Take XVII.
Until I get the craving for a leafy, crunchy, Hugh Jass salad, I imagine there will be a lot of smoothies for lunch. It’s the easiest way for me to get in 2 cups of greens!
Today’s mix was a blend of baby spinach, milk, greek yogurt, and frozen berries.
Got my greens, calcium, protein, and fruit all in one!
Plus Uncle Sam and some chocolate coconut butter magic shell on top! Fats accounted for too 😉
This is a new choco coconut butter OpenSky sent – it’s quite delicious and even creamier than Cacao Bliss!
And come with two partners – a Resee’s like simple-ingredient peanut butter and a crunchy hazelnut butter! AND these adorable jars to reuse after it’s all gone : )
On the side I had a toasted slice of Stout and Gouda bread with a little butter on top. This bread is so bacony from the smoked gouda yet no meat is involved!
Shout out to my pregnant Body Pumpers!!! Lynsie’s due date is TODAY and she was having contractions during class (and managed to do it all!) and Kirsten is 32 weeks along! They make my bump invisible 🙂
Afternoon work fun on the porch ahead!
Hillary says
I want every single one of those butters! I think I’d just eat them out of the cute little jars, too ; )
Katie @ Peace Love & Oats says
Smoothies are a great way to get in green veggies, and soooo delicious, especially with all those toppings! It’s super warm here in Chicago and it’s giving me a bit of a smoothie craving! Not sure I’m ready to give up my oats though!
Angela @ Eat Spin Run Repeat says
You and your prego Body Pumpers are so cute!! 🙂 I’ve got a biiiiig craving for a Hugh Jass salad right now.. I think I know what dinner will be! Have a great afternoon Kath. 🙂
Hope @ With A Side Of Hope says
Smoothies are so convenient. I really think I want to make one with dinner or for dinner tonight. 🙂 The picture of you and your Body Pumpers is adorable!
Maria@Sinfully Nutritious says
I am planning on making my coconut oil/Raw cacao chocolates for Easter, these spreads remind me of them.
You guys are so cute at the gym!
Melissa @ HerGreenLife says
Looks like you’re in good company at Body Pump! I’ve never quite warmed to green smoothies, but I’m glad they’re working well for you right now.
Heidi Bundles Of Hugs says
Those jars of goodiness look divine! Nothing wrong with green smoothies eat them up. I love the pic of you with the preggy girls all of you are so cute! Soon mah dear you’ll be saying where did the time go as you near your due date. Enjoy every moment looking back my pregnancy went by so fast.
Stephanie @ Legally Blinde says
Hahaha, Hugh Jass made me laugh 🙂 I LOVE those jars – they’re adorable! And the fillings sound pretty yummy, too. Love the pregnant Body Pumpers pic – you girls rock!! Enjoy your porch – I’m stuck inside the school library today and would loooove to be outside or on a beautiful porch like yours instead.
Stephanie @ Legally Blinde says
PS Meant to ask, does the bread taste cheesy? I’m generally not a fan of cheese at all, but that bread sounds really intriguing. I’m wondering if the Great Harvest near my parents’ house has it…
KathEats says
It does…but more smoky than cheesy
Michelle (Peachy Palate) says
You don’t look pregnant in the middle at all compared to the other two! they really made it disappear! Smoothies are the way to go, especially with a hunk of bread on the side!
Allison K says
Woo go Lynsie! Good for her! Also, I too have been in the “smoothie to get greens in” mode. Even though i’ve been able to stomach dark greens for a while, being able to get them down, and choosing them are two different things. They are never the first things I reach for, and finishing a salad is a chore. I think it has to do with my body’s desire for all of the simple carbs I had during my first tri.
Ellie@Fit for the Soul says
ohhh you’re looking great, Kath! For reals. Super healthy and glowy. 😀
And omgness~I’d love to get some of those coconut butters–they sound heavn’ly….
kathleen @ the daily crumb says
look at those bellies!! so fun to see super pregnant mommas-to-be still exercising.
enjoy the day, kath 🙂
Sarena (The Non-Dairy Queen) says
That’s awesome that you have other pregnant women in your body pump class! You all three look great! Lunch looks perfect. I think anyway you can fool yourself into getting those greens in at this stage is a good thing! Have a great afternoon Kath!
