This dinner was good, but not great. It needs some adjustments made to the ingredient portions. This recipe was much better with smoked salmon! But there was nothing bad about tonight’s dinner!
Started with a glass of the Ledson Petit Verdot from last night. Fruity and bold!
Recipe:
We chopped up broccoli and green pepper and steamed them in a bit of water.
Whole wheat macaroni boiled in the background (1.5 oz each).
In the meantime, we combined 1/4 cup half and half (leftover from last night), about 2 tbsp lemon juice, 20 grams grated parmesan cheese, and capers in a saucepan and let it reduce until it thickened. We also added some spicy peppers from a jar.
Once the parts were cooked, we tossed them all in a bowl with 1 can of salmon and topped with more parmesan cheese.
Like I said, it was good but not great. The “cream sauce” wasn’t volumous enough to really coat everything and still remain a sauce. We should have doubled the volume. But it sure tasted good. 380 kcal per serving.
Total dinner calories (with 7 oz of wine): 560
Evening Plans
It was somewhat depressing to be done with dinner at 6:45 on a Saturday night. Other people are just going out!! We went through our heads of 100 things we could do:
- Go see a movie
- Go get coffee
- Go to a wine bar
- Walk to rent a movie
- Walk to coffee shop
- Go out for dessert
- Meet husband’s mom for wine
- Meet husband’s mom for coffee
- Call friends X, Y and Z (none of which worked out)
Sadly, all either involved spending money or consuming more calories! Why does that always seem to be the choices!? If it were summer, we’d go out walking, but it’s dark and cold out there. I guess we’ll end up reading our books, but I wish some of you lived nearby and could join us for some entertainment!
Off to have some freezer ice cream…

I hate the fact that everything there is to do (when I think about it) seems to either involve spending money or consuming calories, neither of which I desire to do! I guess I'll stick with reading my book!
