BOO to rain 😥 Walking across campus was no fun and I just tracked mud on our white carpets. Thank goodness we have the best stain remover ever: Resolve High Traffic.
Run
I decided on a run this morning – luckily I beat the massive downpours that we’re having now! I did about 4.25 miles through our neighborhoods. I got drizzled on in the end, but it wasn’t bad.

YUM and FILLING lunch today!!!
I made a spin-off of my Bean Salad Melt from last week with today’s Bean and Vegetable Salad. Today’s mixture included grilled portabello mushrooms (from last night), a grilled yellow squash (also threw on the grill last night instead of eating it raw like I was planning), a carrot, a stalk of celery, 1 oz of avocado, and about 1/2 a cup of cooked beans (on their last leg!). I think that’s it?? Then for the dressing I mixed in 1.5 oz of plain yogurt (about 2 tbsp?), a tbsp capers, 1 heaping tsp of mustard and a tsp of dill.
Highlight bite with carrots, a mushroom, beans and a caper!
I also had a “pineapple orange,” so they called it in the grocery store. It was good – kind of sweeter than a normal orange.
And lastly, a homemade rye bagel (they are pretty small – maybe just a tad bigger than mini bagels?) with a Laughing Cow cheese –
All together. I was going to post at 12, but my computer battery died on me 🙁
Lunch was about 530 kcal, 19 grams fiber, and 24 grams protein.
I’m off to study and make a cup of tea and a snack!! I’m all decked out in fleece and sweat pants to get over this gross weather.

Ahhh, I too got stuck in the rain, while walking on campus from class to class – not fun at all (especially since it’s only 30°F here).
Wow, that bean salad melt looks DIVINE!! yum!! and I’m quite anxious to see your spaghetti squash dinner, since I LOVE spaghetti squash.

This is in respnse to the question about artificial sweeteners- I must apoligize- I didn’t mean to type spike bloog sugar, what I meant was they spike HUNGER. Here is a quote from the research study from Purdue University:
‘The study showed that rats fed yogurt sweetened with sugar did not eat as much as the rats fed artificially sweetened yogurt. The premise is that eating real sugar sets off a response that lets the body know that real calories are being consumed. In turn, the rat feels satisfied after eating.
Meanwhile, rats that ate the artificially sweetened yogurt did not have that response of being satisfied with the amount of food being consumed. They ate more, which caused them to gain weight and body fat.
To quote the Purdue study,’
“Our findings and theoretical framework are in closer agreement with the possibility that increased intake of no-calorie sugar substitutes could promote increased intake and body weight gain, which is consistent with recent data from prospective human clinical studies that have documented increased risk for obesity and metabolic syndrome in individuals consuming beverages sweetened with high-intensity sweeteners.”

Also, this is in response to someone who asked why eating an apple late afternoon spiked their appetite- I was thinking- maybe you should try eating the apple with CINNAMON sprinkled on it? Cinnamon has been shown in several studies to regulate spikes in blood sugar. More info on this can be found by simply googling.

Hi! I have a question for Kath regarding her ‘Fake it’ post earlier about intuitive eating. I think you are really good about making food choices intuitively (i.e., listening to what your body wants and when it wants it). But I was wondering about the other part of intuitive eating: listening to internal body cues to stop eating when our body is full. If we are truly intuitive eaters, does that mean we shouldn’t count calories? In other words, can eating be fully intuitive when counting calories is involved? Please don’t misunderstand my question; I really enjoy and respect your blog and your relationship with food. I was just wondering how you reconciled these two things in your mind, as it’s something I’ve thought about before. Thank you!

This has nothing to do with food, but what type of laptop do you have? It looks small and lightweight, which is awesome for college. I’m sort of regretting getting such a large laptop, and I’m definately going for a smaller one once this one dies (which hopefully, crossing my fingers, won’t be for a while…haha.)

Ok, question on how to accuratley figure out how much I should eat per day , I just want to make sure I’m doing it right. So if my bmr is 1396 I take that, plus my lifestyle (which is sedentary) and then my total energy requirements (from online calculators) is about 1560 (dep on calc, this is calorie king est. how accurate was cal king’s estimation for everyone else who used it? was is correct for you) and then 1560 is how many calories i should be eating daily to maintain weight if I didn’t do any exercise right? and then let’s say I workout and burn 300 cal, then it would be 1560+300=1860 cal is how much I should be eating for that day to maintain, is this correct?

At Winthrop, once I complete the R.D. requirements I will be 85% of the way to a masters, so I might as well go all the way. Plus, their Dietetic Internship is part of the graduate program as well. I guess that’s just how Winthrop does it. Plus, I’ve always wanted a masters in something and was really excited when I figured out a field I was interested in going back to school for.

It’s an HP DV-2500t. It’s NOT lightweight – I lugged it across campus in the rain today! – but I love it in general. Windows Vista is great (that’s what it came with). So overall I really like it a lot and would definitely recommend it. The husband has a tiny Sony that is much more transportable, but I knew I wanted something a little bigger even if it meant more weight.

I am 90% sure I’m coming to San Fran in July for the BlogHer Conference!! We could exchange wine for bread then, as I don’t think I’ll be able to make a trip to wine country 🙁 I’ll let you know when I know for sure. My mom is planning to come with me since she might be starting a doll blog! I’m also not sure if I’ll have time to get together, unless you come to the conf. It’s going to be jam-packed with events, but if we can get together we should!

Okay, Kath, the subject of GI foods is very interesting to me. traditionally, RDs have not accepted its theory. What did the rd you saw say about it, and did she give you a list of low gi foods? What are they?

I just now got your comment by email! Strange.
I think you raise a good point about intuitive eating and counting calories. I don’t think you need to be too full to eat too many calories. It’s definitely possible to eat too much healthy food, and that doesn’t mean you’re stuffed all the time. Foods vary so much in calorie density that you can eat a huge bowl of olive oil drenched cream sauce pasta and feel just as full as a big bowl of spaghetti squash with a light tomato sauce. Because fullness is more about volume than calories, I feel the need to use my brain and my stomach to keep an eye on what I’m eating. Does that make sense?
