All afternoon I was excited to come home and veg and eat comfort food and have a cozy winter night. So I’m going to WHIZ through this so I can go do just that!
Snax at work: apple + brazil nutz.
I have been SO THIRSTY all day. serious have drank like 7 of my water bottles. Not sure if it’s the weekend alcohol, salty German food or my illness. So strange. Still can’t get enough water after dinner.
I’ve been craving good old fashioned spaghetti for a week now! I got a few Ragu coupons at BlogHer this summer and picked up two jars this past week. We usually make our own spaghetti sauce, but by golly, sometimes the jarred stuff is just as good. This has a very simple ingredient list. Although I could do without the soybean oil. Not that there is anything wrong with soy bean oil other than soy’s abundance in our society and that I don’t really need the added calorie density in my tomato sauce. But overall, great sauce!
We amped it up with sautéed cremini mushrooms, peppers and garlic along with a splash of sherry and served it over whole wheat angel hair
Hit. The. Spot. I’ve been eating too fast lately!
Cute fella has helped me so much in the kitchen now that I’m super busy again <3
Dessert tonight was nibbles of granola and bread while I packed my lunch! I gotta be more careful with my bites – they do add up!

This might sound weird but I like knowing that you use Ragu… i always feel bad for using it lol. It is pretty good and the price is awesome!

I love how much Matt helps you in the kitchen. My hubby would be glad to help, but he is bad a cooking everything. 🙂

I dont think I’ve ever had brazil nut straight
Stacey says
I concur on the soybean oil topic 😀 Aww, how nice of Matt to help you out! Sometimes a good ol’ spaghetti night is just what the doctor orders 😉
Anna @ Newlywed, Newly Veg says
There are definitely some nights where good old fashioned spaghetti just can’t be beat! Enjoy your R&R!!

Hope you are feeling 100% soon! Great looking pasta 🙂

I love angel hair, second only to linguine. Soybean oil squicks me but only because of what you’ve said–and given that you don’t eat processed foods regularly, I think you’re okay for a bit of Ragu here and there.
Heather @ Health, Happiness, and Hope says
Love the simple pasta! Perfect for a quick and healthy dinner!

Enjoy your night of relaxation, Kath!! 😀

Cynthia (It All Changes) says
I love to jazz up regular bottled sauce too. Sometimes its just easier than making the sauce too.
Mama Pea says
I spy bread with Matt’s plate. Do you think there will ever come a day when you guys are GH’d out? I don’t foresee it, but I also don’t work with it all day long. Like right now, at the end of a playdate…kind of sick of toddlers.
Kath says
Never! There are so many flavors of bread to enjoy.
PS. Have with Nate!
Jessica @ The Process of Healing says
Spaghetti is one of my most favorite comfort foods. Love it! And adding veggies to canned/jarred sauce is so easy and so good, if you have a good quality sauce!
Jenn @ Livewellfit says
You two are going to be such amazing bakery owners! My fiance have a dream of one day working together in a business.
I have a craving for spaghetti myself. We had spaghetti squash with sauce a few weeks ago but that didn’t do it for me. 🙂 Sometimes you gotta have the real stuff!
Ameena says
I love Ragu but not the soybean oil…I don’t understand why they can’t switch it to something else when so many people, myself included, can’t eat soy! I remember how delicious it is though!
Stacey@http://stacey-healthylife.blogspot.com/ says
Where did you find whole wheat angel hair. Angel hair is my favorite and haven’t been able to find angel hair.

Kath, I’m going to WIC tomorrow for my weekly community internship and I’m SO excited to go after reading about your experience! These community sessions are just so eye-opening.
Feel better! *sending healthy vibes your way*

Mmm, I ALMOST made spaghetti just like this tonight! Kath, you have alot of self control with your portions, I’m really amazed…what is your inspiration beyond maintaining your weight or is it just that?
Kath says
I’m not sure I understand the question!?
lynn (The Actors Diet) says
ragu reminds me childhood.

Hey Kath! did that pasta fill you up? i find I always have to have a salad on the side of dinner every night to fill me up! But sometimes all of my veggie servings (like 5-9) can make me feel bloated! do you have any suggestions to reduce the bloat feeling besides drinking water (which I do)? Thank you!
Mel
Kath says
It was pretty filling. I like to have a salad too though. My snack was pretty big so I wasn’t super hungry.
No suggestions for veggie bloat. My stomach is always bigger at night.
Lauren @ eater not a runner says
Sometimes I think nothing is better on a cold winter night than pasta!

Love the way you spruced up an old standby! Enjoy your evening!