Sara R. says
It looks like Linsey’s got some serious weight on her bar too! Good for you guys, I really believe that keeping up with my workouts made my pregnancies and labors much easier, though it was definitely tough to drag myself into the gym some days!
Angela @ Happy Fit Mama says
Aww! Cute pregnant bellies! I was so self conscious of my belly button the further along I got in my pregnancy. It can really stick out at the end! I called it my lower nose! 🙂
Elizabeth says
Wow, so cool to see all the pregnant women in Body Pump! Yum, your lunch looked good. I’m not pregnant but I’ve been eating more green smoothies than salads lately, too! They are just so good. For lunch today I had spinach, frozen strawberries, a tiny banana, grapefruit segments (this MAKES the smoothie!), a few dollops of ff greek yogurt, splash of vanilla and some water. YUM.
Sana says
Holy crap, those ladies are hardcore!
Jen says
I was going to say the same thing – you look so tiny compared to the other pregnant ladies! Not that they’re “big” (they are beautiful!), but you know what I mean – just much further along with the babies; you’ll be there soon 🙂
Kelli H (Made in Sonoma) says
ha! They totally do make yours look invisible…
That’s awesome all you pregnant ladies workin hard!
Cat @ Breakfast to Bed says
I remember preggers body pump. so.much.sweat.
Cait's Plate says
Aw I love the picture of all the pregnant bellies! Too cute 🙂 I can’t believe her due date was today and she managed to get through contractions and finish the class! That’s incredible!
Coco says
Whoa.. All of you soon to be momma’s are impressive.. Good job!
Kristen @ Change of Pace says
That’s the easiest way for me to get greens in too sometimes. I’d rather have a smoothie than a salad especially if I’m on the go.
Susan H. @ The Food Allergy Chronicles says
Love the glass jars! How fun to have pregnant buddies at your body pump class! Yum on the smoothie and bread!
Kelley says
Oh my gosh, I give those girls credit!! I always get nervous for the super pregnant girls in my yoga class. haha Way to go, girls!!!
Averie @ Averie Cooks says
I just had labor pains after looking at the 3 of you preggie ladies in that last pic…too cute 🙂
a Resee’s like simple-ingredient peanut butter = YES that sounds fabulous!
Julie H. of Spinach and Sprinkles says
Aw! Your bump is growing though- imagine it in another 10 weeks! HOLY COW! It goes so fast!
Dawn @ Blonde on a Mission says
Wow! You have great legs. You should wear more figure flattering clothing! Pregnant women usually look cuter in fitted clothing 😀
Katharina says
Yes! You’re looking really good in this picture. The fitted shirt looks great on you.
Megan @ Megan's Munchies says
Those butters look amazing!!
Amelia says
LOVE it!! Y’all are so cute at Pump. Way to go Lynsie for pumping through contractions. One of our instructors was due last Wednesday and showed up to her usual Sunday class as a participant…still pregnant. She said, “I have been doing everything I can think of to get this baby out, but she wants to stay put! I simply can’t sit at home and wait any longer!!!”
I know that Mt. P’s GH uses Guinness with Gouda in their bread. Are y’all using a local stout aka Matt’s brews or another kind? 🙂
Jasper Naomi @ crunchylittlebites says
the colorful bowl is awesome, as always…
Lexi @ Cura Personalis Foodie says
Wow preggo and due TODAY plus doing body pump! What a champ 🙂
Chelsea says
Stout and Gouda bread sounds amazing! Maybe I can convince my baker husband to whip up some for me. 🙂
Ashley @ Coffee Cake and Cardio says
What adorable pregnant ladies!!
Kel@thekelshow says
Did you say creamier than Cacao Bliss?? I am so in!
You know what is funny? I can see your bump more pronounced in the group shot I have seen in the side shots!
