Studying went well today. I feel pretty good about my Biochem test, but I’ve still got a lot more to cram for Clinical. Luckily I have a nice 2-hour break in between classes tomorrow before the test at 5pm.
I wasn’t terribly hungry yet, but I had lunch at 1pm knowing I was meeting Victoria at 2 (we pushed our date back an hour).
This started as a Tempeh + Pumpkin Butter Sandwich, but turned into a salad with toast crackers.
I piled the salad with: spinach, carrot, bell pepper, zucchini, avocado, tempeh (raw), and dots of tahini for dressing.
With a pile of toast crackers and a few Kashis = carb bowl.
The carb bowl was the best part!
I had to eat kind of quickly and I was off. Lucky me the clouds broke some and I was able to walk there and back – 15 minutes there and 20 on the way home whilst studying.
Victoria brought me a treat!! Chocolate almonds from Target. These were REALLY good. Unfortunately I am not allowed to buy any snack foods until I eat all my bars, dried fruit and cereal, which keeps growing!
The Zoe’s Granola that I won on Lucky Taste Buds arrived today!! And I JUST opened a new box of cereal this morning, so these will have to wait!
Matt did well with directions to make some Split Pea Soup tonight. The boy (man?!) knows how to cook – he just doesn’t like recipe invention! This was awesome and sooo simple.

I will be VERY happy tomorrow night when I am home eating the soup leftovers and have these final two tests of the semester behind me!

Your hubby’s soup looks great! I’ve also found a great subsitute for split pea with bacon is roasted aspargus soup with sun dried tomatoes. Fairly similar in appearence and taste, but a great variation.
Robin Miller has an EXCELLENT recipe for roasted asparagus soup.

Split pea is my favorite soup of all time. It’s hard to find a healthy version in restaurants, though! I never know if they use animal fat/juice to thicken it up. Gross, I know.

I’ve wanted to try those almonds, but they’re a little too pricey compared to my bulk raw almonds from my local health food store. But if I found the 100-cal packs, I might have to pick them up!

Great carb bowl 🙂 I just bought those chocolate almonds a couple of weeks ago and can’t get enough of ’em! They have just the right “hint” of chocolate in them.
Gotta love fresh soup with a hunk of cheesy bread from Great Harvest! That’s the one I tried when I went there for the first time in years last weekend. All I gotta say is, HOLY YUM!

My snack collection keeps growing too… sometimes I just can’t help myself and grab one at the store, but then I always opt for real food instead of a bar (unless I’m on the go) so I’m hardly making a dent in the stash. Such is a foodie life 😉

The tahini tastes just like sesame seeds – because it is! It doesn’t have the sweet bean taste as hummus. The kind that I currently have it creamier than others, which have been more like peanut butter texture. I guess it all depends on the brand.
