Avocados are one of my favorite foods, and they are a great way to get a creamy taste while packing a bunch of healthy monounsaturated fats into your lunch. They also contain eight percent of the daily value of fiber per serving and less sugar per serving than any other fruit, so they’re a great food to keep you full and your blood sugar steady. The Hass Avocado Board has joined the American Diabetes Association® in the national Stop Diabetes® movement, and they asked me to share an avocado recipe to help spread the word of its powerhouse nutritional status.
I gotta hand this recipe over to Matt, who makes a big salad with smashed avocado dressing almost every day for lunch at the bakery. While there are many recipes that involve blending avocado into a super creamy salad dressing, this is not one of them. It’s a simple “smash in a bowl and toss” recipe that will save you the extra few minutes.
Start with half an avocado – bonus points if it’s perfectly ripe!
Give it a nice smash –
Then add in 1 tbsp olive oil –
Followed by 2 tbsp of lime juice –
One teaspoon of honey for a touch of sweetness –
And 1/4 tsp of a coarse salt. I used herby Peg’s Salt!
Give it all a nice stir around to incorporate all of the liquids and thin it out a bit –
Add in 4 cups of your salad green of choice – serves 2 so add a lot!
And give it a nice thorough toss
If you’re like Matt, you can eat your salad right out of the mixing bowl, but I opted for a smaller dish and topped my salad with roasted squash and sweet potatoes, manchego cheese and toasted walnuts.
Smashed Avocado Salad Dressing
Ingredients
- Half An Avocado
- 2 tbsp lime juice
- 1 tbsp oil
- 1 tsp honey
- 1/4 tsp pegs salt
Instructions
- Smash your avocado in a bowl.
- Add oil, lime juice, honey and salt.
- Mix well.
- Top with 3-4 cups of greens and toss well.

YUM! I ate salads every day this past summer and I didn’t even put on dressing because I just sliced a nice ripe avocado on top instead. I liked that the creaminess of the avocado meant that I didn’t feel the need to add dressing too.

Thins it out a bit and some flavor but feel free to just use more lime juice or other liquid like a flavoured vinegar

I haven’t tried that and wouldn’t recommend it – I think it might brown and mush too much? Maybe if you added some lemon juice and used a firm one it might work?

Any tips on picking an avocado that is not brown inside? I live in CA but lately every time I cut into my avos they are brown. It makes me so sad.

Hi Candice, that used to happen to me all the time! I learned a great little trick to pick a green one. When you’re picking out your avocado, take the little stem at the bottom of the avocado. If the part underneath where the stem was is brown, your avocado will be as well. If it’s green, you’re good to go ! I use this trick all the time, and it works every time!
