What would you do with these greens?
I turned them into a soup….mixed with half a banana, 1 cup of milk, Vega Vanilla Chai and ice.
I don’t think I like the Vega Vanilla Chai as much anymore. It was TOO SWEET! I couldn’t really taste the greens though – just a bright lettuce flavor if I looked for it with my brain.
Sunken below was some granola and a drizzle of coconut butter!
On the side – hard boiled egg
And a bunch of cherries Kanz surprised me with at lunchtime!
This left me stuffed!
As much as I love Pumpkin, she is driving me a bit nuts with her meowing. I think she really misses her owners because she meows at our porch doors (and now our back door) all.day.long. I can’t bear not to let her on the porch but I’d really prefer if she remained an outdoor cat…
Afternoon awaits!
Angela @ Eat Spin Run Repeat says
Are you using the Vega One vanilla chai, or the older version (Whole Food Health Optimizer vanilla chai)? I managed to find some on-sale Whole Food Health Optimizer tubs before they discontinued them and replaced them with Vega One, and I too find that Vega One is a whole lot sweeter. It might not just be your pregnancy tastebuds!:)
KathEats says
This is the newer kind (Vega One) so yeah, it’s too sweet ;(
Candice says
I think even the Whole Foods Optimizer one is too sweet…I cannot imagine it being sweeter than that. I’ve wondered why Vega doesn’t make a completely unsweetened version specifically for people that are adding to smoothies that are already sweetened with fruit naturally.
Sana says
I like the term smoothie over soup!
Khushboo says
I am yet to get on board with green monsters! Looks like a well-balanced meal 🙂
Catalina @ Cake with Love says
That soup looks very tastym but with the banana and vega vanilla it sounds more like a smoothie in a bowl 🙂 anyway, it looks bright, fresh and healthy!!! 🙂
susan says
I’d be discouraging the cat to be on my property. If it’s vocal, the last thing you will want is to have a sleeping baby, enjoying a nap on the porch, woken by a cat! Don’t be afraid to use the ‘ol squirt bottle with water trick. The cat will get the message soon enough.
branny says
Poor pumpkin!
Laura @ Sprint 2 the Table says
I like the Vega Vanilla Chai! I don’t use it in a soup though – I like to blend it with chilled coffee in the morning for a frappuccino. I guess the coffee cuts the sweetness for me?
Rebecca says
🙁 I don’t understand people who abandon animals, especially since they’re part of their families…
KathEats says
She has a cat sitter (so her owners said) but I just think she is lonely
Rebecca says
Oh…phew!
Donna says
Just tell yourself that you are ensuring your husband’s health by not letting the cat onto your porch. Didn’t you say Matt is allergic to cats? I am highly allergic to them. I cannot even sit on my new next door neighbor’s screen porch without my eyes swelling and itching—because her cat sits out there sometimes!
KathEats says
He is allergic to some cats. He hasn’t shown any symptoms with Pumpkin. Otherwise I wouldn’t dare let her on the porch
Daniela says
Love that plate, where did you get it?
KathEats says
Pottery Barn, 2009 I think?
susan says
Colorful lunch!
Hope @ With A Side Of Hope says
I love fresh cherries! The Rainer cherries are my favorite. I’m hoping they go on sale soon 🙂
Janet says
poor Pumpkin is probably hungry and lonely!
Lindsey says
I tried a Vega Vanilla packet for the first time last week. I wasn’t sure if I liked it or not… I prefer just using yogurt or cottage cheese to add protein to my smoothies!
KathEats says
Agreed!
Andrea says
Pumpkin just needs some lovin 🙂
Silvia @ skinny jeans food says
Hopefully, someone is feeding that poor pumpkin! You might have to share some of the smoked sardines 😉
Ashley @ Coffee Cake and Cardio says
That lunch looks awesome. I need to buy some cherries stat.
Michelle (Peachy Palate) says
Nothing like a green monster! I’ve never tried lettuce, will have to give it a whirl. Cherries are the BOMB! Nothing better!
Caroline @ After Dinner Dance says
I love that you call it a soup 🙂 I feel like a restaurant could add a thin green smoothie to their menu as a dessert soup!
Elise says
Are you sure Pumpkin’s owners left her enough food when they went out of town? She might be meowing at your door (and trying to eat your yogurt) because she’s hungry . . .
KathEats says
No, I’m not sure. But I think she is just lonely
Jen says
Yeah I doubt she’s hungry. I love cats but they can be such attention-seekers at times too. The meowing and pawing would get on my nerves after a while, so you’re super patient Kath!
jessica says
cats are excellent learners. they learn to read people quickly and manipulate people very well with their actions. if the cat knows you will let it in, they will continue to come back. if you give it the cold shoulder for long enough the cat will get the picture. why bother to come around if it’s no fun. but if you dont want the cat around as much there is not much you can do. there is no middle ground either you say come on over whenever you’d like or you create the environment of sorry buddy no business here.
KathEats says
I enjoy her company but I don’t want her to be begging all the time 🙁 I’ve given her permission to hang on the porch but just not come inside. She seems content with that for now
Lee, Anytime Health says
Green smoothies are the best. Sweet is good, that means it cancels out the “greens” taste! Also, how do you get your hard boiled eggs so perfect?
KathEats says
Like this! https://www.katheats.com/julia-childs-eggs