I love sauce + mushrooms. Yum.
Jenn (www.j3nn.net) says
I love Ragu, my nanny used to feed it to me with ravioli every Sunday. LOL Too salty for me now though. 🙁
I try to avoid soy bean oil because it’s highly processed and not good at high temps. I still have it now and then though. Wish it wasn’t so overused!
Jenn
Mae @ OhhMay says
That ragu actually looks really delicious. My favorite pasta is angel hair and as much as my grandmother drills me in pasta+sauce pairings, I’ll always go back to whole wheat angel hair.
It’s so comforting!
Blaine says
Mmmm, the nostalgia of Ragu! I’ve gotten to where I love making quinoa pasta, has anyone else tried that? It’s SO freaking good and a nice change from the wheat variety.
As a super nerdy conservation biologist, I also feel compelled to throw in that not only is soybean oil overabundant in our society and not the healthiest of oils, it is a HUGE contributor to rainforest and ecosystem decimation! Many of our primate relatives along with countless other species will likely be extinct in our lifetime due (in large part) to unsustainable clearing of land for cheap soybeans.
Ok then, if you’re rolling your eyes about the animals, there are all the plant-derived medicines and remedies that will be undiscovered before they are plowed over by a dozer. And what about amazing FOOD like cacao beans? come on people!! No more Cacao Bliss?? Tragedy 😉
Kath says
Sadness 🙁

def the salty food- i’ve been drinking like 14 cups of water a day! i think it’s my high-sodium korean diet ><
Whitney says
I have been itching for some pasta lately. The meal looks great I may have to make some pasta at home this week.
Heather (Heather's Dish) says
what a great way to amp the sauce! i’ll have to try that next time…i used to add ground meat, but mushrooms would be a great addition instead!
Bridget says
Aren’t the simplest dinners sometimes the best? Every time I make regular spaghetti and sauce, my hubby is just as happy as when I try something complicated and time-consuming!
LOVES KERF!! says
I see that “RAG-ewww” sauce has indeed made some improvements in the sugar/High Fructose areas since I was kid. But still…IMHO it’s the polyester of jarred pasta sauces, So much better stuff out there. Try Paul Newman’s Sockeroonie, Or Emeril’s. I hear Giada has an excellent one. Paul Sorvino. Dom Pomodomo….
Andrea says
Thanks, that coupon code gave me $15 off! I got the big bag of chia seeds for about $4!

I agree. Sometimes you just can’t make it taste better than how it comes!

This post reminds me I need to bring Brazil nuts back into my life! I absolutely love them and think they are so under rated. They are so meaty and hearty. One of my favorite snacks are fruit and nut delight Kind bars because they incorporate them with my other favorites: walnuts and almonds!
Lele says
I had a pasta moment tonight too. With cashew cream sauce (!). You’d love it, I think!
Gillian says
I just wanted to say how much I LOVE your blog!! I came across it a few weeks ago and have been reading it religiously ever since! I didn’t think anyone loved running and oats as much as I do (I can only think of a handful of times i haven’t had them in the last few years!). But tomorrow will be my first time having it with pumpkin and I can hardly wait! Thanks for this 🙂
Kath says

I must admit. I love me some Ragu, and I don’t even make the spaghetti to go with it, so I’m SO glad to hear my internet foodie approves! When I find myself craving pizza/pasta, what I’m usually craving is the tomato sauce, so I’ve taken to eating it red sauce alone–cold, which is how I like it best. And here in NYC, Ragu is what fits my budget!
Have a fabulous Tuesday Ms. Kath! 🙂
Freya @ foodfitnessandfreya.wordpress.com says
How do you manage to make all your food look so elegant!? When I have pasta it’s just like a splodge on the plate haha!!

Enjoy your night! And I love how you make things look appealing that I’m not normally interested in – like Brazil nuts!

I admit to using jarred sauce as well. I use the Whole Foods fat free tomato sauce. No sugar, no oil and it is really tasty. Once you move to C-ville, you will have a Whole Foods so you should give it a try!
Kath says
Can’t. Wait.

Hope you had a nice, relaxing evening! Dinner looked fantastic…love mushrooms and sherry in pasta sauce! Mmm mmm!
Have a great day!

I’m strictly a Newman’s Own pasta sauce kind of girl, but when it comes to spaghetti, I’d eat anything! I’ve been craving carbs lately and your spaghetti looks to die for! I love how you add things to everything you make. Just the other day I was making some soup in the crock pot and I remembered some soup you had made the other day, adding garam masala to it. I added that and a can of diced tomatoes and it was very yummy!

Hey Kath, try the Organic Ragu Garden Veggie variety, it is yummy! It has veggies in it besides the tomato sauce, and is organic to boot. I don’t normally buy pasta sauce, the Ragu Organic Veggie one is the only one I like and buy at the store.
Hope you are feeling better from your cold!
