you and Matt work great together at cooking meals 🙂
Anna @ Newlywed, Newly Veg says
Congrats on the Women’s Day mention! And so glad that your shoes are a hit!
Don’t you just love coming home to the perfect dinner? Sigh. 🙂
Meg @ Be Fit Be Full says
Ok, millet is now on my list of “must try soon”.Glad you are enjoying the Dansko’s so much! I’m sure a ton of people who work on the clinic wear them?
Stacey@http://stacey-healthylife.blogspot.com/ says
I’m glad you are learning so much and sharing with everyone. It’s sounds like an exciting time.
Mary @What's Cookin' with Mary says
What a great idea! Love that salad 🙂
Cynthia (It All Changes) says
I’ve never had millet before. What kind of grain is it?
Shannon (The Daily Balance) says
ooo let me know if you need some book recommendations (or novels to borrow!)
xo
Donca says
Wow that millet salad looks delish! I will have to try that. It seems like you and Matt really have a great partnership.
Lizzie says
Kath,
For the running page, it’d be great to know of stretches/techniques that would help achy knees!
Thanks – love your blog!
Megan @ The Ugly Nutrition Truth says
That salad looks delicious! Glad the teamwork-dinner worked out well! 🙂
And I have to say, I just LOVE hearing all about your internship rotations every day!!! I’m starting mine in the fall in toronto, ontario, and love hearing bits and pieces from you. It sounds like we’re both fans of the same RD tasks, all the organization, charts, note making, etc! We did TPN calculations in my clinical nutrition case study lab last year and I really enjoyed them, but I can’t wait to hear about you doing yours in an actual hospital with real-life patients! Instead of just case-study patients 😉
Happy reading!
Katrina says
I’m glad you like the shoes! I couldn’t teach without them.
Shin splints–ice and rest! They are usually a sign of overuse and they tell me that my shoes are worn out. I go through shoes every 2-3 months and at the first inlking of shin pain, I know my shoes have lost support. Quick call to Road Runner Sports for 2nd day delievery of shoes, and no more shin pain.
lynn (The Actors Diet) says
great looking dinner! garam masala + raisins = yummy!
Jessica @ The Process of Healing says
That looks delicious! And I LOVE the serving bowl, so pretty!
Erin (Travel, Eat, Repeat) says
That looks so yummy — lots of flavors and deliciousness in one bowl. 😀
Jessica @ Healthy Exposures says
Looove adding nuts & raisins to those types of dishes, and the garam masala sounds amazing too…but most of all, I cannot wait until I can purchase a Buddha bowl! Don’t know why that design wasn’t made popular sooner – it seems so perfect to hold a warm bowl of oats in.
Lauren says
The sooner that bowl can get into the shop, the better. I need one!
Veggielady4life says
Your millet salad looks wonderful! Thanks so much for posting the recipe. Glad to hear your danskos worked today… they are my fav pair of work shoes.
Looking forward to the running tips!! Enjoy the novel 🙂
Lisa @bakebikeblog says
I have never tried millet….is it like quinoa?
Michelle @ Give Me the Almond Butter says
I hope that Buddha bowl makes some serious progress. I’m falling in love with it.
I always really want to read more this month too. I just can’t find the book I was reading over spring break. grawr.
Hannah says
Oooh, I’d forgotten about millet! I tried it for the first time last year when housesitting, but then forgot about it because I went travelling for four months. It’s gluten free, right? That recipe looks like a keeeeeeper 🙂
Nora@LiveLifeEatRight says
YAY for the buddah bowl progress! If you did a running page, I would love to see something highlight runners nutrition. When I started running I wasn’t sure how/what to eat to support my activity and I think it would be helpful to see. Especially if you highlighted the differences between low, moderate and high activity foods.
Kristi says
Funny you mentioned shin splints! I suffered from them years ago when I started running and I JUST found out about a trick to prevent them if you’re a treadmill runner – run at a slight incline (0.5 or 1.0). Not sure about outside running (which I much prefer), but hopefully that little tidbit will help someone!
P.S. Love your blog! I’m a die-hard “oatie” now 🙂
Kath says
Oatie!! LOL!
Susan says
Love that term! OK… I will confess to becoming an “oatie” now too!
jaclyn@todays lady says
That salad looks so amazing!!! I need to get my fiance in the kitchen, I would love to come home to this!!
Tara says
Clinical nutrition is pretty awesome, I agree. There is so much to know and you are always learning something new!
Carly @ The Road To Health says
Hey Kath! Just wanted to say I LOVE your antique spoons, they are sooo pretty! 🙂
Steph (@ mediterraneanmiss) says
Oh my does that ever look good! I think I’m going to make this exactly, but substitute quinoa in for the millet. Yum! Thanks for the idea.
