I know I say this every Monday, but boy was Body Pump hard!! Chris is the Monday teacher and like I’ve said before, his class is now called “Pump Challenge” because it goes above and beyond the BP norm. We do long holds, TEN clean-n-presses in a row, extra mini sets on the end of songs.
This I can say: I would never, ever, ever, ever challenge myself like that on my own, so the push is good!
For lunch I prepared a pile ‘O kale topped with some Queen Bee Raw Honey. Nothing takes away the stink of kale like honey! I massaged a little olive oil, honey and lavender salt into the kale to “cook” it down a bit. The raw honey was fab – gave it an over-and-beyond honey taste.
Once I was showered and transported to the bakery, I doctored up my salad with tofu, cucs, tomato, lemony hummus, green peppers and olives.
On the side: a trio of breads! I couldn’t decide which to have as a slice: savory, crunchy, sweet, so I had a mini slice of each
We all dug into the peanut butter cookies after lunch –
And it’s going to be hard to stay away from the 10 pans of Cville Cluster Granola this afternoon!
Must plan it in for a snack.
Have a marvelous Monday afternoon!
Annette @ EnjoyYourHealthyLife says
That does sound like an intense workout. We do 24 clean & presses for the new release, so I am sure 10 in a row would be killer! It feels oh SO good to lift, eh??
I love huge salads with yummy bread, so your lunch looks really REALLY inviting! And yeah, good luck staying away from those pans….. 😉
Lisa @ Sunny Seed Stories says
You always have the most colorful meals. Definitely something to aspire to. 🙂
Kristin @ eat healthy. be happy. live well says
I’ve never heard of massaging olive oil and honey into kale…maybe that would help me be able to eat it!!!
I’m jealous that you have a gym so close to take classes at! I’m the same way, definitely won’t push myself as hard as I would in a class or with a trainer!
Laura @ Cookies vs. Carrots says
I’ve never thought of massaging kale with honey before! Does it make it taste sweet? Is that an odd combo?
Holly @ The Runny Egg says
I love the picture of the honey — it is glowing! Beautiful.
I’m glad you had a tough workout — it is a nice way to start your week!
Julie H. says
Way to push yourself!
….I would have to plan out my snacks if I worked there too! That granola would be on my list too!
Cait's Plate says
I see some berries (i mean ‘burries’) + milk + cville cluster in your future! Can’t wait to have that snack in mine 🙂
Glad Body Pump was challenging – it’s always nice to feel like you really got worked out (even if it stinks while it’s happening!)
Kate (What Kate is Cooking) says
I would definitely not be able to stay away from that granola! Every time I make my own I burn my mouth eating it from the pan 🙂
Foodie says
A trio of breads – love this idea!
Gina @ Running to the Kitchen says
Oh how I wish my salad had that trio of bread hunks with it!
Cait @ Cait hates Cake says
Honey on kale? I might have to try that. I love eating my kale raw, but sometimes I get a batch that is just too bitter.
Angela @ Eat Spin Run Repeat says
Sounds like you had a great BP class! And on the granola… I wouldn’t be able to resist at all. Good job I’m nowhere near Cville or else your stocks would be in trouble!
Margo @ peanut butter trees says
Sometimes you just have to choose all the choices – love the array of breads and different flavor cravings I’m sure they fulfilled!
Foodie (Fab and Delicious Food) says
Good call on having a bit of each type of bread! Variety is the spice of life! 🙂
Amanda- The Nutritionist Reviews says
Thanks for a great kale idea! I am just getting into eating it and need all the ideas I can get!

