More insomnia last night. Every time I’d dose into sleep I’d think of something to think about. I’m hoping after this weekend my brain calms down. Normally I need to relax a bit and then I don’t have these crazy nighttime thoughts. I’ve also been on my computer right up to bedtime (no mind-numbing reading!) and I know that’s not desirable. I was able to fall asleep in 30 minutes or so, but I usually fall asleep in 2 minutes so it was still a cut into my rest.
So excited about this weekend!
No time to make anything that required cooking this morning but I was very happy with the chilled bowl I created!
I used this Dahlicious Lassi as my base – Mango flavor!! This is the second one I’ve tried and I REALLY like them. They’re perfect for SIAB-style bowls – minus cleaning the blender. The mango flavor was daaahhhhhlicious 😉
Toppings included:
- 1/2 banana
- Handful blueberries
- Handful Kashi Cinnamon Harvest
- Sprinkle granoler
- Spoonful flax
and
1 tbsp coconut butter drizzle. The BEST part about coconut butter isn’t the flavor (although I love it). It’s that in the summertime the warmer temps keep it liquid at room temp so it’s easily drizzled. But once it lands on something cold, it hardens like that magic chocolate ice cream topping. Then you get to chew it solid it in your breakfast. (Or if you prefer, melt it on hot oats!) Love ?
Green tea. Not my favorite.
Tazo + Yogi become friends!
Peace!

Oh poor you with the sleep/stress stuff 🙁 You need a holiday!!
I am so dying to try coconut butter! I just can’t imagine it…is it really exspensive in the US? The (small) jars I’ve seen here have been about £10 :s
Have a lovely day 🙂
Marisa (Loser for Life) says
Coconut butter sounds so interesting!
Hope you get some relaxing and rest this weekend 🙂
Annie @ stronghealthyfit says
I LOVE mano lassi! I’ve only had it at Indian restaurants, though. I bet it made an awesome smoothie 🙂
Sarah (Running to Slow Things Down) says
Oh yum…the coconut butter sounds fabulous. I need to give that a try. 😀
Kristin (Salty Tooth) says
This is kind of lame, but I keep a notepad by my bed so that I can write down anything I’m thinking about that is preventing me from falling asleep. It really helps, because I’m always afraid that I’m going to forget something.
Have a great weekend!
Veggielady4life says
What an interesting bowl… love mango lassi. I used to make a dessert with blended mango and yogurt… so good!
Jessica @ How Sweet It Is says
Insomnia is the worst. I hate when my mind won’t stop running. Hope you get to relax this weekend.
Lindsay @ Summit Sandwiches says
I haven’t had a lassi since I was in Nepal a few years ago! The thought of having one as part of my breakfast makes me smile. Seems like an inspired idea!
Lauren @ eater not a runner says
Sorry to hear about the insomnia! I have the same problem when I’m stressed, it’s the worst. Hope everything calms down soon!!
Erin says
Ugh, I hate those nights! I’ve been sleeping like a rock lately, which is a combo of the heat and the exhaustion from this past week. Hoping it stays that way.
Hannah says
Wow, I’m so envious of your half hour being “bad”! It takes me about an hour to get to sleep every night!
Samantha Angela @ Bikini Birthday says
You should try making a lassi at home, they are super easy to make!
Here’s a recipe:

