More couch potatoing! But this time we were anything but lazy! Matt and I worked on bakery stuff all morning. [You wouldn’t believe how much there is to do! From little things like ordering baskets and tissue paper to take to businesses with bread inside to choosing a contractor!]
Working from home means looking at the clock at 12:30 and realizing if you don’t get out of your pajamas and into your running clothes and SCOOT you’re going to move right into lunch!
I managed to get out the door with a date in my mouth [always the best running fuel!] and went on a pretty fabulous run. I think not having to hold up a conversation helped keep up my speed. I often have great runs when I’m by myself! I covered 4.6 miles and kept my hilly pace under 9:00 minute miles.
Lunch was assembled quickly after a shower while we dialed into our Monday afternoon conference call with GH. What would we do without their advice!?

My usual salad that I never get sick of:
- Spinach
- Carrot
- Celery
- Pepper
- Honey
- Olive oil
- Lavender salt
- Dates
Now if I don’t scoot to the grocery store, we’re not going to have anything to put in the oven for dinner!

Ha, yep– I LOVE working from home (which I do three days a week), but I DEFINITELY have mornings where I look up and suddenly it’s noon and I’m still in my pj’s!!

I used to too. Then I read the best way is in a skillet with a cover. The bottom gets recrisped, and with the pan covered, the cheese remelts. Super easy and quick!

If I looked up at the clock and saw it was 12:30, I’d go straight for lunch, unless there was someone who would prepare my lunch while I was exercising 🙂 Are you able to get local spinach for your salads in the winter? We have a farmer here with hoop houses, and local spinach in the middle of winter is the best thing ever — spinach never tasted so good!

I heat my pizza in the toaster oven- uses less energy than the broiler (but not as effective if you are heating a large quantity). I swear, I am addicted to our toaster oven, almost never use the microwave these days!

Since you’re talking about spinach, I have a question! Do you know if wilting it takes away a significant amount of its nutritional value? I like to add it to hot pasta & rice, but am I losing a lot of nutrients in the process? It’s not like I’m sautéing it or anything…

You shouldn’t be losing any significant nutrients with wilting so long as you’re not steeping it in water a la boiling. When you cook in water, some nutrients do leach out. But wilting should be fine!
