A lunch-time 4.5 miles left me thirsty.
A little for me.
A little for you.
Thirst quenched.
Hunger, conquered.
Smoked salmon + greek yogurt + capers on Cville Crunch. The salmon was wild Alaskan King salmon that I won in my Foodbuzz Green Choice Award gift box. I am loving all the different flavors and kinds – King is the softest and most tender.
The trick to using the yogurt was to scrape the “cheese” from the top of the container and leave the wetter yogurt near the bottom.
On the side carrots + apple with peanut butter dough dip
This dip has really grown on me and this was by far the best application (on a salad = the least best). It’s all about the doughy texture!
Happy afternoon!
Hope @ With A Side Of Hope says
Your lunch plate is very colorful! I love it! 🙂 That peanut butter dough dip sounds very yummy!
Molly @ RDexposed says
Thirsty? Maybe you or the plant have diabetes. Or maybe I’ve been doing too many diabetes educations lately.
KathEats says
🙂
Gina @ Running to the Kitchen says
Haha, this makes me laugh b/c any time I say that to my mom (who is a NP) she says the same thing! Diabetes sort of runs in our family and she’s constantly questioning me on my thirst!
Hannah @ eat, drink, and save money says
Me too! I am always thirsty and super paranoid about diabetes. I make sure to get a blood test every year and each time I tell the doctor that it runs in my family and I am always thirsty… I may just be a hypochondriac…
Chelsea @ One Healthy Munchkin says
Haha I thought the same thing! I’ve been studying for my Clinical Nutrition exam all day and my head is stuffed to the brim with information about diabetes right now. 😛
Lorin says
I get thirsty a lot and my mom was like you have diabetes! I knew I didn’t but still kinda funny.
Mom says
I had ice cravings when I was in my forties. Drove Kath and Laura nuts eating ice. I finally went to the doctor and she said, “Anemia or diabetes.” Luckily it was anemia and easily fixed.
Maria @ Sinfully Nutritious says
You reminded me I need to water the plants. What would they do without you?
Your cville crunch looks awesome. What is in it?
KathEats says
Walnut s, flax, whole wheat
lauren @ spiced plate says
I love these photos — what a lovely lunch! I’m like your plant — thirsty all the time — but for tea!
Ashley @ Coffee Cake and Cardio says
I love that your monster has turned into an apple dip. Love it!
Katie says
Lovely lunch. I have been enjoying smoked salmon often, it’s one of those foods I don’t find paying a little extra for. I need to make it myself. The dip does look yummy.
Annette @ EnjoyYourHealthyLife says
AHHH that bread looks AWEsome. I want a sandwich for lunch now 🙂
Ashley@FoodNFitnessDiaries says
salmon and capers are one of my favorite combos! yumm.
Averie @ Love Veggies and Yoga says
Isn’t it interesting how certain things, foods, dips, etc can grow on you over time. Like they’re just okay or so-so when you make them but by the time you’re done, you’re actually really into them…that happens to me a lot! Some of my ‘projects’ that I almost pitch…I save…and end up liking!
Amanda says
You are inspiring me to pick up some capers. Love them!
Zoe @ loseweightandgainhealth says
Is that salmon grey? I have never seen grey salmon, it is always pink/orange. Love the idea of having it in a sandwich with yogurt and capers!
Kelly says
It’s funny…I noticed the same thing as well. I was looking at the sandwich and a little confused because I couldn’t find the salmon. It’s funny I often have the opposite reactions to certain things I’ve made. Instead of them growing on me, I become more and more sick of them the 2nd or 3rd time they make an appearance, especially if I didn’t love them in the first place.
Bridget says
For some reason, about 25% of the king salmon population do not eat krill, which is the food source that gives salmon their pink color. These 25% have white meat as a result, but are just as delicious.
Kelly says
Now I’m incredibly fascinated. I honestly had zero idea such a thing existed. But this seemed the most complete/interesting article I could find on it:
http://www.austinfitmagazine.com/Nutrition/Recipes/2009/March/The-King-of-Salmon-Is-White-Salmon-a-Better-Option.html
Kimberly says
Interesting…I knew that flamingos were pink because of the krill, but I didn’t know the same was true for salmon.
KathEats says
Wow,thanks for the info! I had no idea either – I just know it came from the right peeps!
Pat says
King salmon = yummy! We have a lot of frozen Copper Rive red/sockeye which is amazing as well. (Helps to live in Alaska, at least salmonwise!)

I learned about so many new (to me) foods to try on here. Part of what keeps me reading.
Rebecca @ Naturally Healthy and Gorgeous says
Smoked salmon and capers is one of my favorite combos!
Angela @ Eat Spin Run Repeat says
Mmm I love smoked salmon! Haven’t had it in far too long though. That type must be different to the orangey/pink kind I’ve had in the past though. Does it still taste the same?
Heather @ Health, Happiness, and Hope says
That sandwich looks so good! Love salmon!
Lisa (bakebikeblog) says
what a colourful lunch!
Fran@ Broken Cookies Don't Count says
Lunch looks tasty!!
Lindsey Grossman @ Lindsey Living says
YUM. I could eat salmon every day. And if Greek yogurt weren’t so pricey, I’d put it on everything! Great cooking AND condiment substitute.
Stacy @ Say It With Sprinkles says
I love your bright & colorful lunch!
Katelyn @ Chef Katelyn says
Greek yog as a sub for mayo is so smart. High in protein, and way healthier. Sometimes, when I’m so thirsty, it is literal magic to drink water. It’s like heaven.
J3nn (Jenn's Menu and Lifestyle Blog) says
Colorful and doughy and salty lunch… three of my favorite things.
Susan H. @ the food allergy chronicles says
I usually reserve smoked salmon for special occasions…however…I may need to splurge and surprise my hubbie with an impromptu ‘special’ indulgence. Perhaps we can celebrate finishing our Christmas shopping!
Christine @ Oatmeal in my Bowl says
Capers… YUM! Bet is went great with the salmon.
Katie @ Peace Love and Oats says
I keep forgetting to buy smoked salmon! So delicious!!
Angel7 says
Your pictures look awesome, and should be displayed in the museum of food 🙂
Cheers!

Hi Kath! Have you tried straining yogurt to make a sour cream/ cream cheese type texture? I have a nifty little strainer which sits over a jug in the fridge to do this – means that you get more of the “cheese” without the scraping technique!
Funny to see you with gloves on – it’s summertime here in New Zealand!
KathEats says
Yeah! I’ve made it before but didn’t find too many uses for it – I preferred the yogurt form. But this was fun to get the top part out!
allison @ thesundayflog says
tosca reno has a recipe in her eat clean cookbook for yogurt cheese. basically you strain yogurt and then add other stuff (fruits, zests, etc) to make it as a spread for bread and rolls and for use in other things. might help you find other uses for it! it’s delish
kathleen @ the daily crumb says
i love noon-time runs that make me extra hungry for lunch! your sammie looks delish 🙂
Marie@feedingfive says
I am impressed that you can exercise mid morning. I went running once about 2 hours after breakfast and never again. I still feel like I have undigested food and it gives me a stomach ache. Maybe it’s because my stomach is not as young as yours.
KathEats says
Breakfast is the ONLY meal I can run after – and I have to wait 3 hours!
J @ Ess and Jae V2.0 says
Dough, you said? Like cookie dough?? Oh, wait. That just might be my holiday thinking.
