Didn’t know what to make for breakfast….last night! Yes, some of the most fun breakfasts involve a little preplanning. Especially if they involve chia seeds.
Last night I mixed up 1/3 cup oats, 1/2 cup milk, and 2 tbsp chia seeds to set.
Note how they firmed up like gel. The best way to describe chia seeds is "fluffy." Seriously. They are like balls of fluff in your mouth. And very nutritious! And don’t have to be ground to absorb their goodness!
I requested a coupon code for chia seeds since I’ve been getting a lot of questions about them lately. If you want to try some out from Open Sky, use the coupon code CHIATASTIC for 18% off a one pound bag.
I didn’t know what I wanted to do with this chia pudding. Then suddenly I remembered how I want to be like Angela. And she makes gorgeous overflowing banana soft serve parfaits!
Banana soft serve step I. Today I added a blob of peanut butter – amazingness!!
After 4 minutes of whirling –
I layered in this order:
- Overnight oats
- Soft serve
- Blueberries
- Overnight oats
- Soft serve
- Blueberries
- Maple Walnut Granola
Totally delicious and super duper filling!! Sadly I did not make enough banana soft serve to make my glass overflow like Angela 🙁 But I did love the hidden "ice cream" in there.
I also decided I don’t really care for parfaits in wine glasses. While they are beautiful to photograph, eating isnt’ as fun. And my tongue doesn’t fit in there to lick the bottom!!!
The usual.
I dined on Karen’s porch in her green rocking chair. It was too cold to eat in the air conditioning! No distractions, just nature. So pleasant.

I know they’re nutritious, but for some reason the texture of chia seeds always freaks me out. I think I’m gradually getting used to them via nut butter.
Marilou @ Mostly Healthy says
I love rocking chairs 🙂 I wish I had a beautiful porch to rock myself while eating breakfast … you know since I’m 88 years old? 🙂
Jil @ Peace, Love & Munchies says

What a nice, peaceful morning and breakfast! What a way to begin the day 🙂
Cortney says
I hope it’s ok that I mention this, but I would HIGHLY suggest buying chia seeds in bulk from Whole Foods or Sprouts. Whole foods has them for $5.99 a pound, and I’ve seen Sprouts grocery stores selling them for $3.99 a pound. It’s far cheaper that way and if you bring your own container, no packaging waste. Double win 🙂
Kath says
No Whole Foods or Sprouts here in Charlotte! But lucky you if you found them for less 🙂
Cortney says
Ah, that stinks.
Jenny says
Looks like a peaceful area to have breakfast!
Marcia says
Seriously gonna have to try banana soft serve. Can’t believe I haven’t tried it yet.
tanya says
Your breakfast looks delicious!~
Karla says
I had the exact same breakfast! Except I just mashed up a banana instead of banana soft serve! I’m definitely giving banana soft serve a try ASAP!

Stacey@http://stacey-healthylife.blogspot.com/ says
The parfait looks great but I understand about needing a bowl. I would be afraid I would break the glass with my spoon. Have a good trip.
Michelle @ Turning Over a New Leaf says
I have yet to try chia. Or banana soft serve in my oats.
I love to eat stuff out of wine glasses! Or martini glasses! Or Irish coffee glasses! Though, I don’t lick the bottom, so I guess I don’t have to worry about that. 😉
Heather (Heather's Dish) says
aren’t the parfaits the best? i am in love with overnight oat banana soft serves in the morning in the summer…super filling and DELISH 🙂
Kelly says
I tried Angela’s parfait overnight oats/soft serve combo for the first time just the other day! Yup, just as good as it looks!

I love your green rocking chair! And maybe chia seeds are what’s missing from my OO – unfortunately I don’t think I’d be able to afford them, so would yogurt do the trick, too?

I grew up near Charlottesvile. Its an absolutely gorgeous little town. I’m jealous 🙂
Been wanting to try chia seeds myself and boy are they pricey (at least at Whole Foods), so thanks for the coupon code!
Anya @ Fitness & Sunshine says
Banana soft serve makes me all the more wanna get a food processor. 😉
Those photographs are beautiful, what amazing scenery.

I like the way you used the chia seeds. I have a pack that I got in my goodie bag at a recent race, called “Running Food” and was wondering how I should use it. Thanks Kath!

