Hola!
I’m all ready to take the RD exam!! Just have to get through 3.5 more months of internship first 🙂 And then study. A lot. But I feel really good about the review course and how much I already knew. It’s just a LOT of material.
I think my 11.88 miles caught up with me because I sure was hungry today! That awesome lunch barely made a dent in my stomach.
I had two Hersey’s Special Dark chocolates from the class stash after lunch to try to end on a full note. Let’s just pretend they looked like this.
Then I was bored and drew this image of the mixed nuts and seeds I dug into around 2PM 😉
And was STILL feeling hungry at 3:15 so I had an Amazing Grass bar!! The chocolate kind. This was not my favorite – the chocolate was more like dessert than fuel. But it still tasted good and finally filled me up!
Got home around 4:30 and found this fun girl ready to run!
Emily and I did a run, RUNPLUGGED. No Garmins or time keepers. Just us and some fun exercise! We set out for an unknown mileage and ended up jogging (not even running!) 4.75 miles around my neighborhood. It was quick, easy and awesome.
And I totally took my Camelbak to test him out!! I laughed at the thought of wearing it on such a short run, but actually, it was really nice to have the water!! I’m stoked to take this on our 10 miler this weekend. Perhaps spiked with a little of that sweet, sweet sports nectar 😉
Matt and I worked on taxes, I packed my lunch (gonna be a great one!!!) and then I FINALLY got around to putting something together for dinner.
The star was this bok choy
Which I sauteed with some mushrooms, rice wine vinegar and sesame oil, salt and pepper
And then served alongside the last of our Greek pasta salad with Sardines and Broc
The veggies were awesome. But note to self: sardines are best consumed the day of opening. This was a bit fishy, even for me!
Another NOTE: Matt often prepares some toast with butter with his dinners and I often have a delicious bite! Tonight was no exception.
I broke out the Dark Chocolate Dreams for Matt to try! He liked it but said "it’s not peanut butter." Of course it’s not – it’s a RESEE’S!
I had a spoonful too. It actually made a great dessert!
Guess what will be coming up in the next few days….OIAJ!
It’s past my bedtime and I am SO not done with my work yet!! Ahhh!!
Nite!
Allie (Live Laugh Eat) says
Hi Mr. CAMEL!!!!!! I need one of those for the summer–it sure is warming up this week, huh?
Chocolate is a wonderful thing!
Daniel says
That bok choy looks FANTASTIC! I’m glad spring break is coming up at the end of this week, I’m going to totally ask my mother to pick some up from the store before I return home.
And nice job feeling ready for that exam – I’m sure you’ll do amazing on it ;D
Chris says
We love that peanut butter too! Try a banana sliced in half long ways and make a “sandwich” with the choc peanut butter in the middle. YUMMO
Lauren @ A Fit Foodie says
I love when you just go for a run unplugged. No pressure. Just you and the pavement. It makes for a nice refresher.
Food Makes Fun Fuel says
You need to try justins chocolate peanut butter. It IS more like peanut butter, and fantastic
And I love the chocolate amazing grass bar just because it tastes like dessert
Monica (Musings of The Granola Girl) says
Sounds like a nice run you had today 🙂
OIAJ! I have yet to try them but need to soon!
jaclyn@todays lady says
I’m so glad the review went well!!
Bok choy is so yummy! Your dinner looks great!
Anna @ Newlywed, Newly Veg says
I went home for a week last week, and I accidentally forgot my garmin, so I ran all week “unplugged”– it was actually really nice and relaxing! Helps you to remember why you run in the first place– for fun!
Jolene (www.everydayfoodie.ca) says
I just found that PB & Co. stuff for the first time … there is only one place in my city that sells it, and it is the only flavour they have. I LOVE it!!
Jenny says
It tastes like Reeses!!! Now I HAVE to try it! This could be a dangerous relationship:) And I’m gonna like it!
Shayna @ Cuts and Curves says
Wow… 4.75 miles is short! That’s an average distance for me. I’d love to know how you got past short runs to longer ones regularly. I’m working on it, but it’s so hard for me! I’d love some tips – if you have any. Thanks!
Kath says
For me it’s more about time than distance. Now that I’m running almost 2 hours, 40 minutes seems super short. I really did add a little at a time. 5 to 6 to 7 and so on. So just work on adding half a mile to a mile per week.
