I worked on my leptin paper all. afternoon. long. It was draining, and I’m only halfway there. But it was a great start.
I broke at 4:30 for a snack:
1/2 cup TJ’s greek with another 1/4-1/3 of the Morning Glory muffin and some Kashi GoLean
I started on dinner at 6:45 in hopes that Matt would be home right at 7:15. I decided on this dinner just minutes before. The only ingredient I knew I had to use up was broccoli!
Tropical Quinoa Tempeh Stir-Fry
I snacked on some broccoli with sriratcha while I cooked. AHHH this had my whole mouth on fire.
For the stir-fry, I chopped up 1/3 a block of tempeh and put it in a hot pan with a few cups of broccoli and a tsp of olive oil. I let those cook for a few minutes then added a can of pineapple cubes plus the juice to de-glaze and flavor.
To that I added:
- Red pepper flakes
- Crazy salt
- Ground ginger
- 1 tsp brown sugar
I also microwaved some pumpkin seeds until I heard the first one pop:
I layered the stir-fry over some cooked quinoa and added sriratcha, the pumpkin seeds and coconut butter. It was awesome! My only gripe was that quinoa just doesn’t fill me up! It’s like eating air. I want to shake it and say “hello pro-tein? Are you in there?”
Matt came home just in the nick of time – 30 minutes late though! He actually ate quickly and turned around and went uptown via lightrail to meet two of his frat brothers who are visiting. So that’s day 2 this week with only 5 minutes of seeing each other! Hopefully we’ll get some quality oatmeal time tomorrow and get to finally watch The Office. He said I could watch it tonight, but it’s not as fun without him. So I guess I’m alone to entertain myself this evening.
So partially out of loneliness, partially out of quinoa air fluff, I had this yummy dessert built of my aunt’s secret oatmeal cookies and some frozen chocolate ganache!
I may have gone back for another cookie….

I 1000% agree about quinoa. In fact, I’ve stopped eating eat. Jus doesn’t cut it for me, although your din looked good. How do the micro’d pumpking seeds turn out? Toasy? Crunchy?

I’m surprised to har that about the quinoa. I made it for the first time last week and even though a serving has half the volume of my morning oatmeal, I found it to be more filling. Maybe that b/c I got a little KERFy and added peanut butter which I have never done to my oatmeal??