Yummy! I haven’t tried add PB to banana soft serve yet. That’s up next for me though!
Amber K says
The parfait is pretty, but I agree, not very fun to eat! I love Angela and all her blogs though, so it’s ok. =)
I just wish I could digest chia seeds (or flax seeds for that matter), but both totally kill me.
Sarah @ The Smart Kitchen says
Have fun in Charlottesville! I can’t wait to hear all about it 🙂
Heather @ Side of Sneakers says
Have fun in Charlottesville!! Love it there! 🙂
lynn (The Actors Diet) says
parfaits in wine glasses are so beautiful, but i agree – not as fun to eat – especially since you have to be so careful not to be so violent with spoon (i like to attack my breakfast)
AngelaOSG says
hehe you are too cute! Glad you enjoyed it….even if you couldn’t lick the bowl! 😉 Isn’t PB soft serve amazing? It was much better than I thought it would be.
Olivia R. says
I love playing around with flavors for banana soft serve!! I tried peanut butter chocolate, a blob of PB and a few teaspoons of cocoa powder, and a drizzle of agave. YUM!! Also throwing in a handful of mixed berries & coconut is yummy. I’m jealous of your breakfast!!
Amanda (The Nutritionist Reviews) says
Wow I had no idea to do that with chia seeds! I always just put them in a smoothie and ate it right away! Thanks for the good advice.
BTW I have three giveaways going on on my blog right now if you were interested!
Ashley@thehungryscholar says
That banana soft serve looks great!
Rooby says
Your parfait looks amazing! What brand of oatmeal do you use for your overnight oatmeal? Mine always comes out liek overcooked tapioca pudding. And i have tried different measurements. Currently, i am using an organic irish oatmeal… Any suggestions?
Kath says
Quaker Rolled Oats
Kori says
Your breakfast=AMAZING! I also enjoyed your pictures very much, especially the one with the feathery-type bush. I believe I have that same type at my lake house. 🙂 Have a great one, Kath!
Liz @ Tip Top Shape says
That parfait looks absolutely delicious! I’ve read about this banana soft-serve twice now and I think that means I have to try it now, haha. I did something similar on accident actually when I made my smoothie yesterday. The frozen fruit must not have broken down well so instead of a smoothie consistency it was like frozen yogurt. No complaints here! lol
jaclyn@todayslady says
OMG!!!! Its been awhile since I’ve had overnight oats!!! Love the addition of the extra chia seeds, I must try that! The display was beautiful too but so disappointing you couldn’t lick out the remains from the bottom 🙁
Sara says
i just tried chia seeds recently! they are so wonderful…such a small addition that can make a BIG difference to a meal!
pretty flowers btw! 🙂
Stacie @ Imperfectly Healthy says
Oh, the pb/banana soft serve in the food processor looks SO good! I seriously wish I wasn’t allergic to bananas! 🙁
Rose-Anne says
Ooh, I love the banana soft serve parfait! Yes! This one’s going on my list of things to make.
About the wine glasses: I’ve been thoroughly indoctrinated into the philosophy that wine glasses are for wine only. I would get a thorough scolding if my favorite wine expert caught me putting breakfast into a wine glass! 😉
leslie says
Is that flower an orange hydrangea (I have no idea how to spell that)? It is gorgeous!
Just got back from vacation and found my first jar of Nutzo! Can’t wait to break it open. I’ve gone from 139 to 121 in the last year and have not had my nut butters during my losing phase. I plan to add them back in soon and am so excited!
Sami says
Ange is brilliant! You definitely did her parfait recipe justice, too. The bloobs were a nice addition 🙂

I agree about the wine glass thing, thats why I mini parfait trifle bowl looking glasses at Walmart for only $1 each! They are great for serving some fun parfaits or ice cream to family members.
Chelsey says
Love the breakfast! Don’t we all want to be a little like Angela on the inside? I think yes.
Chelsea @ One Healthy Munchkin says
I hate eating out of glasses/mugs too. I way prefer a big, open bowl so that I can scoop up everything!
Hannah says
Peanut butter banana softserves are the BESTEST IN THE WORLD!!! Squee! And now I’m cranky because I’m at the library and my frozen banana and peanut butter are, clearly, at home…
Emilyeatsclean says
I have GOT to try this banana soft serve!! Holy YUM!!!!
Laura says
Wow I underestimated the possibilites with chia seeds. I use them in water when biking for hydration….this looks more like dessert than breakfast….fab!
Stephanie says
This is the first recipe of yours I’ve tried – YUM. I was skeptical about the overnight oats (am very sqeamish about milky things) but they were great – will definitely be trying more breakfasts! I have a lot of weight to lose, but want to do it the slow and healthy way – diets always provoke that deprivation cycle/rebound into really horrible foods. Your website is very inspiring to me – thanks for taking the time to post everything!
