Snack
As promised, I had plain yogurt for a snack. I mixed in some flax (for my daily omega-3 requirement!), raspberry jam and Fiber One. It totally hit the spot and took away my post-lunch hunger.
Movement
I was cold around 4:00 so I decided I needed to move. I also have very little on my to-do list these days (with time off from work and no wedding to plan, it’s nice to relax for once!), so I thought there was no better way to warm up than to clean the floors!!! I swept, mopped and vacuumed the whole house. MAN it feels good to have a clean house!!! Here’s a photo the husband snapped mid-mop:
While cleaning I had some hot tea and compulsively ate 4 Kashi crackers when I was done, so sorry, no photo 🙁 I added 100 kcal to my activity today for the shopping and all the cleaning. I am normally very sedentary at work so I keep my NET close to my BMR, but since I was on my feet for about 2 hours today, I needed some more fuel.
Cocktail Hour
Virgin Diet Tonic and Lime while we cooked!
Dinner
Salmon Burgers
with Sweet Cherry Collard Greens
The burgers are made with Trader Joe’s Salmon Patties and we love them! We topped them with swiss cheese, mustard, tomato and avocado, all on a Rudi’s 100% Whole Wheat Organic Bun.
The collard greens are another one of our recipe inventions! The burgers were supposed to have brussels sprouts as the side dish, but collards were Buy One Get One Free so I decided we’d have them instead. I got ALL of these for only $1.79! Almost 2 pounds!
We were planning to split these (yes, TWO servings) but I decided there was more than we thought, so it turned into three. Once the greens were cut and rinsed, we sauteed them in a HUGE pot with just a little EVOO. Then we added 50 grams of chopped dried cherries and 3 tbsp of raspberry jam. They were perfectly sweet and delicious!!
Total dinner calories (including 2 sips of the husband’s beer!): 500
Dessert
THIS arrived in the mail from our realtor today:
She really goes out of her way to thank us for using her when we bought our house a year ago!!
I had one for dessert – it was solid dark chocolate and using my handy-dandy food scale, it weighed in at 9 grams (it tasted just like Dove Special Dark), which I logged as 47 kcal. De-licious!
Solid dark chocolate isn’t something I crave (like homemade cookies or filled truffles!!), although I do love dark chocolate. But the husband took the liberty of hiding the box anyways. I’m pretty sure they’re in the upper cabinet above the fridge, but trust me, I’m not going to get a ladder to check
We also have some other sweets around leftover from Christmas – a box of unopened hazelnut truffles, lemon cookies, and butter wafers – but since it’s all wrapped up and in the garage, it’s out of mind.Recap
Total Thursday calories: ~1700
– 500 thru workout and super-duper cleaning
= net of ~1200.
Tomorrow
I have to work tomorrow ( 👿 ) but only through a late lunch. I’m planning to come home around 12:30 or 1 and have tuna salad in the fridge to have then (which I made this evening while dinner cooked). I am also planning to get up at the crack of dawn for spinning class because I’d rather get it over with than have to go in the afternoon after work. I already know it’s going to be REALLY hard to get up tomorrow since my body is not used to getting up at 4:50 after a good week off.
Those of you who want to start working out in the early morning – it takes about 3-4 days of doing it before you’ll get used to it so don’t give up! And if you take time off, you have to start over again, but just know it gets easier and easier each day you stick to it! Another secret is getting enough sleep. There’s no way I could get up at 5 a.m. if I stayed up until midnight.
Which is why I’m headed up to wind down and read in bed now….
Night!

Your house is so cute! The little snippets we see on the blog look like one long Pottery Barn shoot.
I always ask Garrett to hide things from me, but I know all of his spots and it's fun to search. Good job NOT breaking out the ladder.
Have a great New Years!

Laura,
I'll ask the husband – I'm pretty sure it's just ketchup, horseradish and maybe one other thing?
Megs,
ORDER IT FROM AMAZON!!!
Elle,
Come visit me in Charlotte and you can stay in the Pottery Barn guest room!!!

I use ketchup, lemon juice, and horseradish to taste. It's the best!
