with Cremini Mushrooms + Baby Spinach
I was on my own tonight (husband had class) and he’s not the biggest fan of pumpkin, so I decided it was the perfect night to try a savory pumpkin dish! It did NOT disappoint!! YUM!! I think it could use some tweaking, and if you don’t like pumpkin I wouldn’t recommend it, but for start of just throwing together flavors, I’d say it turned out great. Plus, it was SO easy and quick to make!
1) Cook whatever pasta you like (I used 2.5 oz of dry rigatoni)
2) Cook whatever veggies you like on the side (I sauteed cremini mushrooms and a big handful of baby spinach)
3) Make pumpkin sauce in a small saucepan on stove. When hot, combine with other parts.
- 1/2 a cup of canned pumpkin
- 1/2 a cup of a milky liquid (I used 1/3 cup leftover light coconut milk plus a splash of hemp milk! You could use cream, half and half, whole milk, skim milk, almond milk – whatever you have on hand. But note the sauce will be thinner with thinner milks.)
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 1 tsp dried sage
- 1 tbsp grated Parmesan cheese
4) Top with 1 more tbsp Parmesan cheese
My serving was roughly 400 kcal, 10 grams of fiber and 18 grams protein. Surprisingly filling too!
With hot tea and white wine –
I was naughty this afternoon and went to hang out at the Fresh Market and Target instead of writing my paper 😳 But I came home with fresh coffee (we’re all out!) and counter cleaner (desperately all out!) and a few other necessities 😉
I worked on my paper all afternoon – it’s basically complete at 15 pages (that’s old-school double spaced) but I have to do works cited and edit/proof the whole thing a few times. It’s nice to be done!
I didn’t want to stop for a snack, but around 5:00 my stomach was calling to me so I had some Quackers – LOVE these!! Melissa, my bag is almost empty!!! Just kidding 🙂
THEN, in the middle of my paper I got the classical “computer crash of death” screen totally randomly! Luckily I push “Control S” every few lines, so I didn’t really lose anything, but it sure was scary.
That’s why I decided it would be nice to have a glass of wine 🙂 Here is is with the auto recovery!
The husband has off work tomorrow for Good Friday! Whoo hoo!

Mmm that looks good, I was going to try to make something similar the other night but got too lazy to figure out a pumpkin pasta sauce, but its ok, I used up the pumpkin today in place of oil in cookies 🙂
I’m jealous you got your paper done, I need a rough draft (not even completed!) research paper for next Wednesday and have no idea how to go from the boring articles to a paper…have any tips 😉

Yeah, we need to do something Asian soon! I got sick of soy sauce and rice wine vinegar our first year out of college – that’s all we cooked! Fresh Market is a little more specialty than WF. More expensive gourmet things than wide-spread healthy. I prefer WF 🙂

I’m on a real pumpkin kick lately, and this is doing nothing to help that! I made pumpkin whoopie pies a few days ago, and plan to make pumpkin waffles tomorrow.

I give you a lot of credit for finishing your paper early! Two years ago, I had to write a 60 page paper over a philosopher; I started the weekend before it was due.
Needless to say, 3 days worth of all nighters DOES NOT do a body good. I still get the shakes if I get too close to a Red Bull.

I always buy Libby’s Pumpkin because that’s what my grocery store has. I bet there are some store brands too, but I think Libby has a big monopoly on most non-gourmet stores.

There was a thunderstorm here in Dallas the morning we were supposed to leave, so our flight was canceled. We didn’t think it would be that big of a deal, but it turned out the all of the flights from everywhere to Hawaii were booked and, since we bought our tickets using airline miles, we got put on the lowest priority level for getting reassigned to another flight. We weren’t going to be able to get out for 6 days, so we had to take a refund instead and scrap the whole vacation. 🙁

I make a dish similar to this, but with Butternut squash. I am not a huge fan of pumpkin, but it is great with the butternut. Sauteeing fresh sage leaves is also nice instead of nutmeg! YUM!

I’m not quite sure what it needed. Maybe just more salt!? Or just some more intense flavors. I’d have to play around with it. I might just need to add some more spices like more salt/nutmeg/sage or maybe some other things like brown sugar? It was just a tad on the bland side. Feel free to give me any suggestions!

Oh Kath…..I’m you a few years back, no cooking knowledge (trying to learn though), so unfortunately I don’t have advice.
Thanks for your help though. One other question, you said your stomach does expands during the day too. I have been thin my whole life, but I am curious did you notice your stomach do that when you were overweight? I am wondering if it has something to do with thin people.

When I was overweight I had no clue what my body did day in and day out. I basically just always felt fat and bloated, probably because I was overweight and bloated from eating and drinking too much lots of the time. I have found that now I am much more sensitive to overeating, alcohol and anything that would “throw off” my body. Or maybe I’m just a much better listener…. 🙂
I’ve always been cold, but my coldness has definitely increased with the reduction of insulation 🙂

I made this recipe tonight and really enjoyed it! I don’t have sage, and I added some curry powder instead. Your pictures are better but I really like the lovely yellowy-orange color. NH didn’t like it as much as I did but he gave it a good go so I’m proud of that. I’ll be taking some leftovers for a work lunch later in the week.
