Since Kath does eat real food, let’s see some of that in action!! Here’s what I’ve been eating and doing this week : )
Above ^^ A morning mixture of plain yogurt, oats, chia seeds, pear, raspberry jam, and Vanilla Chex.
And this morning I am enjoying two fried eggs, whole wheat toast with jam and some grapes.
I shared on Instagram the other night that I made a big massaged kale salad and am using it up throughout the week. Yesterday for lunch I had some topped with sliced steak (leftovers from dinner), and some freekeh (a grain) leftover from dinner. This lunch took all of five minutes to heat and eat! It’s all about what you have in your fridge people. The fridge is your best healthy living friend.
Our weather has been so up and down this week. Cold and rainy to warm and sunny. On our dreariest day I took Mazen to see the movie Sing! It was very cute, and I loved all the songs throughout. He is back in school as of Tuesday, and mama is happy to have some work time again 😉
We went to the gym together as well. My friend Gaby has a shirt that reads “Gym Hair. Don’t Care.” I need that! Mazen always jokes that while I exercise with the grown-ups, he works out with the kids in the jumpy play structure there. He told me how many push-ups he did while I was gone!
I have set an intention to drink a little less alcohol at home this month. (But can still partake in restaurants because deprivation does not work!) I’m going to talk more about that soon! But I made a mocktail to enjoy while making dinner and the tiniest splash of bitters made it taste legit.
I made this Blue Apron Cod in Papillote with Spinach and Freekeh for dinner. It left me satisfied and feeling good!
And because real life means pizza sometimes, I had Christian’s pizza with a big salad before seeing the movie La La Land (which I loved!)
Today I am feeling motivated and energized! I am visiting Mazen’s classroom to be their guest reader today, so I am looking forward to that : )

Your food always looks so good! I really want to watch Sing – don’t think it’s out where I live though.

What a great array of real food eats! I need to try adding bitters to mocktails. I saw La La Land over the holidays with my family and really enjoyed it too! The movie itself – the cinematography – was so beautiful too.

Your mocktail looks good. How did you make it?
KathEats says
It’s seltzer, ice, cherries and a splash of bitters.

Thanks! I like to sip something while I’m making dinner but then also like to enjoy a glass of wine with dinner as well. This can end up being more alcohol than my aging body can handle! 😉 Mocktails to the rescue!

Love it! I think sometimes we get caught up in that all or nothing trap. My hubby is dealing with that right now, he keeps telling himself no more sweets every so then the whole day he eats any sweet he can find because tomorrow he will be good. I keep telling him “that isn’t how I would coach my clients” but unfortunately you can’t RD your family most of the time. Love that you made yourself a little mocktail, I think alcohol definitely comes down to habit a lot of the time. That lets you keep the ritual up without actually have alcohol. I’m going to suggest that to some of my clients!

Everything looks delicious! You are so right about leftovers….. but the thing I think you never give yourself enough credit for is that you HAVE leftovers because your portions are always so on-point!! Seriously, you are my portion sensei! :)) I have a pretty healthy diet but apparently I enjoy eating as a 6’7″ man and I am a mere 5′ girl. Ha! Working on it for 2017 month, though!

Haha! Well you can’t be starving to have good portion control so make sure you’re eating enough at each meal and spaced out right so your appetite is medium going into the meal.

Yum! Thanks for sharing. I like how approachable and “normal” your meals are. People think that healthy eating means restrictive eating, and you’re a great example of how untrue that really is. : )

Kath,
Love your blog and totally am behind your making a living doing it. But the ads! I don’t know how much control you have but as I was looking at your first beautiful photo–Spiderman!! Red covering the whole photo .Campbells ad. Not for me 🙁 I tolerate the ads at the bottom of every photo, at the bottom of the page, this is just too much.
I am a committed follower, but encourage you curate your ad revenue a little more carefully.
Thanks for all the inspiration!
