Yesterday was kind of a blah day. Blah weather. Nothing really fun scheduled and a bunch of work to catch up on after the Easter festivities, zoo trip day, etc.
But I did start my day off on the right foot! Two feet, actually, were jumping high in athletic conditioning (which I have learned is properly called “Plyo Max.”) I really, really hate getting up at 5:30am (Instructor Chris greeted me with a “Good job waking up this morning!” Ha!) but man the high after that class is so good that it’s worth it. Convince me of that next Wednesday night!
Back at home I made this recipe for a whipped raspberry overnight oats for a freelance project I’m working on. Loved the texture!
It was sort of like overnight oats meets dough boy smoothie.

Mazen and I had grilled cheeses for lunch – mine was with ham and a big salad with Whole Foods mango dressing, colorful carrots and avocado. His was with just cheese and an apple with PB on the side.
Afternoon play time together! M loves to get down with his trains and study the way the move.
Dinner last night was pulled out of a hat. We’ve been riding the leftover train since Easter and just stocked up on a few staples to tide us through the week. We have mixed greens but not much else! I found a bag of edamame in the freezer, which we had as an appetizer. Just drizzled in some soy sauce with a pinch of salt.
I found some shrimp in the freezer too, which we sauteed with jerk seasoning and served over salads with mango dressing and avocado.

Trader Joe’s has a great white balsamic that I love in the spring and summer. It’s not as heavy as regular balsamic and with a little olive oil and some freezed dried basil or cliantro, salt and pepper, it’s a perfect dressing!

My favorite dressing is one I assemble right on top of my salads for work. Half an avocado, spoonful of nutritional yeast, salt, pepper, and 2 TBS of balsamic vinegar. I like my salad cut really small, so I just start right over my “dressing” and by then tme I’m done chopping I have a nice creamy balsamic over everything. So delicious.

Mayo would be traditional, but I like a version that uses greek yogurt instead. Lemon basil vinaigrette
2 1/2 tablespoons fresh lemon juice
2 tablespoons olive oil (preferably extra-virgin)
2 garlic cloves, crushed
1/2 teaspoon grated lemon peel
3 tablespoons thinly sliced fresh basil or 3 teaspoons dried
2 teaspoons drained capers
Wisk first 4 ingredients together, then stir in basil and capers.
Great on salad greens, cold pasta salads (with some fresh grated parmesan!), and fish.
