Today was a never-ending string of social events to squeeze in as much time with our friends as possible!
The day started with a group run with these awesome friends. Normally I wouldn’t run the day after a hard race, but I couldn’t turn down the opportunity to run with these gals! Caitlin and I did a quick 3 miles before Michelle and Diana joined us for a second loop. This was Diana‘s first official run and she did awesome! 3.2 miles on her first try 🙂
I could not have done the run without the help of a coconut water in my camelbak. It was H.O.T. Matt biked with me to Caitlin‘s house so in total I covered about 6 miles of running and 6 miles of biking!
Stop two was brunch at The Flying Biscuit.
A long wait, but well worth it in the end. The place was PACKED!
We were joined by Caitlin and Jason, Michelle + Ben and Diana + Dan
Diana brought round II of her delicious Green Monster Muffins. Even better than the first batch because they were so doughy!! My favorite texture 🙂
We had a bite to hold us over through the hour-long wait.
I ended up ordering something I wouldn’t normally order (I tend to gravitate towards salads and seafood) – the Smoked Salmon Scramble.
The mixture was great! I ate most of hit sharing a few bites with Matt. And also received a few bites of pancakes from my friends!!
Of course a flying biscuit was involved – totally yum! Had most and shared with Matt.
And a simple side salad.
Michelle proclaimed she wanted to go to IKEA today.
Diana said she might like to join.
And before we knew it, we were ALL going to IKEA in one car!!
Matt and I got a knife rack and a few other tidbits. I warmed him up to the furniture I want to buy 😉
And we ran into these crazy chickens right in the middle of the store!
Michelle ended up getting a cinnamon roll and shared a taste – doughy delicious! [I really don’t care much for meatballs guys!!]
We had a lovely final tour of the Queen City on our way home as the car got a little lost…
And ended up back at Diana‘s with just 10 minutes before our next social event.
Just enough time to give her vegan coconut ice cream a try! [This was a mini bowl and spoon – not to scale!]
At 5PM we met some friends from Great Harvest for a farewell send-off for Matt.
Of course it was a sophisticated beer establishment 😉
SO MANY good choices!!
Matt and I went typical – a sampler. These were a flight of Pisgah beers – my favorite brewery at the moment!
The table had a huge plate of nachos to share – I had a big handful
And a fried mushroom!
Matt received a few fun gifts
For dinner I ordered a garden salad with a shrimp skewer
It was highly delicious! I couldn’t even begin to finish it
Thanks so much to Jeff and Janet, the owners of Great Harvest Charlotte for not only a great good luck dinner, but also for being such great leaders and role models to Matt these past two years 🙂

Dessert was a last supper of sorts! Karen is having wrist surgery tomorrow for carpel tunnel and loves frozen yogurt, so we took her out on a final adventure to Yoforia
I got peanut butter with granola, coconut, choco chips and honey!
And we were surprised to see Bailey show up!
We will miss Diana + Dan! Bailey too!
Going to bed ASAP because I have a final YOGA class tomorrow and I’m going to cry at the end because I am SO sad to leave my studio!!!!

Awwww, you seem a bit down about moving. I am moving clear across the country this fall and I feel your pain. Saying goodbye is a tough. I keep my spirits up by thinking of all the wonderful adventures that are to be had and about all the new friends I will make. That always excites me and moving doesn’t seem so bad.

Looks like you had a whirlwind of a day! I was so sorry to read about the bakery lease falling through, and wish you the best. I recently moved cross-country and it was really difficult to say goodbye to my friends, even though I was excited about the move. Change can often be a bittersweet thing. Knowing your positive attitude, I know you will make the best of it!

She says the procedure is pretty simple. Just a slit to “relieve the pressure.” I’m not quite sure about it.

The fro-yo craze is just starting to hit the Midwest. I tried my hand at making my own fro-yo over the weekend. It was great straight from the ice cream maker, but the stuff we put in the freezer for later froze so hard we couldn’t scoop it. Maybe it only works as soft serve because of the lower fat content?
