A delicious packed lunch shot in the rain for the love of natural light!!
Perhaps there are some nutrients in those rain droplets
?[And hopefully no pollution! ]
Today I packed another salad – because it was the easiest thing to pack!! I try to alternate between salad + yogurt or sandwich + fruit/veggie sides type combos.
Today’s salad was exciting thanks to a few more toppings:
Spinach base with carrot, celery, pepper and broccoli (the staples) topped with raisins, some hemp seeds I brought back from One Lucky Duck (yes, they survived that journey!) and a little of Annie’s Goddess dressing, which I like a lot but don’t use often because it takes the right kind of salad (no cheese or hearty toppings) for me to like it.
My protein-rich side dish is an Oikos with some Galaxy Granola – cranberry orange!
And lastly, a Food For Life tortilla for chew to contrast crunch.
Afternoon snack to be consumed around 4PM will be an Alliebar!! My second-to-last because I shared with Emily and Lauri.
Is it really Wednesday?!
Veggielady4life says
Love seeing what your salad mix is for the day. And do you eat the tortilla plain alongside it or wrap any of the salad up inside? BTW… I love your little umbrella icon! Where do you find your codes??
Kath says
I just ate it plain!
Freya @ Brit Chick Runs says
Yummy lunch! I think you should use your powers of influence (being a big shot blogger and all :p) to persuade Allie to market her bars worldwide! Pure and simply cos I desperately want to try one 😛
Have a good afternoon!
Kath says
I’ve tried!
tiffany @ healthy little cottage says
Is she willing to at least post the recipe? I can’t find it anywhere and they look divine! 🙂
Laura says
I think she explained on her blog that she is keep schtum for the moment, whilst she finishes her degree, because she may *fingers crossed* be setting up her own bakery/business after her finals? Yay!
Beth @ Beth's Journey to Thin says
Good looking salad for lunch! It’s great how your toppings can really make a plain old salad exciting.
i have the opposite sentiment.. How is it ONLY Wednesday!? That might have something to do with the fact that I worked all weekend.
Jessica @ How Sweet says
Love your salads for lunch. They are great inspiration!
Lisa says
Goddess Dressing is my favorite dressing. Have you tried the Trader Joe’s version? I prefer that.
Steph- Exercise Physiologist & Artist! says
Yummy!! all that food goodness has to make up for the rain a little!
you are such an inspiration to me.
My last few posts have been all about me trying to find the balance between eating right and doing what I love (Painting!!)
I have turned to frozen foods and have dubbed myself the frozen food queen!
Seeing your fresh foods reminds me of how much I used to LOVE preparing and of course EATING fresh food!
Chloe (Naturally Frugal) says
You’re so good about eating salads – I got through ups and downs with them where one week I’ll have it every single day and then the concept of a salad drops off the face of the earth for another month or so. I’m thinking about making warm salads too because we’re still in our drizzly weather – maybe roasted veggies w/ goat cheese or something like that.
Mastering Public Health says
Hah, due to all the secretiveness behind them, I’m sure “Alliebars” will be a hit whenever she decides to somehow market them or release the recipe. Hope the sun comes out for all of us… actually, maybe not, or else I won’t be inspired to finish my work.
Heather (Heather's Dish) says
what a fabulous lunch! i wish it would rain here…it’s just super cloudy and gross looking but nothing’s happening!
Anna @ Newlywed, Newly Veg says
I’ve been adding hemp seeds to my sandwiches and salads– it’s a delicious addition!
shannon (the daily balance) says
also interested if you have the tortilla plain or if you wrap some salad inside. totally agree with your take on Annie’s Goddess dressing! i cannot use it when there is cheese on my salad! – which is basically ALL THE TIME, so sadly, i rarely use it!
Heather @ Health, Happiness, and Hope says
Those granola bars look so good! Hope it stops raining for you today!
Cynthia (It All Changes) says
That dressing is great but it does kind of take the right kind of salad.
Sorry you got rained on. But it is fun to play in the rain.
Sarena (The Non-Dairy Queen) says
We had the rain yesterday and it really cleaned up a lot of the pollen! Thank goodness! Salads are really the best lunch and it is all about the toppings! Have a great afternoon!
Michelle @ Give Me the Almond Butter says
I can’t believe it’s Wednesday either. I just can’t wait till Thursday is over, I have a HUGE project due tomorrow (which I am currently taking a break from 🙂 )
Erin (Travel, Eat, Repeat) says
It was definitely a soup kinda day for me. It’s not too chilly but after so much nice weather lately, this rain is SUCH a drag.
Jenn (www. j3nn.net ) says
Salads are the best! There’s so many ways to eat them. Yummm 😀

