Happy Sun Day!!!
I know it’s not sunny across the country (hope you are not in danger of a tornado where you live : ( ) but it is perfect here. Matt and I went on a walk/run to the greenway this morning. We walked there together and then he ran ~4 miles while I walked 1.5. The goal was to meet right at the 30 minute mark, but somehow he was way fast. I wonder if it was less than 4 miles. But we walked back in together and then home. ‘Twas the first time I brought my Camelbak on a walk and I’m sure glad I did!
Lunch followed at 1pm.
Isn’t there a saying “Thick as split pea soup?” Because ours was so thick it was like a hummus! I spread it on toast (heated) and topped with cheddar and put it all in the toaster oven for 5 minutes.
Big ole orange on the side
Matt had a pork salad
Drink the Kool-aid! [Watered down juice]
Porch time!!

Nice orange and green theme on multiple levels!

And Sun Hat! That open faced sandwich looks lovely. I love melty cheese on bread in the toaster oven, mine usually includes grilled avocado slices as well. Yum.
KathEats says
D’oh forgot that one!
Sana says
Is Matt going to run any races?
KathEats says
Not planning on it. I think the warmer weather has just inspired him to run harder. But maybe!
mary @ minutespermile says
I’ve heard of toast dipped in soup, but this is the first soup I’ve seen spread on toast! Creative!
Catalina @ Cake with Love says
After seeing all this “mashed” avocado sandwiches on ur blog, I started having them too, I like mine with hard boiled eggs on top and some black pepper – soooo good!!
Jennifer (The Gourmetour) says
That weirdly reminds me of what I’ve been loving lately. Avocado mashed into thick chunks with cilantro over toasted rye bread!! Soooo yummy, you’ve gotta try it!
Fran@ Broken Cookies Don't Count says
Sounds like a great day!
Katie @ Peace Love & Oats says
enjoy that beautiful weather!!! We’re pretty warm here in chicago but very cloudy and windy! Storms are coming!
Averie @ Averie Cooks says
Love the nature pic at the top of the post…so pretty outside where you’re at!
And the melty cheddar, mmmm, good!
Maria @ Sinfully Nutritious says
Cville just seems like a perfect place to live. Your lunch looks so good. I got some sun this morning and ended up having fruit and yogurt with some Uncle Sams on top. Warm weather is great for eating light. I am off to get my dinner veggie grill packs ready!
I love spring…

I love taking my Camelbak on a walk. It’s thirsty business! 🙂
Chelsea @ Designs on Dinner says
Your day looks much better than mine. Grey, rainy, with the possibility of a thunderstorm, hail, and possible tornado. Eek!
Enjoy your sunshine!
Andrea says
Random question – do you reuse your straws? I usually reuse mine (washed well of course) and was wondering if I’m the only one?! 🙂 Have a great rest of your SUNday!
KathEats says
Yeah, if it’s just water or juice/water, I do for a while
Pat says
Do you know you can buy a stainless steel straw? Very handy if you’re a person who uses them all the time.
KathEats says
yeah, but aren’t they realllly hard to clean inside? Good for just water though.
Sarah says
If you look over at Carrots and Cake you’ll find info on stainless straws.
Leah says
I love my glass straws from strawesome.com! I bought a set a couple years back and use them daily. You can throw them in the dishwasher or just rinse right away with hot, soapy water. Easy to clean and beautiful. : )
Ashley @ My Food 'N' Fitness Diaries says
looks like a lovely day!! i actually enjoy split pea soup a little thicker. our’s always seems to thicken after sitting in the fridge for a day or two. great idea to spread it on toast! i’ll have to try that.

Love that river picture at the beginning!

What a beautiful place for a walk/run! Cool idea for your thick pea soup! It would taste awesome with that melted cheddar! Yum!

I just barely discovered your blog and have had a lot of fun reading through it (I’m sure I haven’t even scratched the surface yet). The thing that stands out the most to me right now is how small your meals are. Do you only eat 3 times per day? How does one slide of toast with thick soup, cheese, and an orange fill you up? How does one pork salad fill up a man? Do you have a secret? Please share!!
KathEats says
I think it’s heartier than you think! That was one dense hunk of whole wheat bread topped with a good half cup of soup and an ounce + of cheese. And we both had snacks a few hours later!
susan says
Interesting sandwich combo.
Amanda- The Nutritionist Reviews says
Wow I can’t believe your pea soup got so thick! That’s crazy.
Lauren @ Oatmeal after Spinning says

thanks for sharing the great idea of boiling potatoes the other day! i only boil them when i make mashed potatoes, but it’s so obvious haha. i had some leftover steak to eat up tonight, so i ended up steaming a red potato, carrots, and broccoli, and it was a FANTASTIC meal. your blog continually gives me great ideas for incorporating real foods in quick ways 🙂
KathEats says
Yay! I want to do it again soon too!

Good use of the soup..I also love adding thick soup to rice as an alternate to curry!

What a gorgeous day! Your outdoor adventure sounded perfect. 🙂 We were on the edge of the tornado threat but despite some high winds and rain (much needed) all was well…