Thanks Kath!

Do you follow this Charlotte blogger? She just had twins (and already was a mom of 3)! Check out her beautiful family.

I want those cherries! They had cherries for gulp…$7.50 per pound…at the store yesterday. I passed. I could eat thru ten bucks in a day with me and cherries b/c I love them!
Fran@ Broken Cookies Don't Count says
Did her owners just leave her on her own while they’re away?!
KathEats says
No they said their daughter would be coming by
Angela @ Health, Happiness and Harmony says
Cherries look delicious! That meal is perfect for the stormy day here. All I would need is a piece of whole grain bread on the side. 🙂
Susan H. @ The Food Allergy Chronicles says
Love the simplicity of a nicely boiled egg! Sweet cheeries…yummy!
Brie says
I’m obsessed with hard-boiled eggs lately.
I don’t get outdoor cats and I think they’re kind of rude, frankly. My neighbors have three (!) and they’re always peeing and pooping in our yard and walking in front of our windows, irritating my nice, indoor cats. Grr.
Roxanne says
I also used lettuce today because I didn’t have any other greens! I used them in a hot dish, of beans corn carrots and rice!
Don’t spoil Pumpkin, you give her an inch they’ll take a mile!
SarahWNY says
How do you process the greens? A Vitamix?
KathEats says
Yes
wesley @ the way home says
Is that a warm soup, or like a gazpacho? Looks a bit like a green smoothie!
KathEats says
It’s a green smoothie in a bowl! Aka, soup
wesley @ the way home says
Haha love it!
Jessica says
I can’t find your post on sunscreen options. Can you post the link??? Thanks 🙂

So jealous of your beautiful garden and all those home grown greens! Yum.
Katie @ Peace Love and Oats says
I love putting greens in my smoothies, easy way to get in some extra veggies!
B @ Crags and Veggies says
Yummy, love the mix of greens and chai!
Erin Motz says
Poor sweet Pumpkin! I’m such a sucker for “stray” or lonely animals… And what an interesting green soup! I’m not a fan of sweet stuff but I’d like to try the lettuce in a smoothie – bet ya can’t taste it a bit!
betty says
We have a “pumpkin” next door. Initially we thought she was a stray; then we learned that she belonged to a neighbor. Same behavior. Obsessed with coming into our house and meowing at our porch door. Ignoring her for a while seemed to discourage her. She still comes by, but seems less “crazy”. We still love her! I’m allergic, so I look forward to seeing her occasionally.
KathEats says
It’s a nice way to enjoy kitties if you are allergic – sharing the cat parenting!
Cait's Plate says
I finally saw cherries the other day at the store but they were crazy expensive. I can’t wait to get my first batch – yours make me drool every time!
Angel7 says
I cannot eat anything really sweet. However, I have craved sweets more since the second trimester of my pregnancy–not really sweet things, though.

Beautiful last picture of pumpkin! Loving that lighting.
P.s. Meow! heheh
Maria@Sinfully Nutritious says
Poor Pumpkin, I have a “needy” cat too. I just can bear to see a sad animal, it breaks my heart knowing he is missing his family. I am sure he will be happy when they return. It is kind of you to comfort him.
Kelsey says
They would have been good in a smoothie too!
Katie @ Real Food Katie's Way says
Love that plate!! The egg yolk and cherries look sexy on it for some reason 😆
Andy says
Looks good and sounds easy enough to make. Does the banana make it sweet or the Vega Vanilla Chai?
