We invited my college roommate, Alaa’, for breakfast this morning (I’ve been trying to get together with her all week and this was my only available time before she goes back to Florida!) On the menu? Pancakes!!!
Run
Since Alaa’ was coming right at 10, we had motivation to get our run done first thing. I came down around 6:30 and played on my computer with hot tea until 7:45 when I got the husband up and we set out. But first I had 2 oz of banana…
We did 5.1 miles around the neighborhood (If you don’t know about it, Google Pedometer is great for tracking runs!) I was a little stiff. This summer we were running twice a week and I got smoother and faster, but since it’s freezing and dark at 5 a.m. we’ve had to keep runs to Sundays only and I think I’ve slipped a little. Now that my class schedule starts later than work, hopefully we can run mid-week again, or at least on the warm days!! 400 kcal burned.
Breakfast
While I was packing and getting ready, the husband made the whole wheat buttermilk pancakes. He also set the dining room table all pretty with candles and little bowls for our toppings 🙂 I topped my pancake with banana slices, peanut butter, a bit of walnuts, and about 1/2 a tbsp of maple syrup.
Also had some egg nog tea:
Total kcal: 375 (plus 50 more for pre-run banana)
Off to pack and get ready for my trip!!

Have a great trip! Just wondering, what's your recipe for whole wheat buttermilk pancakes, or what brand/mix did you use? They look deliciously nutritious!

Hey Kath, have you ever made eggplant parmesean? I don't know that I've ever had it before, but it would be very similar to your spag squash pasta. I've been meaning to try Roni's zucchinni lasagna at some point as well…but I was just wondering if you had a good recipe or if you could try one out on the blog some night! I saw one at trader joe's today that I almost considered trying.
I also think it's really great and interesting how many people, even in just the past few weeks, have seemed to have suddenly gotten into nutrition, and even the act of blogging! I'm seeing new food blogs popping up everywhere now. I have to admit, after reading yours I even considered doing one (though I don't think i'd have the time)! I too have always been interested in nutrition…I'm only 19 but a competitive athlete all my life…so that and Sports Psych and Excercise Science…and somehow wrapping them all together is definetely something I want to make into a career! Thanks again for all the time you put into your blog!

I can't believe all that for only 375 calories. It's really amazing the amount of good food you can eat if you make your own – a plate like that at a brunch place near me would be probably twice as many calories (plus lots of sugar and fat!). That looks great; I love mixing banana and banana chunks into whole wheat pancake batter.

Your pictures are always so lovely. Thanks for the google pedometer, I've been attempting to calculate using blocks per mile (I'm lucky I live in a grid city) but it's not all that accurate.
