We woke up to a dusting of snow this morning. Not enough to interrupt too much of our day but plenty to cancel school for the third time!
The sun was trying so very hard to come out, but the clouds won the battle. I give the sun an A for effort ; )
Last night Matt made a test loaf of gluten-free Irish Soda bread for Great Harvest. It was a huge success – if I couldn’t eat gluten I would still gobble this down! The texture is just sliiiiightly off, but the flavor is all there. The three of us consumed nearly the whole loaf for breakfast!
I just love Irish Soda Bread, and it’s my favorite bread we make at the bakery all year. Can’t wait for the real deal that comes out hot from the ovens this Friday!! We had our buttery toast with scrambled eggs and lots of cara cara oranges.
After breakfast we went to the bakery for a meeting and brought Mazen along due to school being out.
While we chatted, he served us a lovely meal of grapes, pie and eggs. A delicious second breakfast!
M and I went to the gym after that (the roads were totally fine) and I got in a speedy workout on the stairmaster. I had a soccer game last night (we won and I scored a goal!) and I have another game this evening as a guest player. Since I’m not sure whether or not tonight’s game is canceled, I settled on just a short workout and a nice long shower.
Back at home, I made a batch of kale chips covered in smoked paprika and made this chicken salad for one!

I made these graphics on my HP Sprout computer (read my first intro post here!) It’s so much more fun to use your fingers to draw and resize than a mouse. (The snow graphic at the top was also made on the Sprout). The Sprout mat is a hands-on editing tool and scanner all in one. While a program like Photoshop can do 101 more things to fine-tune, the Sprout is really easy to use and much more user friendly – especially for kiddos.

I love making chicken or fish salad for lunch! Current favorite is sardine salad with cuc, red onion, dill, dijon, white balsamic vinegar, plain greek yogurt, and lemon juice!

in my mind, the ONLY way to eat chicken salad is with crackers 🙂 Chicken salad sandwiches just aren’t as good. 🙂 I love chicken salad – my mom makes my favorite (of course) – she puts a couple of diced hard boiled eggs in there, too. Delish and double the protein!