I don’t know what I would do if I worked at GH. Actually I do know what I’d do…eat everything! That bread looks SO GOOD! 🙂
J3nn (Jenn's Menu and Lifestyle Blog) says
I love raw honey on kale! I need to buy some more, I was hoping a local place might have some but I haven’t seen their sign yet. I’ll have to look around. 🙂
Namaste Gurl says
I loveeeee kale– by far my favorite green. Ever. 🙂
Your salad looks fab!
Maria says
Good for you re the workouts. That and your lovely meals keep you looking good.
I, too, try to work out and follow nutritional information but it is getting harder. I wonder if there is a conspiracy by the food manufacturers. Sort of kidding, but sort of not, and here’s why:
I use Hershey’s cocoa (natural unsweetened) because it has low fat and few calories. I keep records of the nutritional information. Today I noticed that the latest container has changed the calories from 20 per serving to 10, and the fiber from 1 g to 2 g. Sounds better, right? Same product, so how can this be?
Their explanation was that the company had changed the calculation method they used (from 449 to atwater). This sounds plausible, but since it makes the product seem better for those of us who are tryng to take care, is it really a more accurate calculation or is it spin? As an RD, what is your opinion of this change?
KathEats says
Hmmm. That’s very odd. I’m not sure how they can change the nutrients per serving unless they changed out they ROUND the calories and fiber? I’m really not sure what “from 449 to atwater” is?
Olena (The Fit Gourmet) says
If you fancy one very technical and scientific read, this link http://www.fao.org/DOCREP/006/Y5022E/y5022e04.htm gives the skinny on the different methods of food to energy conversion. One of these methods is Atwater. Not sure what 449 is. In any case, small differences in caloric values are only to be expected: I doubt that one cookie will be identical to the same one but from a different batch. Plus, many servings actually contain more than indicated on the package, e.g. it says a bagel is 80 g but it’s likely to be over that (because manufacturers are fined is their food is “underweight”).
I think, the best solution is to keep in mind the approximate nutritional value of foods but not get too bogged down by tiny variations. Personally, I just use any 100% unsweetened cocoa, which is probably pretty much the same across the line.
Maria says
Kath, There is an explanation here: http://www.nutribase.com/449.shtml
Apparently there are several ways that the nutritional content of foods can be calculated; 449 is one method and atwater is one of the others.
Note that the numbers are not rounded. The calories are now HALF what they were, and the fiber is now TWICE what it was. Since those results are more in keeping with current nutritional advice, I am having a hard time believing that the reason for the change in method of calculation was benign.
Thanks again for your time with this. You are helping a lot of people.
OLENA, thanks for this. I agree, small variations are not that important—this is not small, however. It is one tablespoon of the same product with no changes in ingredients, it is not a cookie, which could vary in size and contents from one to another in the same batch. Yes, 100% unsweetene cocoa should be pretty much the same, so why is THE SAME cocoa product now half of the calories and twice the fiber? Again, I am suspicious of the reason for the change in methodology. 449 is one of the different methods; see web site listed above. We are all trying to understand more about what we are eating, and the food manufacturers are not making it easy.

If the day does not slip away too fast, I am actually going to make some kale chips, and I will have to add some honey to them. Thanks for the idea!

I know what you mean about Body Pump…there is no way I would ever push myself like that. I never knew I could do so many lunges & squats with heavy weights til I did Body Pump back in university. Its amazing what a group setting can do!
Jenny @ Fitness Health and Food says
ohh I LOVE the idea of the honey massaged kale mmm mmm! 🙂
Mary @ Bites and Bliss says
It’s the best when Body Pump REALLY challenges you! I know it’s a challenging class in general, but some days seem a little easier than others and I like leaving feeling like I really kicked my butt.
Sarena (The Non-Dairy Queen) says
I’ve never massaged my kale before, but I feel like I should try it. I pretty much just eat it sauteed or as chips. I will try it next time!

Funny that you dug into peanut butter cookies. I just posted about a new flourless peanut butter cookie that I made. So easy and they tame my peanut butter monster 🙂
Glad you had a really challenging BP class. That’s awesome. I love classes like that!

I love that salad combo and the mini slices of bread. I probably would go to town on the granola clusters!
Kristin @ STUFT Mama says
Love that you had to have a little sample of each bread. I always have to do that since I’m the most indecisive person in America. I’m always jealous of your lunches too while I’m scarfing mine down at the computer and admiring how pretty yours are. 🙂
Sonnett says
yummy-licious looking lunch. i am still intrigued by that tofu….. what herb combo do they put into it? please share if you know….
KathEats says
It’s Italian herbs, so I’m guessing oregano and what not

I was lucky back in Indiana I had the rec center to go to but down here I am not even sure there is a gym near by which means no classes or even use of equipment.
I heart peanut butter cookies. I need to find a good Gluten Free recipe…anyone have suggestions???
Mary Frances says
Stacey,
This is not tried and true, but possibly you can experiment with your own recipes from what you already know. Maybe you can look for Bob’s Red Mill Gluten Free Baking Mix and a package of Reese’s Peanut Butter Morsels and write down their recipe suggestions for cookies (substituting where necessary) to see what you come up with. Actually, you might come up with something delicious while meeting your GF needs. Good Luck!
rumfunandsun says
Thanks! I have experimented but it’s just never quite right. They usually do the trick but there is always something missing or just not perfect about them.
