I had a really good title for this post – but I forgot it!!
I’m making great progress on the house – dusted while I talked to my grandmother, vacuumed ALL of the floors and corners, and got a bunch of stuff complete on the computadora. Also went to Body Pump.
I have now, however, showered.
I’m headed the bakery as soon as I do!
Lunch revolved around this happy little egg
Plus a mix of veggies, coconut oil, and goat feta
On the side I savored some Cville Crunch bread from Great Harvest topped with my coconut black bean dip from yesteryear. SO good. Absolutely will be making this recipe again!!
<3 sparkling water. This was the orangey flavor from Harris Teeter that Karen left in our fridge. Just like a cream soda!
Showertime!
Allie (Live Laugh Eat) says
Sounds like my morning…minus talking to grammy. SEE YA!!!
Andrea @ The Skinny Chronicles says
Loving the egg on the salad. Our chickens should start laying eggs any day now…Can’t wait!
Mindy says
So jealous!! I’ve wanted chickens for sooo long… But we have a smallish city lot… and a dog who I fear would think of the chickens as “friends” and stress them too much for them to lay!!
Nikki says
Ours are heritage chickens and hopefully will be laying soon too! 21 wks old now… 🙂
katie @KatieDid says
yokes make for the yummiest dressing!
Lisa says

Gina @ Running to the Kitchen says
I had a salad for lunch and sat there starring into the fridge for what I could add to it for some protein. I totally forgot about an egg! duh!
Ashley@FoodNFitnessDiaries says
Sounds like a productive day so far!
With everything I’ve been hearing about Great Harvest lately, I decided I needed to try it for myself today. I looked up the nearest location to my work, and I couldn’t find it! Ughh I was so bummed. I’ll try again another day!

Loved finally trying GH bread over the weekend! Now I’m jealous of your lunch!
Katie @ Peace Love and Oats says
Again, your bread looks so delicious! If I find a Great Harvest bakery in Chicago, would they have generally the same kind of bread?
KathEats says
Yes, generally!
lynn @ the actor's diet says
love the fork marks on your bean spread!
Cathy says
just wondering if you ever drink soda pop? if not why ? love your lunch!
KathEats says
I will occasionally have a diet drink, but I never have regular sodas – with the exception of more natural ones like Izze. I’ll have those from time to time.
Lindsay @ Lindsay's List says
to be honest, i’ve never had egg on a salad…or i guess, not a poached egg.
Jillian says
I *want* to eggs with salad, but something about the textures together freak me out together and the greens make me gag (maybe kinda like how you feel about veggies in the morning?!) I always have to eat eggs with cooked greens or vegetables, unless they are hardboiled.
Sarah @ Sarah's Modern Bites says
What a productive day! I’m super jealous 🙂 haha A lot of times while I’m at work and have zilch to do I think about alll the things I could be accomplishing at home and the errands I could be doing! And then I start to make lists… and they end up getting much longer than my original intention… and then I start to get overwhelmed with all the things I need and want to do but cannot because I am stuck at work ahhhhhhhhhhhhhh!!!!!!!!!! I totally do it to myself 😀
That egg looks perf! What’s the trick?
Happy Monday!
Angie @ Musings of a Violet Monkey says
I used to love that HT orange seltzer! I have a SodaStream now, which I love, but sometimes I miss the flavors I used to buy. (I don’t care for the SodaStream bottled additive flavors).

i went for a bunch of romaine lettuce today with a spicy chick’n patty and sharp cheddar cheese. so good! i decided to go simple on vacation, and only picked up a ton of romaine hearts for lunchtime salads. they’ve been perfect in the middle of days on the beach.
Kristen Waby says
You are a lifesaver! I’ve been trying to find new and healthy ways to use black beans! I have an opened jar in the fridge and I’ll be making this later! Lovely looking salad!

That’s my go-to meal! Salad with a runny egg and goat cheese 😀 Now I just need a Great Harvest in my area so I can have some good bread with it, too!

Hi, I’ve been reading your blog for a while now and I gotta say, its the best study break when I’m stuck in the library studying for exams. It has inspired me to start my own blog, so I just wanted to say thanks for all the interesting daily posts, its really challenged me to get interesting with my food!

I know this has nothing to do with todays post but what would make a really healthy smoothie for me to drink in the mornings? I know fruit and spinich but what else?
KathEats says
I made one for breakfast this morning – click back one more post!
Shayla @ The Good Life says

Picture perfect egg! I love eggs on salads.
watercolor nutritionist says
The bread looks gorgeously dense and nutritious. And the spread is appetizing. I’ll probably go for tahini or buffalo milk yogurt instead of cream cheese — have lost my faith in contemporary cream cheeses and wouldn’t be able to find a decent manufacturer.
Meg says
Oh my goodness I the same glasses!
Bridget says
Have you ever thought about installing a CO2 tank in your house to carbonate drinks? You seem to drink about as much sparkling water as I do… 🙂
(there are pretty clear instructions here – I’m installing mine this weekend!)
KathEats says
That’s exactly what we have!
