Our week at Bald Head has come to an end. I always think that the best vacations are the ones that leave you yearning for a little bit of normalcy and that make going home feel right. We are reset and recharged (and 50 shades tanner).
I had simple breakfasts, sandwiches for lunch and shrimp and wine for dinner almost every night! I can’t wait to tell you more about these Quaker Overnight Oats cups this week. They are so perfect for travel!
Yogurt bowls are always a beach staple for me. No dishes to do!
I made a half sandwich stuffed with turkey or ham, cheese, mixed greens, and pickles for lunch most days. Green peppers when we had them!
It’s so much easier to take a sandwich to the pool than a salad, but boy, am I craving salads now!
We did get in some exercise — a beach bootcamp and some long walks. And plenty of rolling around in the surf!
We went to the Shoal’s Club for the day once and splashed in the pool. The beach there had the most incredible tide pools!

We had glorious cocktail hours on the porch with cheese and crackers, chips and guac and the like.
Thomas and I made a low country boil, although since our pot was so small we roasted half of it (the potatoes, green beans and sausage) and that worked out quite well!

My parents bought a marsh house here on the island!
If you can’t tell, our whole family loves this magical place, so we are thrilled to call a piece of it our own.

Found it! link below in case anyone else was wondering. Hmm In the pic above it looks like she added a chocolate shell on top which is not a part of the recipe. So I will add the third step of melting chocolate chips and coconut oil, spreading that on top and put back in freezer until it hardens.

Also, i agree salads are hard to eat at the pool or traveling. Yay for sandwiches!

When you do a beach workout, do you do it in your swimsuit? Whenever I try to do that, I find it’s the most uncomfortable thing! I used to try to do a combo open swim/HIIT workout at the beach, but I got such terrible chafing that it wasn’t really worth it.. 🙁

That is so exciting! Are they going to move there full time or is it just for vacations? My parents bought a beach house in FL a few years ago (in the area we all vacationed as children) and moved there full time from NY and LOVE it! We love going down for visits!

Just for visits! They are renting it out all summer, so we haven’t even been in it yet! I could see them moving there for part of the year in the future though (or me moving there for part of the year lol!)

Eggs = wash the pan
Oatmeal = wash the pot
Smoothie = wash the blender
Pancakes = wash the skillet
French toast = wash the pan
Waffles = wash the maker (takes forever)
Bacon = huge splatter mess
Yogurt bowls (and overnight oats) are the simplest of all the breakfasts I rotate through!

Congratulations to your parents on their vacation home! We vacationed in the same place in Florida for 20 years and two years ago bought our own place there. We live there 6 months and in Indiana 6 months. It is perfect for us and we love both homes now. It really cured my wanderlust and with kids and grandkids in three other states we have plenty of travel just seeing them and everyone loves to come to our beach house for their trips.