Love it when the menfolk cook for you. You two are a wonderful couple <3
LB says
Glad you’ve found a career that fits you and makes you happy! Best of luck! My biggest dietician-like challenges are trying to make meals suitable for my father-in-law who has diabetes, congestive heart failure, and one kidney. Sugar-free + low-acid + salt-free + dairy-free = fun fun!
Heather (Heather's Dish) says
wow, that’s awesome you can just tell him that stuff and he’ll do it! my hubby is SO great and he’s such a great cook, but i think he’s afraid to do something i won’t like sometimes! your salad looks perfectly fresh and filling! 🙂
Yelena says
Your salad looks amazing! I love grains in my salads!
brittany says
your millet salad sounds/looks awesome….My bff is a nurse and she also loves her danskos!
Jen S. says
I’ve been curious about millet for awhile now, but I’m always nervous about trying new things. Is it anything like quinoa or cous-cous? I’ve tried both of those…
Jenn (www. j3nn.net ) says
Pretty looking rainbow salad! The ingredients sound awesome, too. 🙂

Freya @ Brit Chick Runs says
Oh that salad looks ace!! I’m definetly giving your recipe page a hit today 😀
Rachel (Suburban Yogini) says
One of my goals for this year was to read more. I’m not sure how I’ve done it but I’ve read so far this year twice what I’d read at this point last year. I’m not aware of having made more time. Maybe I’m just using my time more productively!
sarah (the SHU box) says
i wish our RDs wrote our TPNs! we have to do our own, although the pharmacists sometimes help out. it’s amazing how tiny the amounts can be in the NICU babies and how precise the calculations! like you i love all the math + form-filling . . . EXCEPT when i’m on like the 28th hour of my shift. then i’m practically sleeping on the form and terrified i will mess something up . . .
Kath says
Oh wow – you need to hire me as an assistant!
Kelly says
You’re right about needing ice for shin splints. I had them for about 2 months (after 6 years of running – whew! can’t believe it’s been that long!) but am fully recovered now. Also, with shin splints you really have to rest your legs. I ran only once a week and did the elliptical and weights the rest of the week. Even aerobics that required jumping was too much impact for it to heal properly. Rest is the best medicine in this case.
Chelsea (Chelsea's Chew and Run Fun) says
That salad looks ridiculously good. I’ve got to invest in some garam masala. I keep seeing the spice pop up on a variety of mouth watering recipes, your dinner included!
lisa says
I had pretty bad shin splints back in high school, and the trainer I saw had me ice them plus do different kinds of stretches with exercise bands. I would hold them or have a friend hold them and use opposite pressure to stretch out the tendons and things. And yes, rest is best. Hope that helps!
Kath says
MILLET: is like couscous and quinoa and bulgur mixed together. It’s hearty yet fluffy. I love it!! My favorite grain, me thinks. The taste is indescribable – just like a grain!?
Sarah (Running to Slow Things Down) says
Shin splints: what worked for me was simply shortening my stride! I aim for 3 beats per seconds which doesn’t mean speeding up as much as it simply means shorter footfalls (i.e., less impact.) I got the idea from No Meat Athlete and it’s worked like a charm…no more shinsplints! 😀
I’ve seen the buddha bowl in stores before..next time I’m picking one up. Too cute! 😀
Gena says
This salad is precisely the sort of meal I love! Making a note to replicate 🙂
Simply Life says
Great looking salad! I love reading and have found the website Goodread.com to be super-helpful in remembering what books I want to read and which ones to recommend to others! 🙂
Katherine says
Spice of life! I still want your cup/bowl/mug/thumb-awesomeness. Is there a way to get one?
Thanks!!
Katherine
Kath says
Coming soon to OpenSky!
Amanda @ Cakes and Ale says
I have a good book recommendation for you! It’s called The Swan Thieves, by Elizabeth Kostova. It blends historical and modern fiction to tell a really compelling tale… lots of character development, which the English major in me loves. Plus, it has romance too!
Andrea says
Your timing is perfect Kath. Last night I was looking at the bag of millet going “what can I do with this?” and you answered my question! Brilliant! I think we’ll try this tonight! Can’t wait!
Stephanie says
Im sure others have spoke up already, but as far as shin splints, most people get them running hills, and by not having proper running form. We tend to land heavily on the heel, but runners should aim for mid-foot. When you extend your feet with your heel down and toes up, it flexes the shin, and causes those pains.
Another solution is heel-walking before and after a run. Just walk around only on your heels to stretch out the shins!
M. Carter @ the Movies says
OK, I’m all over that salad. And the crazy thing is until recently I never really liked vegetables! But it looks different and very colorful. I need to do a whole lot more “eating with the eyes” first.
