Happy pancake!
It feels a little bit like Christmas outside, but I have my eye on the prize this Sunday: 86* bring it on!
So a little green + red to honor our near-freezing temps.
I opened a new box of Kodiak cakes this morning. The last time I ordered a 3-pack, I got 2 of the original and 1 buttermilk. Well I do declare that the buttermilk is by far my favorite!!! The only difference is dried buttermilk vs. milk. Everything else is the same. But the flavor is just incredible!!!
Two cakes (= 1/2 cup mix) with seared strawberries, bananas, PB, cookie butter, chia seeds, coconut and granola.
And served with a steaming cup of tea!

Pretty pancakes! Love the green color of that plate as well!
Hope @ With A Side Of Hope says
Those pancakes look so yummy! I need to pick up a box of Kodiak cakes. They make your pancakes always look like they turn out perfectly! So jealous of your 80 degrees! 🙂
Caroline @ After Dinner Dance says
I’m currently eating yogurt and granola and now regret not having pancakes…
mary @ minutespermile says
Haha. Me too.
Ashley @ My Food 'N' Fitness Diaries says
it’s rather “winter-ish” looking outside here today too… pancakes make the perfect cold weather breakfast! i had them this morning too!
Angela @ Eat Spin Run Repeat says
Well I do declare that your Kodiak cakes are looking gorgeous this morning! And they’re making me hungry…. again!
Claire @ Live and Love to Eat says
I love the oat version – I’ve yet to try the buttermilk! Are the nutrition stats similar?
KathEats says
Yup, as I said in the post, they are nearly identical. It’s just a flavor diff.
Laura @ Sprint 2 the Table says
It is COLD! They said parts of N. GA even dipped to the 20s! I wish I had pancakes rather than this protein shake right now…
HRCK the Herald says
These temperature swings are really bizarre. I don’t know how to dress for 30 degrees in April– I feel so drab in my dark colors but it’s too cold for spring things!
Roxanne says
You eat very interesting combinations. I would never have thought to add all that stuff to my pancakes or my oatmeal until I came upon your website! Everything looks so yummy, that now, plain ‘cakes with syrup is sooooooo boring! Yeah for KERF’s edible ideas!
KathEats says
I really believe the more texture and flavor variety in a meal, the more satisfying it is!
KhushbOo says
Pancakes are now definitely on the menu tomorrow!
The Mrs @ Success Along the Weigh says
We just had pumpkin pancakes last night! Sooo yummy!
Katie @ Talk Less, Say More says
I’m out of Kodiak cake mix and really need to stock back up. it’s SO good!

I am so looking forward to the warm weather! This cold weather is for the birds 🙂
If I were to get Kodiak cakes, I would probably order the buttermilk ones, because I love anything with butter.

Mm I had Kodiak pancakes too 🙂
So simple and delicious!

That breakfast looks delicious! Do you ever make pancakes from scratch or do you just stick to this mix?
KathEats says
This mix is so easy, delicious and real food-ish that it’s hard for me to get up the energy to make a batch from scratch, but I have before
Andrea says
I’m going to have to look for this mix next time I’m at a store near me that carries it… I feel like I just have to try it! 🙂
~Christy @ wonderofallthings says
Love, love, LOVE Kodiak! Would never have thought to sear the strawberries…nice touch 🙂 Enjoy your day!!
Susan H. @ The Food Allergy Chronicles says
Isn’t funny how as soon as one reads your first sentence, one automatically thinks ‘pancake’ ! Ah! the power of suggestion! Great suggestion on breakfast! lol Christmassy colours for a very summery feast…oh so yummy! We got some sunny action here in Southern Ontario…let us hope that wintery wind we have been experiencing has blown the coup!
Stephanie @ Legally Blinde says
Mmm, yum, your pancakes always look amazing. Now that I’ve I tried topping my pancakes with seared fruit + nut butter, and/or Greek yogurt, I don’t think I’ll ever go back to using plain syrup!
Cait's Plate says
Ooh I didn’t know they made a buttermilk version! Definitely going to be on the lookout for it now!

I’m so jealous, I wanted pancakes today and had all plans to make them but forgot I used the last of the maple syrup on oatmeal cookies 🙁 Do eat your pancakes with syrup or just with fruit?

It’s been pretty chilly here in Chicago this week (35 when I left this morning!) but it’s “supposed” to warm up this weekend. I’m not sure I believe it…
daphna says
Yum, I will have to try these! I was planning to make an Open Sky order today and I’m debating between the teas and the jams! What would you recommend? Thanks!!
KathEats says
Hard choice! I’d go with teas 🙂
Averie @ Averie Cooks says

I wish we had Kodiak here in England. Your breakfasts made with those always look so amazing!
Jeanelle @ Glocal Girl says
I think you can order them from Amazon! I live in Holland and have my parents ship em over from California but have researched getting them online as well.
Jen says
I love pancakes but I have to be careful how many or what toppings I use. I find they sit, well, like pancakes in my stomach the rest of the morning 😉
86*?! Hello summer!
Joanne says
I’ve STILL never tried Kodiak cakes. I’m going on a mission: Gotta buy Kodiac mix.
You make them look so good.
Jeanelle @ Glocal Girl says
I love the brightness of this breakfast.. and then I saw it was KODIAK cakes got even more excited about it.
They are by far my favorite breakfast to whip up, I even have my parents ship me boxes from the States (I live in Holland now). I will definitely have to try the buttermilk flavor… yum!
