While I was gone —–> the porch roof was raised!!!!!!!!!
It’s unbelievable gorgeous and I feel unbelievably lucky!! It makes the house feel huge.
Also very furtunate to try our new Great Harvest Coconut muffin this morning!
It’s more like cake than a muffin, but it is made from scratch with real food and that’s what matters most to me.
Served over a cup of Oikos with raw oats (love them raw), chia seeds, half a giant banana and Wild Squirrel Cocoa Nut, which has the drippiest texture ever.
Gingerbread Tea by Adagio. I was expecting it to be watery with too much spicy ginger (which I don’t like in tea) but instead it was creamy and vanillay. Loved it!

See that orange furball who we call “El Lion,” named so after having a fun time with the orange cat “El Tigre” at our other house?
HER name is PUMPKIN! Matt met the neighbors on Sunday.

How much, if any, whole wheat flour is in the coconut muffin? That might help make it more muffin-y and less cakey. The lack of whole wheat flour is my biggest complaint with most bakery baked goods. 100% refined flour just lacks the texture and body, not to mention nutritional value!

I was wondering if you could share the nutrition stats on the wild squirrel peanut butters. I checked their website but couldn’t find any. It’s very comparable to most other nut butters. I’ve never seen one (that isn’t some fat free thing) that isn’t about 180-210 per 2 tbsp.

Do you worry about the calories in your breakfasts? It seems like there are 400-700 calories in a GH muffin alone, so adding that to a bowl of yogurt, oats, and nut butter seems like a recipe for weight gain.

I don’t add the whole muffin – just maybe 1/4 and mostly top. This bowl was probably 450ish.

I was the one who commented yesterday about buying a bunch of Adagio. I was disappointed with the Gingerbread because I didn’t think it tasted as good as it smelled. It smelled like Christmas! And tasted like vanilla-flavored black tea. I’ll enjoy my bag but probably won’t buy another full bag!

That looks like the most delicious breakfast! I wish I got that creative with mine. And I don’t think it necessarily matters the exact caloric amount! As long as you know it’s not overboard, and as long as the calories are coming from healthful real food, I don’t think you have to obsess over how many calories are in it. My goal is to become creative like this with breakfast! Thanks for the inspiration!

Hi Kath, got a question for you. I’m curious about the sugar content of your breakfast. Do you estimate about how many grams are in your morning bowls of oatmeal? Or does it not really matter because you balance it out through the rest of the day?

This muffin sure is controversial this morning!
I don’t worry about the sugar content of my breakfasts because I generally use ingredients that are higher in sugar as small garnishes and not the foundation. Normally I might have one thing that’s considered simple sugar – like a tsp of jam or some Biscoff that is higher in sugar or a granola that might have a little – but nothing that’s too concentrated is the base of breakfast (which is normally a combo of whole grains, dairy and fruit). Today’s white cakey muffin was a treat to try our newest flavor and not something I’d eat on a regular basis.

How fun to have your new porch roof up! Owning your own house is so cool cuz you get to do whatever the heck you want to it. I think I may have to convince the husband that we need a new porch.
