Hey there gorgeous
The Mix:
- 1/3 cup rolled oats, 1/3 cup milk, 1/3 cup water
- 1/2 tbsp chia seeds
- 1/4 cup pumpkin, stirred in at end
- Cinnamon + vanilla + pinch salt
- Pumpkin butter
- Maranatha Almond Butter
- Toasted pecans
- Crunchy Coconut Granola
Does it look like my Pumpkin Spice + Peppermint Creme coffee is laughing hysterically at me!?
In preparation of my first week of full-time work (3 days of internship orientation and my first 2 days at Salisbury-Rowan Schools) I’ve got a kitchen assembly line in the works. Beans simmering…
eggs hard-boiling…
and hummus whirling in the Cuisinart.
I gotta practice what I preach, and the single most important key to eating healthy while juggling a busy schedule is planning ahead and prepping on the weekends.
Going running with Emily in a bit!
Jocelyn says
Hey Kath! Great job planning ahead..you will be fine this week 🙂
Jessica @ How Sweet It Is says
Planning ahead is so important!! It’s the only way we get thru the weeks in my house. 🙂
Jenn (www. j3nn.net ) says
lol, your coffee is happy to see you! 😀
I agree, planning ahead is vital to balancing a healthy lifestyle. It’s too easy to get sidetracked by last minute hunger.
Jenn
Estela @ Weekly Bite says
I agree! It’s about planning ahead!
Have a good run! I went running in the blitering cold yesterday… wasn’t fun, but glad I got it done 🙂
Food Makes Fun Fuel says
Hope it warms up for your run!
Leo @ Cupcakes In Paris says
Totally agree! It’s all about planning!
I’m currently cooking 10 chicken breasts in my crockpot in preparation for the week. They will be used in sandwiches and salads for our lunches. And will taste so much better than the usual deli meat.
Good luck for your busy week!
Léo
Anna @ Newlywed, Newly Veg says
Good work planning ahead– that’s definitely key to eating healthy during the week for me! Looks like you and your oats had a sweet, sweet reunion 🙂
Have a great Sunday!

I’m spending today planning/cooking too… its key for a busy schedule!
Cait (Cait's Plate) says
I agree! I’m actually hard boiling eggs for the week as we speak! 😀 Great minds think alike 😉
It’s freezing here too (not 19 though!) and I’m planning a run – I’ll be sure to think of you and send you warm thoughts!
PS – How do the pumpkin spice and peppermint creme flavors taste together? I can’t picture it…
Kath says
Amazing. A minty hint from the peppermint and warmth and spice from the PS.
Heather @ The Joyful Kitchen says
planning ahead does make a HUGE difference when you’re crazy busy! i know that’s what me and the husband are going to be doing all day today since the first week back from vacay is always insane 🙂
Gina @ Gina J's Healthy Way says
I want to thank you for turning me on to your oatmeal, peanut butter, crunch breakfasts. That is my new favorite now. Thanks again.

I wish it was still breakfast time over here….your oatmeal looks so good!
I have never had much luck with homemade hummus. Do you have any good recipes to share?
Freya says
Wow that oatmeal looks good! It must have been worth the wait! You’ve certainly inspired me with my oatmeal now 😀
Note to self though: must try pumpkin butter…!

I’m looking forward to your plan ahead tips to make my days easier.
Heather @ Health, Happiness, and Hope says
Perfect welcome home breakfast Kath! And, as usual, love how prepared you are. I get the “rolled eyes” from my family for being so prepared, but they’re usually the ones suffering when they get hungry and don’t have the time or means of getting a healthy meal/snack. 😉
Eeek, bundle up for that run!
Sarena (The Non-Dairy Queen) says
I was just talking with someone about that the other day! The best way to eat healthy is ABSOLUTELY planning. It totally eliminates the unhealthy snacking and drive thru eats! Glad you made it home safely…good luck with your week!
hemp jogger says
LOVE that coffee shot!
Christina says
Ooh it’s gonna be a cold run. Hope it’s a good one!

Planning ahead never fails me! Is it weird that I’m kind of jealous of your cold run? I love running in cold weather!
Lauren @ eater not a runner says
Oats look delicious! Good work on planning ahead, that is always the hardest thing for me :-/
Kathleen says
Cooking on weekends is the only way I get through busy weeks. Risotto and soups are my favorite things to make in bulk because you can just divide them into containers and take them to work for lunch.
Ameena says
I agree that cooking on weekends is the solution to workweek lunches and dinners!
Gracie says
How you’re going to run in 19 degree weather is completely beyond me! Good for you, girl. What do you wear to stay warm?
Kati @ Living Well says
Doesn’t it feel great AFTER you’re done to have food prepped and ready!?
Sarah (Running to Slow Things Down) says
Planning ahead is *key*!!! It prevents all that mad rushing around during the week or worse—going hungry or eating on the fly.
19 seems cooold for NC!
The Voracious Vegan says
Brrrr! Enjoy your run. I love to excercise outside when it is cold, though. But I’m not sure about THAT cold. Here in Saudi it is freezing when it gets below 60.
Your eats look fantastic, what a combination of delicious flavors in your breakfast oats. It sure made your coffee happy!
Amelia says
Good job planning ahead with your meals! That is something I REALLY need to work on in 2010. 🙂
Marisa (Loser for Life) says
Those were on my list of “make aheads”, too today!
Love the coffee 🙂

Planning ahead is the only way I can manage to cook good meals during the week. Otherwise I get lazy and things begin to fall apart.
That oatmeal looks great!
Christine says
Planning ahead works wonders in our house too. We both work full time and have two kids (11 and 13) with busy schedules too. I’m proud of the fact we don’t eat out or eat fast food very often. It will be fun to see how you plan ahead and get more tips along the way!
Erin says
Good job on prepping ahead.
<—-also simmering beans as we speak
GL with your work week Kath!

Must be nice to be back home. I also have to get back into the swing of things, prepping my meals in advance, etc. Have a good week!!

Stef says
that coffee is definitely laughing at you! you really have a full kitchen going today, good luck with all the prep!
Bama says
The coffee IS laughing. How cool! Thank you for the oatmeal posts. I finally figured out why I couldn’t stand oatmeal and it was all about consistency. If I put something crunchy in it, I LOVE IT. This morning was a creation of steel cut with water/milk, flaxseed, almond butter and chia-walnut-cranberry granola. Because I’m a diabetic, I added a side of scrambled 1egg+1white for extra protein.
I’ve been eating this about 4xs a week for 3 weeks and my blood sugar levels are showing improvement! THANK YOU!!!
Emily says
Good luck with the start of your internship, Kath! Way to be prepared by prepping meals ahead of time, too. Can’t wait to hear how everything goes!
Gelareh @ Orange Truffle says

The minute I read this post title, the only thing I could think were those song lyrics..”reunited and it feels so goooood!” haha
And I’m all for planning ahead. In fact, I’m the only one in my family who has learned to do it, and when we get busy, guess who is the only person who is NOT stressed?? ME 🙂
Deirdre says
Great job on the planning! So glad you can go back to your normal eating patterns. I know you missed them!
Nicole says
God, that oatmeal hurts me! Love the look of it. Hubs and I went out for breakfast this morning and I got egg whites and some extras, but that oatmeal could have beat it. Perhaps for dinner… 🙂
LindsayRuns says
my planning ahead is happening today too…well, after some lazy day cuddling 🙂 Breakfast looks great!
