Pumpkin Soft Serve Ice Cream!
Back in 2008 Gena discovered the magic of banana soft serve. And the blog world imploded. This banana “ice cream” is just frozen bananas, blended in a food processor until they are creamy and slightly fluffy – like soft serve ice cream. I don’t make it nearly as much as I should! Seeing that it’s pumpkin season, I figured a pumpkin version was up for a test.

Meanwhile, barkTHINS sent me a handful of their flavors to try out. barkTHINS are the ultimate “snacking chocolate.” I’m down for a dark chocolate snack anytime! They are fair trade and GMO free and made with ingredients like coconut, almonds, sea salt, quinoa and pretzels.
I took these on our road trip to Charleston, and they made a great post-lunch snack in the car. They’re also ideal as a late-night treat when you don’t want to weigh yourself down but are craving something that will satisfy sweet, salty and crunchy all in one.
Warning: portion control is a must because these are so delicious: crunchy, rich and packed with different textures. Love all the sea salt variations! Luckily because of the nature of bark, the chocolate is easily broken into smaller pieces so you can have as much or as little as you desire at a time.
How to make pumpkin soft serve
For the pumpkin soft serve, I used a cup of frozen bananas plus some pumpkin, vanilla and pumpkin pie spice.
Put these in the food processor and whirl away. You might need to scrape down the sides –
But eventually it will smooth out –
The healthiest ice cream around! The ripe bananas are so sweet there is no added sugar necessary.
I put the barkTHINS in a bag and pounded them with my garlic press to crush them for a topping.
Pumpkin Soft Serve
Ingredients
- 1 cup frozen ripe banana
- 1/4 cup pumpkin
- 1/2 tsp vanilla
- 1/4 tsp pumpkin pie spice
Instructions
- Put ingredients into a food processor and blend until smooth.

If you add 1T of nut butter per banana you use, the batch won’t freeze rock solid. Hope that helps! 🙂

Barkthins are so crazy delicious. Sometimes we purchase the Costco versions for the office, and I loved the one that had pumpkin seeds in it. I am not sure I understand why they call it “snacking chocolate” – it’s just chocolate candy!
