These were the only foods that sounded good to me at 5pm. [I also really need to go to the grocery store!]. I’m loving these cheese sticks though. I tend to rely on yogurt/milk/cereal/fruit for snacks a lot and am trying to branch out a bit more. Need to hard boil up some eggs! Eat more almonds and trail mix. Dip into the cottage cheese. Also, homemade granola bars are on my to-do list. I also bet you $100 I never make any. But I would like to!
After wrapping up my computer time for the day, I crashed onto the couch at 5:00 with my cheese stick and turned on the TV to find an episode of Friends on. I was never a huge Friends watcher growing up [Saved by the Bell, Full House, Family Matters, Dawson’s Creek… were my fav shows] but there’s just something soooo comforting about sitcoms! I felt more relaxed immediately. Must take me back to childhood! Or it’s the crazy laughing audience ; )
On tonight’s menu was “beans + rice + veggies,” which turned into this lovely mixed bowl of flavors.
I made a cup of brown rice in the rice cooker and mixed it with a few tablespoons of dry nutritional yeast and salt. On the side we sauteed zucchini, a pepper and garden tomatoes in some Garlic Gold Southwest seasoning and olive oil and in another pot heated up a can of Whole Foods Refried Pinto Beans! Made for a fun change from regular loose beans. Topped with a little cheese + greek yogurt to call it a meal.
But before it’s bedtime, it’s So You Think You Can Dance time! Somehow that infuriates me, it did not record last week. I could have sworn they said 2 week hiatus, but then I heard nothing about it and it wasn’t in my DVR so I figured I just got the week number wrong. Then tonight I realized I DID miss an episode somehow! It’s not on Xfinity on demand or Fox.com so I’m not sure if I’ll get to watch it. SO BUMMED! Also Fox.com totally spoiled the results by playing some automatic video when I went to check the episode list. Did any of you see it?

In our house, we call your dinner, “rice bowls”. I put out lots of different options (different cooked veggies, beans, etc) and we fill our bowls with rice, toppings, and sauces.

I watched last weeks SYTYCD and you aren’t missing much. They did past Mia Michaels dances. And while I LOVE me some Mia Michaels it was n’t really fare to this seasons dancers to have them do the ‘door dance’ that Katie and Twitch did. Cause, you know, who can top Twitch? (I heart him) They did a lot of good previous dances and none of them could top the original. The only ones that were decent were The Bench Dance & Addicted (I would reccomend watching this one – it was BY FAR the best of the evening. Cole and Lindsey seriously rocked it). They also kicked off 4 dancers again. I know they have to speed things up because of the Olympics, but this season has felt so rushed with the hiatus and no results show.
I kind of like this show, if you can’t tell. I think I am going to have to make myself a mug of ice cream with peaches on top while I watch it tonight too because after seeing your mug I know I won’t be able to get it out of my mind! Yum!

Kath don’t worry! I love sytycd sooo much and have been addicted for years….. and last week might be the worst episode I have ever seen. All they did was take old Mia Michaels routines from past seasons and have this year’s couples re-do them. I’m not a Mia Michaels fan, and I also liked all of the routines the first time around. It was so strange…. IMO you didn’t miss much!!

I hope you sleep well tonight. My husband rubbed my legs while we watched tv at night when I was pregnant and it really helped me sleep better. My “baby” will be 20 years old in December and my husband still rubs my legs! Maybe you could get Matt to do the same 🙂

Just wait until you get home from the hospital. The real “insomnia” (aka the baby wants to eat every 2 hours or needs to be changed or held) will hit then! Enjoy your nights of sleep now. They won’t be the same for the next few years of your life. My sweet baby is 3 and I’m still exhausted from the first year 🙂

i actually liked last weeks episode….im a contemporary dancer myself and so naturally its my favorite to watch..so a whole episode of it was nice! it was also cool to see how this seasons dancers took on some of the most amazing dancers from past seasons! i think they may have done a whole week of mia because she was gone for a while and now is back? im not really sure. most of the dances were definitely not as good this second time around….but that was what i expected anyways going in.
i love one-bowl dinners! theyre “cozy” to eat almost 🙂

“Mug mash” – I like that! Sometimes I do that too, but mine always involves some sort of fruit (blueberries or banana) raisins, nut butter, many coconut, chocolate in some form and yogurt or ice cream! It’s definitely a great dessert.

I giggled a little bit at your 5 nights of insomnia. I had pregnancy insomnia the ENTIRE time I was pregnant. I was lucky if I got 4 hours a night and no sleeping in. 🙁 I watched ALOT of Olympics! Once I had Lu I slept SO MUCH BETTER, even though I was waking up every few hours to feed her.
This may be a comment for your BERF post but my close friend did go to 42.5 weeks! She was due December 23rd and she had him January 11th! Crazy!!!
Lu coming at 37 weeks was scary but after the bed rest and the insomnia, I was ready to be done. Bed rest will do that to you! Thankfully she was healthy and didn’t need to stay in the NICU!! If she had come when I first went into labor we wouldn’t have been so lucky!

Your little bean will be great when he comes out! He’s almost fully cooked. My thought process was that I was “lucky” to go at 37 weeks (rather than my friend at 42+ weeks) but then I remembered how scary it was when she tried to come at 34/35 weeks and how much bed rest BLEW. I’m so glad you’re past that point! I also hope you don’t have to wait another 3+ weeks! My friend do go completely naturally and labored for 52 hours and gave birth (NATURALLY!) to an 11 pound 2 ounce kiddo. I’ll try to find her birth story-it’s amazing!

We have rice bowls like that on a regular basis – also good with quinoa instead of rice. Never tried it with greek yogurt, will have to soon.

I love this granola bar/cereal recipe. I make it all the time! My 2.5 year old loves it too! You just have to mix everything up in a big bowl, spread it out on a pan lined with parchment and bake for 70 minutes. Last time I used 2.5 cups rolled oats and 1 cup steel cut oats and it held together well enough make granola ‘chunks’ or you can break it up to make cereal.