Jessica @ How Sweet It Is says
I have dark choc dreams for dessert too! It ends up being pretty filling and I always am satisfied.
Stacey@http://stacey-healthylife.blogspot.com/ says
Oh now I know what choc. dream is. I sampled this at New Seasons health food store, it was amazing. Yumm 🙂 🙂 🙂
Estela @ Weekly Bite says
A spoonful of Chocolate Dreams does make the perfect dessert!
So glad the review course went well 🙂
Lisa says
oooooh- dark choc dreams. i agree, i thought REESES the second i had it. i like mixing it w with mushed banana on toast or ww bread for a sammie for lunch.
mighty maple is my fav. of the flavors though, with cinna raisin swirl as a close second.
didnt care for heat is on- i prefer my pb savory and sweet not SPICY and making me wanna drink water! thas what hot sauce is for 😉
your meals look rediculously yummy- wanna cook for me sometime? 🙂
Lisa
Bronwyn says
That CHOCOLATE DREAMS looks amazing! I’ll be totally dreaming about that…. hmmmm. chocolate….hmmmm peanut butter….. hmmmm peanut butter AND chocolate.
ari says
omg lol did you guys eat that whole jar in two days?
Kath says
lol NO! Lauri brought it over nearly empty.
Heather @ Health, Happiness, and Hope says
Haha, that Camelback thing is too neat! Love it!!!
Mmmm… your saute looks amazing. I love how a simple saute can be just as good as (if not better than) a 5-star meal.
caronae says
I can be insatiable the day after a long run too! And I love baby bok choy. It’s really tasty sauteed with pumpkin butter, oddly enough. And DCD is totally PB, just amped up with a ton of sugar and chocolate. Definitely resses-like 🙂
Jessica @ The Process of Healing says
OIAJ in a DCD jar…I can only imagine how awesome that will be 🙂
I love bok choy and i’m always looking for new ways to prepare it, yours sounds great!
Congrats on the great run (jog?)
Stephanie says
Hi Kath – I was wondering which Camelpak you have? I’m purchasing one and one a small one and yours looks like the perfect size! So I was just curious which model you had.
Shannon (The Daily Balance) says
LOVE bok choy – used to be super intimidated by it, but it’s pretty easy! 😉
Kristin @ Iowa Girl Eats says
Ooo, that’s a cute little camel – all the other ones I’ve seen are so loooong – too long for my 5’2 self! Is that just Camelbak brand?
Meg @ Be Fit Be Full says
I am always an endless pit when I do long runs. I have never tried the dark chocolate dreams but it sounds and looks delightful!
Sarena (The Non-Dairy Queen) says
Working out for the fun of it feels so good! I am sure you will do well on your exam. You seem passionate about what you are doing and that goes a long way. Sleep well!
Ameena says
I LOVE Dark Chocolate Dreams…it is worth every penny of its $6.99 price!
caryn says
Hi! This isn’t really about your post, but I thought it might interest you. I came across this blog of a teacher who is eating cafeteria food every day in an effort to draw attention to the importance of good nourishment for kids (That’s what I got out of it, anyway). It reminded me of your time in the schools and how you had to find food that tastes good, is easy to prepare, not too expensive, healthy, etc. and how DIFFICULT that is! Here’s the link: http://fedupwithschoollunch.blogspot.com/
Kath says
Thanks. Lots of people have already posted that though 🙂
Jen says
Hey Kath-
I would love to know what you think of the camelbak–I need a lot of water/hydration when I run and the little water bottle I run with supplemented with the drinking fountain is not quite enough! Did it move around a lot or slosh on your back? Did it feel heavy? A penny for your thoughts!
Heather (Heather's Dish) says
i’ve GOT to find that peanut butter! it looks like it’s going to melt in my mouth… 🙂 glad the camelback finally got there and works well!
Jessie says
Looks like you decided to go with the Camelbak 🙂 I’m interested to know what you think about it – I’ve been hesitant because I like my hand bottle, but it doesn’t hold much.
I’m jealous you get to take the RD exam first 😉 1.5 years to go!
Sarah @ THE FOODIE DIARIES says
i go through pb & co jars so much quicker than any of my standard nut butters. matt is right. it’s not peanut butter. and you’re right. it is reese’s. try white choc wonderful! its even more so!
