I have never been a big fan of sloppy joes, but when I came across this recipe many months ago, I put it on my “to cook” list: Veganomicon Snobby Joes. And now it makes its debut! For someone who doesn’t connect fond childhood memories with sloppy joes, these were awesome!!!!!!!
I had a mocktail while cooking – diet tonic, lime and a cherry. I started feeling a little tipsy and thought it was just psychological until the husband admitted he put in a splash of triple sec!!
For the joe’s we made a few substitutions. Of course I left out the onion and we used jalapeno from our garden and a green pepper and we used our own homemade tomato sauce instead of canned + tomato paste. Here’s what ended up going into our 2-person portion pot:
- 1/4 cup lentils, simmered for 20 minutes in a separate pot and then drained
- 1 jalapeno and about 1/4 a green pepper, minced
- 2 garlic cloves
- About a cup of our homemade sauce
- 1 tbsp chilli powder
- 1 tsp maple mustard
- 1/2 tbsp or so maple syrup
- 1/2 tsp oregano
- 1/2 tsp dried yellow mustard
- A couple pinches salt
- Cracked black pepper
All served on a Rudi’s Wheat Bun (frozen/thawed – these freeze really well)
YUMMMMMMMM!!!!!
On the side I had a pile of romaine, a few broccoli buds, and some Annie’s Maple Ginger dressing
And mystery side dish potatoes (!?!)
Chem lab went really well today. I just love how organized my professor is!! He went over the procedure with us thoroughly, unlike all my other lab instructors who just went over useless background information on how we would apply this lab in the real world.
I was surprised that I didn’t get hungry for a snack today. I got home around 5:00 and could have had something, but I didn’t want to spoil dinner so I just had 2 grapes and made my cocktail.
I’m off to study nutritional needs during pregnancy!

Hey Kath! I made a version of sloppy lentils a couple weeks ago and LOVED it! Its such a great alternative to the beefy version! Have you learned anything surprising in your pregnancy nutrition class yet? My sister is preggers (2 months!) and has been asking me a lot of questions about how she should exercise/eat. Let me know!

I just had a question about your hunger. Lately I’m noticing you mention intentionally letting yourself get truly hungry before eating–how good it makes food taste, etc. I’m working on becoming more patient with my hunger (instead of grabbing something the minute my stomach calls). Do you find that it’s becoming easier to tolerate hunger? It seems like you often wait for quite awhile beyond “normal” meal times (i.e. eating lunch at 3) in order to be hungry. Any thoughts on this would be great!

How about just eating when hungry/stopping when satisfied?
Snacks can actually be a good thing if you are hungry in between meals. I never “wait off” hunger for a meal later, because if I have a little snack I’ll eat less later. I dunno.

I know what you mean about the childhood memories of sloppy joes making you dislike them. It was the onions, wasn’t it? SO many things growing up had onions! I used to pick the smallest ones out of spaghetti sauce, casseroles, etc.
It’s SO fun to cook now and never put them in anything–and I’m a darn good cook. Who needs onions, I say!

One thing I often notice is that I get “hungry” mid-morning, but really I am just thirsty and if I wait it out about 10 minutes, it goes away. I think of how many people are probably reaching for a mid-morning snack that they likely don’t need because they panic and fear hunger. So I guess I’ve been able to learn more about my body and the way my hunger works by just waiting it out. A quote I’ve heard often is “hunger is NOT an emergency!!” Sure, getting so hungry that you eat a whole buffet isn’t the best strategy, but letting your stomach growl a little is good for the soul – it makes you appreciate the meal so much more. That said, I never sit and just tolerate hunger. If my stomach is growling, then I eat. But I feel like there’s at least an hour before each mealtime where you want to eat for the fun of it and you’re starting to feel hungry, but you could wait a little longer. I choose to wait so I really get the most out of my meal, but also so I have less time to wait for my next meal (ex. if I push lunch to 1pm instead of 12 then I won’t need a snack as early). Hope that helps!?

I haven’t studied the Special K ingredient lists, but my guess is their bars are probably leaning on the processed side. I would always choose whole foods over a bar (and I consider bars like LaraBar to be whole food since the only ingredients are things like: dates, almonds.

I love the Special K Protein Plus cereal. The other products nevre keep me full for long, but because of the high protein (10 grams!) and fiber (5 grams) in one serving of the cereal, I’m full for a long time. I don’t eat it every day because it’s more processed than I’d like, but I do eat it pretty often. Give it a try!

Kath depending on where your CSA box is from a (not sure if you list that as orgnaic or not) is from it quite possible they farm organically but sometimes it is too pricey for small farms to register as organic even though their farming practices are fully or very close to organic. You should ask your farmer. I know lots of the farmers at my farmers markets fall into this category of using organic practices but are unregistered as.

You’re right – our CSA is organic. But unfortunately we eat a lot more veggies, and especially fruits, that it doesn’t provide.
