My to-do list is getting smaller, but so is the day time left! I’ve got the laundry done and have been knocking off things on the computer (emails to catch up on, business cards to order!!) and cleaned out ALL of our old electronics to be recycled or go to GoodWill. I had to clear off my old laptop of personal files and it’s SOOO slow it took forever.
I finally broke for lunch around 1:30 – I had a bite of cooked wheatberries but other than that, my oatmeal and busy-ness held me over well.
For lunch I found two pieces of bakery bread and topped them with a version of ED&BV Goddess Garbanzos – basically just mashed chickpeas with Annie’s Goddess, some capers and some plain yogurt. I slathered the other piece of bread with avocado and topped it all with some spinach.
Across the placemat, I had a spinach salad topped with carrot, celery, raspberries, cottage cheese and a drizzle more Goddess dressing.
With hot tea, since it’s winter here:
I’ve still got to pick a dinner menu, go to the grocery store and run a few more errands. Hope I can fit it all in!
Mmmmm, Grasssss
I read an article in EatingWell Magazine on the airplane yesterday about grass-fed beef. Coupled with In Defenese of Food, it seems to be the way to go if you’re going to eat beef. I had no idea that it tasted different (so the article said) and I’m going to look for it at Harris Teeter and EarthFare. In the meantime, here’s a link to win a cow that I found!

That looks like a fabulous sandwich!

Hi Kath- What are you ordering business cards for?
Katharine says
Hi Kath,
I have two questions for you: one, what kind of multivitamin do you take? And two, when you grill veggies on the BBQ, do you season them with anything (salt, pepper, olive oil, etc)? I’d like to start grilling veggies now that it’s summer! Thanks so much!
(sorry for the re-post of this question, but I think I posted it too late under your breakfast blogging this morning!)
Katers says
I’ve been thinking of ordering personal business cards, with my name and email and cell. I have my company cards, but you know, I’m a person outside work! 😛
VeggieGirl says
I like your version of the Goddess Garbanzos from ED&BV – yum!
Good luck with the rest of your to-do list – sounds like you’ve already made quite a dent in it!
Romina says
Yum! Gotta love goddess garbanzos. Best idea ever!
Kristie says
I really really want to find this coveted Goddess dressing. That sandwich looks amazing!

