This is the time of year I start quoting Frog & Toad! We had a beaaaauuuutttiful Sunday with temps in the high 60s that made the whole weekend simply a blast! Matt is away in New Orleans for the Great Harvest Convention (and some Uncle Brain and Ava hanging out!) so Mazen and I had a blast stomping around town.
On Friday night we went to ACAC for a Fitness Friday Happy Hour. He had dinner in Kids Zone with his friends, and I went to an hour-long plyo class and then dove into this green goddess dip and veggies for dinner.
Back at home we snuggled into bed.

Saturday morning snuggles!
Followed by breakfast – yogurt with Super Toppers and almond butter and coffee
I took M swimming at ACAC in the warm pool. It’s his new favorite activity!
I had a smoothie after for lunch from ACAC (peanut butter, banana, spinach, milk)
And then we made hummus!! Who wants to lick the bowl!?
The patio is finished!! Well except for the whole grass-growing process….
I spent some of the weekend moving furniture down from the top deck. Working on cleaning the cushions and arrangements…
Thinking about this one for now…
We are planning to plant tons of greens and herbs in the beds along the back! It will be so nice to be able to access them without going through wet grass.
Dinner scramble – veggies, spinach, cheese. Easy girl dinner!
Sunday breakfast was warm just like the weather! Oatmeal with almond butter and a cappuccino.
I spent all of Sunday outside – walking, running, lounging on the patio. We’re going to get a picnic table for the top deck, so I moved the benches up.
And that became the setting for an outdoor dinner post for Blue Apron! You’ll get to see all the details soon : )
I spent 4 hours cooking for a few guests that evening. It was insane but very rewarding!
My friend brought Sugar Shack donuts from Richmond for dessert – delicious ending!
Sippin’ a smoothie right now for breakfast! Banana, PB, Vega coconut almond, milk!

You can sub tofu for eggs. Use turmeric and nutritional yeast to give it a yellow color and depth of flavor.

What a good idea to use Blue Apron to host a dinner! I love cooking but sometimes the menu planning is #overwhelming that’s kind of like ordering out and laying it out before all the guests get there like you cooked, only a million times classier!!!!!! Nice!

i agree! totally a great way to make entertaining easier. i don’t use these meal services at all since i think it’s too expensive for just a normal family dinner, and i also enjoy just whipping dinners up with what’s on hand, but entertaining is really hard for me to plan! great idea, Kath!

Sometimes we can barely get 3 portions out of them, and sometimes we have plenty. We had 6 people and two 4-person dinners and it fed 4 women and 2 men (who each had 2 big plates) no problem.

I had a sitter help me out for a bit who took him to the park while I cooked the peak of the dinner but he was around for a lot of the prep. He does slow me down, but I tried to plan for that. It was a bit stressful at times!

I am SO jealous of all your raised beds and garden space!!! that’s what I want my garden to look like but can’t figure out how to get it there. Are you going to sod your backyard or seed it? I know you said before your backyard is sloped, did grading it for the patio help with that at all?

I think it’s about as real food as they come since it’s pea protein based, and I like that this one also has some bonuses like spirulina, kale, broccoli and things. I use it more for flavor than anything else since I add protein from milk and greens from spinach to almost all of my smoothies. I think of it kind of like a multivitamin boost!

Hi Kath! Follow-up smoothie question from the above. What are some mistakes beginners to smoothies can make (i.e. adding too many things, too high in calories, etc.) I’ve started drinking one for breakfast.. spinach, almond milk, chia seeds, ice, unsweetened apple sauce, and either a banana or frozen mango (sometimes swap the almond milk for coconut water and plain greek yogurt). Should I be adding protein powder (good to know about the vega you referenced above)?

I’d say just make sure you’re getting a carbs, protein and fat in there. And not too much sugar! You could replace the applesauce for the yogurt for more protein.
