Drowning in rain today. Aching for blue skies. But life is not sad-blue because what’s being served is full of color!
I decided to keep my workout at home today given the dreary weather. Also an opportunity to try out a new prenatal DVD. Expecting More sent me this one to review on BERF. Details coming there, but I have to say it was the best workout DVD I’ve ever done. I actually SWEAT and got out of breath! The 50 minute workout (including warm-up + cool-down was awesome).
I got behind on my eating and nothing sounded good for me for lunch except cheese. Funny how I seem to revert to first trimester aversions when I get behind schedule.
Remedied with a cheesy quesadilla packed with red peppers and sharp cheddar
Irresistible chips!
And a bowl of yogurt topped with a super ripe mango, chia seeds and coconut. Divine dessert!
Havin’ a blast tucked away at home today, but now, I venture outside.
Krissy @ Shiawase Life says
Yes! Rain is good, we have to embrace a rainy day now and again.
Stephanie @ Legally Blinde says
Wow, that mango looks so juicy! I don’t usually have much luck with mangoes, but I might have to pick one up soon and give it another try – yours just looks so good!

I hate the rainy weather but boy do we need it where I live! We haven’t had rain in such a long time and there is pollen everywhere.

Nicole says
As much as I absolutely LOVE yogurt (especially Greek!) the dairy and I do not get along 🙁 Have you (or anyone else here) ever tried cashew milk yogurt? I was thinking of investing in a yogurt maker so I could try The Spunky Coconut’s recipe- http://www.thespunkycoconut.com/2010/07/refined-sugar-dairy-free-yogurt.html
KathEats says
I haven’t heard of that!
Andrea @FrSeed2Stomach says
I haven’t tried cashew yogurt yet, but I make cashew cream ALL the time (dairy doesn’t disagree with me, but I try to avoid it except when it comes to aged cheeses and yogurt) and when I posted my recipe (http://www.fromseedtostomach.com/2012/02/have-you-discovered-cashew-cream.html), one of my readers commented about cashew yogurt. She made it and had good results. She included the link to the starter she used in her comment! If you have a food dehydrator, I think you can make yogurt in that, BTW. Good luck, Nicole!
Megan @ Megan's Munchies says
Loving all the blue!! My grandma had those dishes….the one your yogurt is in! They always make me smile when you post them

Yay for a good sweat and the DVD.
I just posted a recipe with cheese, tortilla shells, and mango. I am loving this post of yours! Your mangoes are the best!
Joanna @ Midwestern Bite says
My best advice for pre-natal workouts is to practice getting up off the floor holding a twenty pound weight in your arms 😉 because that is pretty much life after having a little one!
Ashley @ Coffee Cake and Cardio says
Shades of blue and orange! That quesadilla looks super yummy!
Angela @ Happy Fit Mama says
Good to know about your DVD. I never found an at home workout DVD that was intense enough while I was pregnant. Now I have something to suggest to all my pregnant friends!

I will have to look into that Expecting More DVD. I need to workout more, and if you say it was the best workout DVD you have ever done, I totally trust your judgment 🙂

There was a good bit of jumping (jump rope, jog in place) which threw me at first, but I got used to it and there are low impact options too
Sarena (The Non-Dairy Queen) says
My mood is matching the rain today. We had a horrible loss in our community and my thoughts are just gloomy. I’m definitely hoping for sunshine soon.
ann says
Maybe I should try the workout video NOT being pregnant.
KathEats says
Haha you should!! When they say “hold your baby” you can just feel your stomach getting firmer 🙂

My midwife always told me that “pregnant women can’t have too much salt” – maybe the chips are irresistible because you want the salt? (or maybe it’s just because chips are the most wonderfully crispy mouth-wateringly delicious thing ever invented… yep, probably the latter.)
Lindsay says
Kath,
Could you do a post for us college kids? On eating real food while going to college/living the dorm life etc.? I’m currently a student at UCF in Florida and it’s something I sometimes struggle with.
I love the glass jars you put your drinks in . 🙂
Lindsay
KathEats says
I can think about it, sure
Tiffany says
Hey Kath,
The mango you had for lunch looks so good!! I Tried your cottage cheese oats yesterday morning. Definitely not my thing 🙁 I stirred them into the oats after I cut the heat but it made my oats cold and i didnt like that. So i put it in the microwave for a bit to warm it up again and that made the cottage cheese rubbery.
I use cottage cheese in overnight oats sometimes and its really delicious! Have you tried that?
KathEats says
Sadness. Maybe keep on the heat longer next time (if there is a next time…)
I have never put CC in overnight oats…ironically, I’m scared of messing up the texture!
Tiffany says
That’s a good idea, Thank you 🙂
The texture is still super thick and doughy the only difference is more of a cottage cheese flavor. I still prefer using greek yogurt but its a nice change and delicious too.
Andrea says
I’m definately trying that next time I make overnight oats, good idea!
Tracy says
I love adding some CC to overnight oats along with yogurt. The CC adds a tasty saltiness which I love!
Laura @ She Eats Well says
Wow wow, that mango is incredible. I hope it tasted as good as it looks!
Stacy @ Say It With Sprinkles says
I’ve been on a cheese kick lately, too, which is bad since I don’t eat dairy, and the non-dairy cheese I do eat ONCE in AWHILE is kick-my-butt expensive! Ugh, haha!
Katie in Vermont says
Hi Kath! Is that awesome crackled/mirrored finish on your console something you DIY’d or did you buy the piece like that? LOVE it!!
KathEats says
It was karens actually and was pretty pricey, I hear. She gave it to us when it wouldn’t fit in her new house
Lisa @bitesforbabies says
So, you love chips?! That’s all I craved for the first three months! Have you tried Pop Chips?! They’re delicious and much healthier than regular chips 😉
KathEats says
Yeah! They are good!
Molly @ RDexposed says
Why am I not buying mangos? Yours have been looking so good!
Michelle (Better with Berries) says
Yum – I’m craving mangos now!
Lisa says
Hey Kath – I’ll be heading out to CVille for a friend’s wedding in May. Can you recommend gyms that will allow drop in spin classes? I’m an instructor in Sunny So Cal 🙂 and love taking classes elsewhere to get new ideas, etc.
Thanks!
KathEats says
Acac here is the nice one. I thiiiink you can drop in. There’s also a golds. But acac is better!
Stephanie says
Just wanted to tell you that we just ate your mushroom lasagna for dinner tonight and it WAS SO GOOD! My husband who usually hates pasta couldn’t stop saying how delicious it was and he really like the flavor the smoked mozzarella added to it! So, so good, it will definitely be added to our dinner rotation!
Tell Karen yummy for us!
KathEats says
Oh yay, I will!
Kelly @ Vegolosophy says
That mango looks AMAZING!! Beautiful color and looks super juicy, yum!

I long for the days when it’s not raining. Unfortunately living in Oregon, those days are very few and far between this time of year. I guess that’s what they mean by April (and March and February…) showers bring May flowers.
Your mango-coconut yogurt concoction looks absolutely divine. Must replenish my mango supply ASAP!
Amanda @ Veggies n Dogs says
I love how you make everything look pretty and delicious!
Jeri says
What size soft shell do you eat? I can’t tell if that is soft taco size or fajita size.
KathEats says
I think whole foods only makes them in one size… Maybe 8 inches diameter?
Fran@ Broken Cookies Don't Count says
Lunch looks delicious to me!
~Christy @ wonderofallthings says