Hey everyone-I posted this under the breakfast link, but was curious for everyone’s answers so I thought I’d post it again under lunch 🙂
Just curious from everyone-and I know this has been asked before-but what are all of your heights and calorie intakes (or goal calorie intakes). Sometimes when I read these blogs I feel like I eat so much more. I’m 5?11 and eat anywhere from 1800-2400 calories in a day.
Korin says
Hey SarahF,
I also feel like I am above what a lot of girls on here are doing, too. However, I’m 6’1″ and I am an avid runner, logging 5-7 miles 5-6 days per week.
I eat between 2,000-2,500 a day, if I had to guess. I do not count cals, though.
caitlin bo says
im 5 ft 4, weight 116, and eat anywhere from 1400 (no workout days) to 1700 (longer workout days…). I don’t count once a week and just eat whatever I feel like (prob 2500).
I aim to NET 1300 to 1400 a day.
It sounds low, but I’ve tried eating more and I always gain back the weight. My preferred weight is about 5 lbs below my set weight.
SarahF, i wouldnt compare yourself to others so much! You sound like you’re eating a good amount for your height. If you can eat 1800 to 2400 calories a day and not gain/loss weight (if youre trying to stay where you are), then you are fine 🙂
KimPossible says
I have a question for the group – After eating whole wheat bread exclusively, I decided to branch out and try some new types of bread. I just tried pumpernickel today – WOW – love it! I bought the healthiest loaf of pumpernickel my grocery store had, however I noticed it wasn’t whole grain. Does whole grain pumpernickel bread exist? If so, could someone tell me where to buy it (brand names/stores)? Thanks!!
R. Leigh says
Sarah F,
I’ll repeat too! I definitely eat a whole lot more than what I’ve seen in food blogs. I’m 5’3, fluctuate between 120-130 lbs, and I work out 3-4 days a week (cardio and weight lifting). If I eat 2000 calories a day, I lose weight. So I typically eat around 2500.
And, Kath, I’m really sorry to be spewing comments all over the place, but I have to tell you, I just saw the little smiley face on the very bottom of the page and it’s SO CUTE. I love it!
Allison says
I am 5′ 10″ and eat between 2500 and 3000 calories a day. (I wear a size 4 dress if that gives you an idea about my size…I don’t like to weigh myself). I exercise A LOT and lift weights 3 times a week. I clearly eat way more than most food blogs and it freaks me out a little, but I have seen a nutritionist and my clothes fit fine.
Ange C. says
Hmm..that chickpea mash is a perfect ‘bring your lunch to work’ idea. Must try soon.
Sarah F-
I’m 5’0, about 104 lbs, (petite) and work out 6-7 days/week. It’s kinda my hobby. I don’t count calories but if I had to guess, i’d say i eat anywhere from 1600-2000/day. On weekends I end up eating more from nice dinners and treating myself to desserts. I really have a huge appetite and a high metab thanks to my dad. I probably eat more than another girl my size. I come from an Italian family where not getting seconds offends the cook!
Point is….everyone is so different and there are just so many factors that affect weight/calorie intake, etc. I think the key is to aim to eat what is good for your body, treat it well and enjoy food!
BethT says
Grass fed beef really does taste superior to regular. It is more tender and flavorful IMO. Plus, Michael Pollan does a great job of explaining in Omnivore’s Dilemma that it’s also better for the cows to be fed grass (what they’re meant to eat) instead of corn, and better for the environment as well because we’re not using energy to raise corn strictly for feeding cows!
Betsy says
first jenna makes this (at least i think) and now you (the goddess garbanzos, that is), that it must be so tasty. adding it to the list…

from the Dog gone good posting a couple of days ago:
Hi Kath,
When you eat out, do you normally eat everything on your plate? This time you said it was a perfect portion, so I assume you finished it all ( I agree the portions look normal sized), including dessert.
Sonia says
I need motivation for pushing myself to the gym this week. Please help.
I don’t know why – I like working out but lately it’s zero motivation.
I need to go since I want to reduce my body fat percentage – and that is not going well. Anyone out there please help.
I have a vacation coming up soon and want to look good for that.
TC says
I will also repeat my calorie/height/weight answer:
I’m 5?8? and work out about 6 days a week. I also lose weight if I eat around 2,000 calories, so I keep it around 2,500 to maintain. Our bodies are smart. Feed them consistently, no starving and/or bingeing, and they’ll let you fuel up this way without “blowing up” size-wise. Instead you’ll have great energy, be healthy inside and out and can enjoy more food! I forgot to post my weight the first time: 127 pounds.
Carrie H says
Sonia —
I’m feeling you. I need some motivation today.
Sometimes, picturing how I will feel in the evening after working out (or not working out) works for me. Once it the workout is over, I feel so much better for having done it. If I put it off or don’t do it, I think about it and potentially regret not doing it. Just working out and getting it over with frees up a lot of “worry time”!
That said, missing a workout here and there isn’t the end of the world, and I’m learning that too. Sometimes you just need a break!
Kath says
Kelly L.,
I’m ordered KathEats.com ones to give to people. I’m tired of writing the address on napkins 🙂 And I ordered my mom some for her writing/teaching career. We took forever to choose the designs!
Katharine ,
(I saved my response for this one). I take Harris Teeter brand One A Day Women’s. And for grilling veggies, I usually spray with cooking spray or rub on a little olive oil, depending on the veggie, along with S+P.
R. Leigh,
What smiley face!? Did I miss something?
Megan ,
I remember your question – thanks for re-posting. I don’t always clean my plate in restaurants, but I did that night, which is why I noted the portion. I’ll usually say in the post “I ate half of the pasta” or something if I didn’t finish everything.
Sonia ,
Go put on your workout clothes right now. Then you’re 75% of the way there. (I put mine on early sometimes to get over that hurdle). Then you just have to do 20 minutes when you get there. But hopefully your motivation will kick in and you’ll get in all you initially wanted. You’ve got to trick yourself into workouts when you’re not in the mood to get yourself there.

