Back to my roots – three meals!!
Breakfast // Overnight oats with milk, yogurt, chia, banana, and peanut butter.
And coffee. (Always one cup of coffee first!)
Lunch // Turkey wrap with cream cheese, pickle, greens, and jalapenos with half a green juice.
Snack // Wegmans trail mix!
The kind with M&M lookalikes. Because, duh!
Dinner // Panko salmon with brown basmati and cream cheese garlic zucchini
I learned this panko trick from Blue Apron eons ago: dust with salt and pepper, smooth on a thin layer of Dijon mustard, pat on panko (this was Pecan Panko from WF), and bake for 18 minutes at 375 degrees. Perfection!

I recorded my meals today! A smoothie, a pumpkin seed bar (homemade), sunflower butter rice cake, cottage cheese bowl, super bowl leftovers (not quite as unhealthy as it sounds), samoa brownie!

My lovely husband made us red Thai shrimp curry with cauliflower rice for dinner while I was at the gym. Unfortunately it was a little burned (smokey barbecue curry could be a thing?!) as he’s easily distracted 😀 but I really shouldn’t complain!

Just mustard so the Panko sticks! Because you break it you don’t have to worry so much about it falling off.
