9 hours of sleep last night!
Sadly I still feel like I’m in a funk! Maybe it’s 2 days off of exercise. Or maybe it’s hormones. Always blame the hormones! (And no, not those hormones – just ones in general!)
I made some overnight oats to have for breakfast since I have to be at work early. Despite being really hungry upon getting up, this bowl left me uncomfortably full!!
The Mix
Last Night
- 1 container Oikos
- 1/3 cup oats
- 1/3 cup milk
- 1 tsp chia seeds
- 1/2 cup pumpkin
- Pinch salt
- Sprinkle cinnamon
This AM
- A mix of heated cacao bliss and vanilla PB with a splash of milk. It didn’t turn out like Ashley‘s 🙁 Ash, what’s your secret!?
- Some homemade pumpkin apple butter Matt’s hairdresser gave us!
- Galaxy Granola
I heated up the oat mixture too – I think I prefer overnight oats cold though? I have never liked warm yogurt and that’s what it was like. I prefer to just take the chill off with 30 seconds instead of making them warm.
Booga wooga.
I think that’s my left foot in there!! Hopefully a sign of good luck and not a bad omen!

I tried to buy canned pumpkin in my grocery a couple of weeks ago and couldn’t find it! They were out!! Do you get yours at a regular grocery or a natural store? I didn’t think it was a seasonal item… but maybe that’s the case. BTW… as always … your oats look delicious!

I made my first batch of overnight oats last night the right way but have yet to dive in! I’d done it with steel cut oats before where you cook them for half the time and then leave them in the fridge overnight, but I’m looking forward to trying these in a little bit!

Kath, I have to thank you! I once was one who skimped on breakfast and sleep, but now, reading your posts in the morning gives me an appetite for — you guessed it! — OATS! Now I pretty much cannot function without them. If my stomach isn’t ready for breakfast when I wake up, I pack it in a snack bowl tupperware to eat at the office!

i just can’t seem to get into the overnight oats thing…i just don’t like cold oatmeal, but don’t like warm yogurt either. i guess that means i’ll just have to stick to your regular fabulous hot oats recipes 🙂

Must have been a belly-buster oat day because mine left me feeling over stuffed as well.
You had a long run over the weekend and maybe your body is in recovery mode. It’s just asking for a few days break. Bet you feel terrific tomorrow.
I read that taking your heart rate when you first wake up in the AM to find out if it is elevated (as long as you know what your normal resting rate is) is a indicator of over training or maybe just a call out for a day or so extra rest.

Overnight oats have yet to grow on me! I wonder if adding pumpkin to plump up the volume would help? I also despise warm yogurt – yogurt should be ice cold IMO!

Sometimes too much sleep can be a bad thing! I always feel my best at 7-8 hours.

Hi Kath, I’ve been reading your blog for some time now and love it! Keep up the good work! I was wondering what your take is when it comes to portion sizes and control. I asked Emily this same question. Do you feel you can eat more since what you are eating is very healthy?!
P.S.- I ran my first half marathon in December at Thunder Road! You are going to love the experience!! The race goes by so fast because you get so caught up in it! The training is definitely worth it! 🙂

I do think you get to eat bigger volumes when you eat healthier foods. I’d much rather have a big salad than a small slice of cheesecake. So yes, volume wise I do think I eat a lot!

Hope that left foot coffee has helped you to feel a bit more peppy. Taking time off of exercise always leaves me feeling a bit more lethargic. I think this time of year contributes to a lot of people feeling funky. The transition out of Winter into Spring can be rough.
Those overnight oats look scrumptious, especially with that delicious addition of pumpkin apple butter. Yum!