Maggie @ Fit.Fun.Food says
Great dinner! I gotta try that!
lynn (The Actors Diet) says
careful with OIAJ with that brand! it’s the one that melted and warped when i put hot oats in it!
Kath says
Oh yikes, thanks for the warning!
Jenna says
Dcd is amazingggg
Amanda says
Hi,
Found your blog and been reading for a couple months. That dark chocolate dreams peanut butter looks amazing and I was wondering where you got it.
Jenn (www. j3nn.net ) says
That Camelbak is brilliant! I have to get one. 😀
Dinner look yumalicious! I don’t know how you don’t have your own bread and buttah along with Matt! That’s my favorite part of any meal LOL.
Jenn
Chris says
They carry this peanut butter at our Wal-Mart for $3 and something 🙂
BroccoliHut says
I agree with Matt on the Dark Chocolate Dreams–when I’m craving PB, the chocolate-infused kind just doesn’t cut it. Nonetheless, I still manage to find plenty of uses for the DCD:)
Freya @ Brit Chick Runs says
That camelback looks really good- I’m wanting to invest in one of them cos I can’t carry water when I run – not good when you do 16miles+!!
Love that dinner 🙂
Kath says
Here’s the Camelbak I got. It’s for women + running. It’s TOTALLY AWESOME. You can’t feel it at all and I don’t think it slows me down at all. It holds 1.5 liters of water and has a pouch to store stuff too. There is a slight sloshing noise, but that’s not noticeable after 30 seconds.

Carolyn @ lovinlosing says
I bought one!! I thought $32 was a great price! I got overnight shipping for $3.99 by doing their Amazon Prime trial.
Hannah says
Good luck getting the work done! And I completely agree that that chocolate peanut butter makes a great dessert. And breakfast. And snack. And anything, really 😛
christie @ honoring health says
Glad you are feeling good about taking the exam in a couple of months! I’m sure you are going to rock it!!!
Lisa (made from scratch) says
What kind of Garmin do you use? Is it a heart monitor, or something else?
Kath says
305 Forerunner – with a video about them here:

Nicole, RD says
Yum! That bok choy looks perfect!
The rest of your internship will fly by, and the RD exam…no biggie, promise!
Chelsea (Chelsea's Chew and Run Fun) says
I love your simple and delicious prep of that bok choy. I never know what to do with the stuff. Thank you for the ideas! Running runplugged with friends is such a great way to unwind and let go of number worries. Glad you had fun!
Veggielady4life says
I have Peanut Butter & Co. Dark Chocolate Dreams in my pantry right now… my husband loves a spoonful every now and then too!!! Looking forward to seeing what you’ve got for lunch today!
Sarah (Running to Slow Things Down) says
I have got to try that peanut butter if it taste like a reeses. Yum! Sounds dessert-like. 😀
You’re going to do fabulously on the RD exam. It sounds like you’re getting loads of experience with the internship, which is going to really help. 😀
Great FUN run too! 😀
Katie says
I get in soooo much trouble when I eat Dark Chocolate Dreams with a spoon. I have to get a spoonful, put it away and then go enjoy my treat. Not going back for more takes serious willpower.
Tracy says
You’ve inspired me to try sardines, but hate to waste the leftovers! How do you think they would be after freezing the 2nd half of the can?
Kath says
I’ve never tried freezing. I think they’d probably be OK though.
Lauren @ Eater not a runner says
Does it feel bulky to run with the Camelpak?
Kath says
Not at all.
Dawn Hutchins says
I have bok choy envy. I tried making it a while ago and it came out good but yours looks really good!
Cynthia (It All Changes) says
I love the camel back. I’ll need to buy one before my half marathon training this summer in the heat.
bein' good to me says
Hi Kath,
I’m a total beginner when it comes to running (just started training for my first half last week!) and was wondering…if you use your Camelbak for the homemade sports drink, do you carry a water bottle with you or do you just drink the sports drink on your run? Like I said, I’m a total beginner but wanted to know your thoughts. Thanks!
-Lisa
Kath says
Lisa,
You generally don’t need any extra fuel on runs less than 90 minutes (about 10 miles for me) so I will only put water in for short runs and the fuel for the long ones and will dilute it so that I’m getting enough liquid per calorie to last the whole run.
Carolyn @ lovinlosing says
Thanks for the link to the Camelbak. That’s not a bad price!
christina cadden says
That pasta looks great!
