Last night’s dinner featured a change of plans. Per usual!
We had just been to the grocery store and had a plethora of eggs. Thus, the quiche idea surfaced.
We didn’t want to wait for ages for a full-size quiche to cook, so we compromised and made mini quiches for one. Matt whipped up a beautiful crust. Read all about our quiche recipe and technique in this post! I snagged some crust dough trimmings as an appetizer. And I declared that I would like to eat pie crust dough on my birthday this year. Yeah.
The filling was simple: eggs (1.5 per person), half and half (a tablespoon per person), smoked cheese (a sprinkle), fresh tomatoes (~2-3 tbsp each), herbs de Provence, salt and pepper – a few pinches of each. We baked them at 400* for about 40 minutes, until the centers were set.
I was in charge of making a salad, and since I’m on a kale kick, I tried a version of the Whole Foods salad bar kale Caesar. Yes, I cheated by using the 365 Caesar bottled dressing (one of the few on this green earth that I like). I massaged the dressing into the kale to get it as tender as raw kale can get. Plus tomatoes and more of that smoked cheese shaved on top. Delish!
I’d be lying if I withheld the information that we also cracked open a little chardonnay from our Sonoma trip. It paired so well with the quiche! But since it was Sunday, glasses were small : ) We are hoping to make these quiches for company soon because it was so much fun having our own little servings, but first I need to buy a set of cute ramekin dishes! Mine are Crate + Barrel but I doubt they still make them.
Breakfast: a happy berry, spinach, milk, yogurt, oat and banana smoothie!

I would love to make a quiche with leftover meat, veggies, cheese. But would that be a frittata? I have been looking at ramekins for like 2 weeks now. I made a chicken pot pie in an 8X8 baking dish. My son at the center and left me and my daughter the sides. So I think I finally settled on WS Everyday Pantry soup/cereal bowls because they are oven safe. Might be too big for a quiche.
What do you think is the best size for a quiche?

We use a recipe very similar to the one in the vegetable quiche post. No prebaking needed!

I don’t but I usually just eyeball things…half a banana, about half a cup of berries, a handful of spinach, a big blob of yogurt, a palm of oats and enough milk to blend it.

The crust part of quiche is my favorite. Now that I’m getting more comfortable with making bread, I think it is time to try homemade crust next. Can’t wait to test out your recipe!