I timed my hairdresser’s contractions last week as she colored and cut my hair. I promised if she got to the end of my appt I would drive her to the hospital which is a block from my house.
She made it thru, the closest contraction being 8 minutes apart, but gave birth 6 hours later!
KathEats says
It’s like liquid chocolate!
And LOL about your hairdresser 🙂
Kerry @ Totes My Oats says
I love using smoothies as a way to get greens and goodies in me! I love the picture of you pregnant girls!
Nescett @ bananaoats.wordpress.com says
Wow. Those women are an inspiration. I slept through most of my pregnancy. 🙂
Lindsey says
1) never commented before but you are quite possibly the best “healthy-living/food/whatever” blogs out there.
2) I saw “An Ideal Husband” last night (love Oscar Wilde!) and when I was watching it I was like, Cate Blanchett looks exactly like Kath!!!! Don’t know why it’s taken me so long to figure out and I’m sure you’ve gotten like a million of those comments.
KathEats says
Thank you so much! On both compliments 🙂
Liz @ iheartvegetables says
Kath, you are too freaking cute! 🙂 And at least you’re finding a way to get in the greens!!
Maria says
Hi Kath. Your belly is soooo cute. Quick question, do you always soak your chia seeds the night before you put them into your oatmeal breakfast?
KathEats says
🙂
I don’t soak them if I put them in hot oats. They only get soaked if they go in overnight oats, which all gets soaked together
Maria says
Gotcha, thanks so much. You’re so prompt and helpful!
Danae says
I eat smoothies in the morning, but never considered them for lunch! I think that is an inspired idea. Thanks!
jenny says
I’m puzzled by these nut butters. I’m Tasmanian and fail to understand the link between a choc-coconut butter and my home state. Being a cool temperate environment we don’t grow coconuts or coaca, although there is a teeny tiny hazelnut industry down here. Tasmania is all about fine cheeses, wine and fresh berries and seafood! They are cute jars though!
KathEats says
Maybe it has to do with the Looney Tunes character?
http://en.wikipedia.org/wiki/Tasmanian_Devil_(Looney_Tunes)
“He will eat anything and everything, with an appetite that seems to know no bounds.”
I have no idea otherwise!
jenny says
Maybe. Problem is that tassie devils primarily eat carrion i.e. rotting flesh. I think The Tasmanian should have done a bit of research into it if that’s where they got their name from!
KathEats says
🙂
Lisa @bitesforbabies says
Where can I get my hands on that choco coconut butter?????!!!
KathEats says
Coming soon on an OpenSky sale!
Kathryn says
WOW, if I were Lynsie I’d be worried my water would break during class! Yikes! Pretty impressive though!
KathEats says
I think she was hoping it would happen 🙂 We all decided we would cheer if it did!
Merideth says
I just don’t know about that smoothie LOL I have not yet tried one that includes leafy greens. Seems like there is a lot going on in there. Maybe I can get on the band wagon soon and try something new.
Elizabeth says
The jars look like Weck brand. Weckjars.com.
Debbie (accidently delish) says
Ironically I just received my open sky order today from YOU! I got the wild squirrel pb!! I love cacao bliss but it’s so expensive!! But I seriously finish a jar in a week! So addicting! Those look amazing!!
And you are so cute! I love watching you grow! Haha. Hope that doesn’t sound too weird!
Katie @ Talk Less, Say More says
Salad soup for me please! 🙂

You (and your preggo ladies) are so inspiring that you’re staying in such great shape. Great motivation for everyone.
I LOL’ed at “Hugh Jass.” I’ve never heard that until now.
I had veggie nachos and a smoothie for lunch.
Thank you for your fun, informative posts. I look forward to them.
🙂

Ana says
The nut butters and coconut+choco butter looks amazing!

I don’t always have fresh spinach around (goes bad too quickly), so is it possible to sub in frozen spinach? If so, in what proportions? Thanks!
KathEats says
I have never tried it frozen, but I think Oh She Glows has and says it works. I’d use maybe half a cup?