Ugh! I hate it when I can’t fall asleep! Hope it starts happening faster soon!
Helen says
That coconut butter sounds very cool. I think I would love it both in hot and cold breakfasts. Your breakfast looks delicious though and perfect for a hot morning. I hope you get a better nights sleep tonight.
Rose-Anne says
Ooh, I haven’t tried coconut butter drizzled over something COLD! I’m intrigued! I’ve fallen hard for overnight oats, and we all know that oats + coconut = dahlicious!
A Teenage Gourmet (Sami) says
I’ve noticed that different brands of green tea REALLY vary in taste. I’ve had ones that range from naturally sweet to fishy tasting. Personally, I like Lipton’s. Have a good day Kath!
Heather @ Side of Sneakers says
I feel ya on the insomnia thing- sometimes I wish our brains literally had an “off” switch!
Robyn @ Frugal 'n' Fit! says
mango and coconut for breakfast? I’m sold!
After reading your blog (among many others), I don’t think I will ever have a plain bowl of cereal and milk ever again. Life is too short!
JENNA says
i’ve never seen mano lassi before. it looks really good and everyone seems to love it.
Little Bookworm says
Your breakfast looks amazing! Hope the insomnia goes away soon!
Jil @ Peace, Love & Munchies says
Those lassi flavors sound amazing!
kalli@fitandfortysomething says
so sorry about the insomnia-though you have a lot to think about! sometimes i take melatonin and that helps 🙂
Sarah says
I need to get some more sleep into this body, too. I guess you’re right about the computer thing- I think I’ve been spending too much time with my own (right before bed.)
Mary @ Bites and Bliss says
Awwe hope the insomnia doesnt continue. Maybe you should try drinking some warm milk before bed. I’ve heard mixed things on whether or not that actually works but it’s worth a shot!
Ashley@thehungryscholar says
Yum coconut butter.
I’m sorry you are having trouble sleeping. I hope this comes to an end soon!
Stacy (StacyGrowsHealthy) says
I think you have convinced me to try coconut butter. I have almost bought it a few times, but it is so expensive! I hope your head clears out over the weekend.
Victoria says
Kath, I have trouble sleeping sometimes when I have way too much on my mind! Try drinking the Yogi Brand, “Bedtime Tea.” It helps me relax after a long day! Also, I love coconut butter, I just received mine in the mail 🙂
Chelsea @ One Healthy Munchkin says
I can relate on the insomnia thing! I’ve been having trouble sleeping since last September. I hope you get a good night’s sleep soon! 🙂
Naomi (onefitfoodie) says
DAHHLICIOUS breakfast 🙂 mango and coconut…so tropical 🙂
Michelle @ Give Me the Almond Butter says
I’m so sorry your sleep has been pretty cruddy? Have you tried melatonin? Though it does put you to sleep very quickly, it also makes you a lot less restless through the night.
Jessica @ The Process of Healing says
That breakfast sounds seriously amazing! And I feel so bad for you about the sleep.. I do that too. Sometimes I just can’t shut my mind off!
Heather (Heather's Dish) says
i would love to try lassi sometime…i’ve heard it’s amazing but have never found it anywhere. i’ve heard you can make it from scratch though…have you ever tried that?
Hannah says
haha….a sad marker of modern times: reading is “mind numbing”, whereas sitting in front of a computer is stimulating. i get what you’re saying though.
Kath says
Mind numbing was the wrong term!
what I mean is
Computer = reality = stress
Book = fantasy = relax
Hannah says
haha i know….it was just a funny choice of words. of course, your computer experience is way more reality/stress based than the average internet zombie (such as myself). that said, i hope you get some time to relax this weekend!
jennifer @ take the day off says
I’m with you on the green tea. I try so hard to like it because it is so good for you–but so far I’ve had no luck. Next I’ll try your idea and mix it with another tea to dilute the grassy taste.
And you should know that your recipe for kale chips is my go-to!
Wei-Wei says
Coconut butter always sounds so darn good. I’ve seen coconut oil added to ice cream syrups to give it a “magical” hardening effect. 😀
I really hope your insomnia gets better soon. Sleep is really important 🙁

i am feeling you over here in los angeles about the insomnia – i feel like i haven’t gotten more than 5.5 hours/night all week! (and i’m a total 7-8 hour kinda girl)
i’m going to upload the great harvest pix later to a picasa site this morning but in the meantime if you wanted to see a few of the food photos from my visit they’re up in the post i did that day:

I need to get my hands on some coconut butter. I’ve been wanting to try it for so long!
JavaChick says
My coconut butter has never been liquid at room temperature – I’m thinking your rooms must be a whole lot warmer than mine.
Diana @ frontyardfoodie says
Aww! Sorry you’re having trouble sleeping! Slow things down sister.
okay seriously, now I MUST FIND COCONUT BUTTER!
Amber K says
I keep seeing coconut butter again and again, and I have no idea what it is! Definitely have to look into that.
Camille says
Aww, I hate insomnia. When I can’t sleep, I always try to just clear my head and I count. I just start at 1 and keep going… if it’s a really bad night, I usually fall asleep around 500 or so.
Anna @ Newlywed, Newly Veg says
Booooo to insomnia!!! Hope you get some stress-free rest in the near future!
Evelyn @ cheers2healthy says
I had a horrible time falling asleep last night as well! I fell asleep at 2AM!! I was on a 9PM schedule and now it’s 5 hours behind : ( That’s what chronic stress does to ya!!
Deirdre says
Insomnia is the worst! I feel so badly for you. Makes me think of this quote from Fight Club:
Insomniacs are never truly awake and they’re never truly asleep.
I hope tonight is better.
Anne @ Food Loving Polar Bear says
Your bee mug is so cute 🙂
Nicole says
I have to LOL at all of these insomnia comments. Requiring 30 minutes to fall asleep is hardly insomnia. That would be like one saying one had a migraine every time one had a headache.
Tracy says
That coconut butter looks amazing!!! I must try some! Have you ever drizzled some on bananas and then freeze? I do PB or Chocolate on bananas and pop them in the freezer… frozen bananas taste like ice cream and the hard shell of the PB or chocolate is to die for!!!
Elaine @ Om Sweet Om says
I’d recommend you meditate a little before bedtime, about 10 min, just to get your mind calmed down. Deep breathing exercises help too. I usually try to shut off TV/computer 30-45 minutes before bedtime to wind myself down. I usually do a little bedtime yoga as well. For example, the seated forward bend helps turn your focus inwards; the leg-up-the-wall pose helps relax your back and neck; child pose also relieves tension from your back; and let’s not forget savasana( corpse pose! I find lying on my bed spread-eagle-style really helpful. I focus on breathing softly through my tummy, and would mentally scan my body from head to toe and relax every inch of my muscle.
I found this article and thought it might be helpful: http://www.yogajournal.com/health/2541
I sometimes have trouble sleeping myself too, so I know how much it sucks! Hope this helps 🙂
Stacey@http://stacey-healthylife.blogspot.com/ says
At the first glance with the color of your breakfast I was a little worried about it until I read what it was. Sounds good, I’m going to have to try the coconut butter on cereal with some fruit, yum.

mm coconut butter sounds so summery and delicious. 🙂
