Happy Weekend!! Matt went on his annual trip to the National Homebrew Conference, so Mazen and I took a road trip of our own – down to Charlotte to visit our BFFs Caitlin and Henry!!
Henry happened to be turning TWO over the weekend, and we were thrilled to be able to celebrate with him! He is the cutest!
We had a wonderful time hanging out with the Boyles. Mazen got Henry some Thomas the Train bath toys that were a big hit!
The food in their house is so healthy and delicious. Upon our arrival I feasted on this salad made up of Caitlin’s fridge crumbs. She sure knows how to prepare for salad consumption!
Later that evening we headed out on a double date with the boys {Caitlin’s husband was still at work}
We went to the famous The Cowfish Sushi and Burger Bar! The last time I was in Charlotte we had tried to go but the line had been an hour long, so we ended up somewhere else. When I tweeted at the time, Cowfish tweeted me back and invited me in the next time I was in Charlotte. Two years later I took them up on the offer for dinner on the house!
Mazen was pumped!
Henry knew we were in for a treat
Check out how cute this kiddo bento was. A slider, sweet potato fries, oranges, a rice krispie treat with a swedish fish and a tattoo! A big hit and full of surprises!
I tried three of the specialty rolls for my dinner – all seafood {FYI, the Cowfish menu is MASSIVE – so many choices!}
First off: Riggs R&R Crabcake roll. Tuna, avocado, and cream cheese topped with crabcake and baked. Loved the cream cheese + crab combo!
Next, the Foreplay Roll: Fried oyster, tempura asparagus inside, topped with salmon, sweet eel sauce. Served with spicy mayo. I don’t think I’ve ever had fried oyster sushi before – a new fav!
But my favorite roll was this mango-avocado bomb!
The Neon Dion Roll: Tempura coconut shrimp, kani, English cucumber inside, coated in tempura flakes. Topped with fresh mango, avocado, spicy honey marmalade and coconut flakes. Mango + coconut for the win!
I took plenty home for lunch the next day. Thank you Cowfish for the special treat! I didn’t have room for any burger-sushi because I’m a seafood fanatic, but next time I’m going to the wild side : )
A little energy burning before bedtime
We had the best time watching So You Think You Can Dance and eating chocolate after the boys were in bed both nights. Love that show!
For breakfast the next morning we had a big spread of things, including eggs with spinach, fruit and Great Harvest Gluten X bread I brought. The perfectly steeped English tea was my favorite part!
The boys had a little trouble with sharing, but otherwise they got along great.
We took them on a walk after breakfast in the Bobs
Then we all went swimming!
We went by Great Harvest to say hi and buy some bread
It’s shocking to me that we lived in Charlotte for 5 years. It seems like SO long ago!! I drove by our old house to say hello : )
A late lunch – leftovers!! Yuuuuum.
Those of us who were not pregnant enjoyed some vino for cocktail hour.
And while we relaxed, the kiddos played and the grownups filled water balloons for Henry’s party!
For dinner we had Emily’s famous black bean burgers along with a plethora of veggies, quinoa and salad.
Ready, set GO!
We are taking them to the beach together soon – can’t wait!
Final breakfast!! And fuel for the big party. Eggs, blueberries, PB toast and more tea.
Henry had about 15 of his friends over for his party, and it was so much fun! Great weather and lots of water splashed by all.
We ate pizza, watermelon and cake!

That looks like such a fun weekend! Traveling to see friends looks like an absolute blast…this post comes at a good time b/c my hubs is trying to convince me to move out of state in the near future. So far, he’s interested in Southport, NC. We’ve talked about NC or TX before. He likes that Southport is close to the water, do you know anything about that area?
I’ve been to Mooresville for work a couple times and everyone was much friendlier than they are up north.

Southport is beautiful and right near our beloved Bald Head Island! It’s a pretty small town, but Wilmington is close by. However, Wilmington is a small town itself. Go watch the movie Save Haven!! It’s set in Southport and so pretty (although yes, it’s a movie!)

My question is this – a lot of the old photos seem to have been replaced with logo photos that say I heart Kath Eats.com. Am I doing something wrong or have a lot of the older photos been removed?

As a Charlotte resident, I love Cowfish! My husband works uptown and often swings by there on his way home from work and gets take out! That way, no waiting! Our favorite rolls are the Tropical Storm roll and Mark’s Roll + avocado (at the bartender’s suggestion). But our all time favorite is the tuna “nachoes” on the appetizer menu. Omg, is it delicious with the fresh tuna, guacamole, diced tomatoes, and spicy mayo on wonton chips! To die for!
We need to try the foreplay roll. We don’t care for the one topped with the crabmeat and baked, because there is something yucky about warm sushi, IMO!
Never had a burger there because I love sushi too much, although they look awesome. You know Cowfish is putting in a restaurant at Universal Studios in Fla, right?