Shawna @ Balancing Me says
I’m digging into a gigantic salad as we speak! Yours looks so good! So fresh and delicious, I’m lovin’ it.
Carolyn @ lovinlosing says
Bleh to the weather. It’s the same here. I guess I’ll be going to the gym rather than on a run. 🙁
Jenny says
I know! How fast is this week going by?!?
Sarah (OC2Seattle) says
Raining here too, but at least the week is flying by!

Hi Kath,
I just wanted to say thank you for your post about looking at your injury-induced exercise hiatus as a gift of time. I have a serious case of tendonitis in my right achilles, and have been benched from running for 10 days now. I had been SO frustrated and upset, as I was really getting in a great running groove and upping my mileage and speed seriously for the first time since having my baby… this is such a setback! But, your post really spoke to me. As a new mom, I rarely have time for myself, so you have convinced me to look at that hour I would have spent out running as a time to just chill and take care of myself. Right now for example :)… I’m icing my leg and enjoying some blog time. This attitude adjustment is really priceless. Thank you so much.
Kath says
Thanks Sweet Mama! Wishing you a speedy recovery. And enjoy your me time in the meantime!
jen trinque says
I’m having my own version of a peanut butter sandwich today after seeing yours the other day – tomorrow I’m going to have to have a salad since yours looks so good.
Jessie says
Goddess is a lovely addition to nearly every salad – although I like cheese with it, too 🙂
I hopre your internship is going well!
KatieTX says
Fun fact: All rain is slightly acidic. Normal pH is 5.0, acid rain runs 3.0. Rain would be like vinegar to your salad! Not great to consume though as it definitely has some pollutants! This is what I get for studying atmospheric chemistry! More of a reason for the rain to go away!
Johanna B says
Miss hearing about your internship. I work in a hospital library and am always interested in medical things. I understand about HIPPA though.
Kellie says
What are the nurtitional stats on the food for life tortillas? They look tiny.
Kath says
They are 6″ I believe. 80 calories.
Jil @ Peace, Love & Munchies says
Those Alliebars always look so amazing.
Stacey@http://stacey-healthylife.blogspot.com/ says
The cranberry orange galaxy granola is by far my favorite out of any granola, so yummy.
The weather is crappy here also, yuck.
Angela says
Man! That bar looked so good I went to Allie’s blog to find the recipe just to find out she’s keeping it under wraps. Sighh we need a disclaimer that they are just eye candy for now. 🙁
marci williams says
i am having trouble ordering off your site, do you still have the special going on the garlic pack? and also I wanted the chia seeds which I can not seem to find in any store anywere?
Kath says
The Garlic Gold pack is going through Friday. The coupon is Garlicgold.

lynn (The Actors Diet) says
it’s raining here too – or is supposed to!
Amber K says
I never thought to eat the wraps plain. They taste great, but they simply refuse to roll for me without breaking into pieces. What a great idea!
Lisa @bakebikeblog says
I love how balanced your lunches are 🙂
Danica says

Jolene (www.everydayfoodie.ca) says
I can’t wait to eat outside!! Beautiful!
Hannah says
Oooh, you shared? You’re a better woman than I. I think I would have gone into hoard mode had I had an Allie who gave me Alliebars 😀
Tracy says
How did you like the hemp seeds on your salad? Did they get lost? I have some and I’m looking for ways to use them!
