It’s hard to chew almonds while you’re on a long conference call : ) I managed to get a snack in before yoga though, and I walked the way there while we wrapped up the call so I wouldn’t be late. Amelia, Janet and I are speaking on food literacy at BlogHer Food and were getting the ball rolling. [Public speaking gets my heart rate up – in a bad way! I’m already nervous!]
I also ate this fruit bar sent to me a long while ago. They are 100% fruit and like a combo of fruit leather and fig newton. Great when you’re really in a rush to get out the door!
Yoga was fun. I can really tell I’m getting more flexible – even from the one class a week. My low squat is so much deeper now!
It’s funny – one of the things I have a big problem with is “soften your eyebrows!” I raise my eyebrows when I’m angry or when I’m trying hard to do something and every time our teacher says “soften your eyebrows” I realize mine are all scrunched up and hard! I gotta work on my face yoga : )
After a brisk walk back home, Matt and I put our leftover beans (or some of them at least!) to good use.
Melty quesadilla!!
Stuffed with cheddar and pickled jalapenos!
Served with a Mexi-salad of greens in olive oil, salt and honey topped with greek yogurt and homemade guac (just avocado mashed with lemon juice, salt and pepper). Plus some little tomatoes!
Lemonade water to drink
A delicious dinner – and tonight I finished every bite!
Lynn @ the actor's diet says
Ha! I always crave crunchy foods when I’m doing a phone interview.
Jodi @ Jodi, Fat or Not says
I have four avocados that are about to all be ripe at the same time…it’s equally awesome and terrible at the same time when that happens. I’m going to be a guac-making machine this week!
Casey says
Slice them up and freeze them til you need them 🙂
Catalina @ Cake with Love says
I love quesadillas, the cheese and the beans are so good together, and its even better with homemade guacamole!! Its so sunny on your porch, I have to move South 🙁
Vivi @ My.Beautiful.Air says
droooool that dinner looks SO tasty !
Jillian B. says
Mmm, that guac is making me hungry and those quesadillas look wonderful. What brand of flat bread is that?
KathEats says
Whole Foods Whole Wheat Tortillas – I love ’em!
Alicia says
Your dinner looks very similar to mine, except I had some leftover grilled bbq pork tenderloin in my quesadilla. Yum!
Angela @ Health, Happiness and Harmony says
Dinner looks fabulous! What type of Greek yogurt do you use in place of the traditional sour cream (full fat? plain?)? Thanks!
KathEats says
I buy the big tubs of Oikos Plain. It’s nonfat. Ideally I’d choose a low fat (I buy low fat when I buy regular plain yogurt) but I like the Oikos the best
mary @ minutespermile says
I have to say I’m a fan of Fage 2%…some fat, but not all fat. Tart, but not tooooooo tart. 🙂
KathEats says
I like it too but it’s not organic so it’s not a staple for me
Katie @ Peace Love and Oats says
Those quesadillas look so delicious, I love black bean and cheese quesadillas!
Kaila @healthyhelperblog! says
Totally craving a crispy, grilled quesadilla now….definitely on the menu for this week. 🙂
Liz @ Tip Top Shape says
I’m the same way with the eyebrows! You don’t realize how much tension you hold in your face!
Averie @ Averie Cooks says
Perfect quesadilla! And glad yoga was a success (and that you’re getting more flexbible!)
The opening shot of that nut jar reminds me of a post I did right before xmas with cinn/sugar/coconut oil roasted almonds. Seriously the same kind of low-wide base glass jar!
Laura @ joyful shimmy says
Dinner looks delicious! I actually enjoy public speaking it has taken me a while a lot of just doing it and accepting that I’m learning more and more. As long as you feel prepared with the information you are conveying it’s easier then to fake being confidence and showing up.
Healthy Living Val says
Yoga face! It’s crazy when you realize how much we tense up our faces, whether your eyebrows and forehead or your jaw and mouth. Yoga is so great for bringing that kind of awareness.
OliePants says
I love a great bean & cheesy enchilada. Delicious dinner.
Stephanie @ Legally Blinde says
Mmm love your Mexi-salad – great combination of flavors! Looks delicious!

Quesadillas! Of course! I haven’t had one in a long time. Always yummy. 🙂

I love quesadillas! They are my favorite go-to dinner when I have no clue what to make. They always turn out delicious 🙂
Fran@ Broken Cookies Don't Count says
Love quesadillas and your’s look very tasty!
~Christy @ wonderofallthings says
One of my favorite dinners ever! Quick, easy, filling and delish! Love your comment about the eyebrows…it’s so true. Takes some serious relaxation and focus to ease out those habitual “rough spots”. Glad to hear yoga’s treating you well 🙂
Shannon says
mmmm that looked great!
Do you use any special kind of honey?
KathEats says
Nope, just a local one I bought at the grocery store
Cait's Plate says
I used to ALWAYS eat almonds on conference calls. I would literally turn the phone upside down and sneak a few chews in before coming back 🙂
Kara says
When I did yoga regularly I always had a problem relaxing my face. It’s amazing how much tension we can hold in such a small part of our bodies.
It’s more amazing, though, how that quesadilla looks EXACTLY like the ones I always got at Moe’s. Mmmmmmoes.
Amelia says
That’s the nice thing about a panel – other people to share the nervousness with 🙂 And we will keep it casual and light so we – and our attendees – have more fun!
Look forward to seeing you & the cute belly!
deanna leess says
hi! quick question…what brand of tortillas do you use? these look so good!
KathEats says
Whole foods whole wheat
Katie @ Happy Figs says
Hahaha this made me laugh! I’m always trying to sneak in some nibbles when I’m on conference calls for work. Sometimes they last such a long time and honestly it doesn’t all pertain to me so I get bored and start wondering around the kitchen looking for nibbles.
I really should get more productive and do some laundry instead because I reckon I totally could!
Angel7 says
I drink lemon water occasionally, because I get tired of drinking plain water. Water tastes so much better when it has a little flavor to it.