So I live in Nebraska and while i realize that NE is incredibly lame but i am really starting to think these wheat berrys are a blogging myth! I have checked EVERY store here, including the insanely overpriced health markets and specialty shops.
Please stop sending me on a wild goose chase to find a delicious magical food that does not exist. It is making me sad.
But seriously, i know there are a few nebraska people that read this, have any of you found it in Lincoln (if you say whole foods i will punch you, as Lincoln is still in the dark ages and does not have a whole foods yet)

My husband bought some grass fed beef from a client a while back and I wasn’t keen on it. It had a different flavour and texture from regular beef, and since I don’t eat red meat very often, I figured I’d rather enjoy what I’m used to than eat what I’m “supposed to”. It wasn’t gross or anything – just not what I expected. To each her own, I guess!

i see the smiley face too! if you scroll down to the very bottom theres a tiny smiley face
Kelly T says
You should make Katheats shirts, too.
i agree that getting dressed is half the battle of working out. My deal is actually getting in the car, but i tell myself if i get there and want come home i can. I havent missed a workout that way, yet.
Except with gas prices, these days, if i drive there I sure as hell am making it worth it.
JessieP says
Good lord, how did you possibly notice that teensy little smiley face, thats scarily observant!

Sonia –
I am totally feeling low motivation right now. I have to leave for kickboxing class in 10 minutes. But, I had such a horrible day at work and just want to veg out on the couch. But I’m going to take Kath’s advice and put my workout clothes on and suck it up.
I always feel good once I’m there. Getting there is always the hard part! Just think after 30 minutes or an hour, you’ll have your workout under your belt. When you think of how small of a amount of time that is, it will be less daunting.
Hope that helps!
SarahF says
Thanks everyone for your comments about approx. how much you eat. I know I shouldn’t compare myself against other people since everyone has different needs, I was more so just curious since sometimes I feel like all I do is eat!
My trick for going to the gym is bringing my workout clothes with me to work. I take the bus to work and it’s such a pain in the butt to carry my big bag on a crowded bus that there’s no way that I’m going through that hassle and not going to the gym. Plus, I take the bus a little longer then my stop where I transfer, and then to get to where I would transfer I have to walk right by my gym. So then I’m in front of my gym with my work out stuff-I haven’t walked by yet and I don’t see it happening in the near future!

Mmm, that sandwich looks delicious! I used up the last bit of my Goddess Dressing to make that last week!

I have a question regarding snacks.
I eat an afternoon snack every day, and every day it annoys me a little more than the day before. I eat because I get hungry, but I’m wondering if I get hungry because that’s just what my body is used to.
I would love to forgo the afternoon snack, but I’m wondering if it is a) necessary or b) a habit that can be changed.
Thanks, guys!

So I read an article in Elle today about a “diet” where you fast every other day and eat whatever you want on the other days. I thought this would just work because you are basically halving your calories but the article also talked about other health benefits from doing this. Has anyone else read or heard anything about this? Kath what do you think, anything from your nutrition classes?
Kath says
RachelD ,
A good question to ask when you’re considering new diet trends is: What Would Your Body Do? Would your body want you to starve for a whole day just to eat more the next? Absolutely not. So I side with our bodies. They are not designed to fast and don’t like it when we do. They like fuel at regular intervals throughout the day. (Just my nutritional opinion at this point, but Physiology would agree).
Kath
Calories in avocado says
How can fasting be good for you? Perhaps it has something to do with how, ages ago, people didn’t have food readily available and had to hunt, forage…
