Matt and I raced around at 5:00 to get dinner ready so we’d be able to eat right after our phone interview. We had soaked and then simmered some black turtle beans earlier in the day, so we just had to chop up some veggies and cook a grain to make a nice salad. I’m call it a Siesta Salad because you can make dinner and then take a siesta and relax!
Our interview lasted nearly 2 hours!!! It was lots of fun though and we think we gave great answer>s 🙂 It’s nice when you can just be yourself in a “job” interview. We’ve got a long road ahead of us if things do go in our favor, so cross your fingers!
At 8:00 I was ready to eat – no spoiling my appetite with cereal today!
The black bean salad was composed of about 2 cups black beans, 1 cup cherry tomatoes, 1 ear of corn,1/2 each yellow and green bell peppers, and a dressing made of 1 lime, 1/2 tsp cumin, + chili powder, sprinkle garlic powder, 2 pinches salt, dash hot sauce. We topped the salad with plain Oikos and fresh avocado
On the side we cooked a mix of a quarter cup each millet and amaranth (from Bob’s Red Mill) in 1.5 cups water for about 25 minutes, until tender. I LOVED the consistency of the grains – very Aztec and almost cornmealy!

Have you two thought at all about starting your OWN business, one that’s not a franchise, where you don’t have to pay someone else lots of money? Like a coffee shop/bakery with yummy home made baked goods. There’s a certain well known coffee place that has lousy baked goods. Homemade baked goods, coffee, and later you could add sandwiches and salads. Save all that money you would be paying into a franchise in the bank to be your backup while the business gets established.

One thing I was wondering about is soy milk. I drank a lot of it in college due to what I thought was lactose intolerance. I now have a slightly suppressed thyroid, which I partially attribute to the goitrogenic effects of soy. Have you looked into this at all?
We have found a local source for pastured milk and it has been fantastic – much easier to digest and no soy. Also, when I am feeling like staying away from dairy I stick with almond milk instead of soy. Just my .02.

Welcome!! I’m actually on cow’s milk for the next 10 days – I swap out the soy for variety’s sake. But I hardly think I drink “a lot” – usually just half a cup to a cup a day. I vary my calcium sources with yogurt, cheese and cottage cheese. I am not worried about the effects of soy in the the quantity I drink.
