Hi KERF readers! I’m Jamey, a current Food, Nutrition, and Dietetics student working on becoming an RD! I reached out to Kath a few months ago looking for guidance in my journey becoming an RD. Being the kind soul that she is, Kath not only provided me with great advice, she has made me to part of the KERF team! I am forever grateful for the opportunity!
On to the reason I’m here today. Kath has been kind enough to let me take over KERF to share a yummy recipe with you!
I am the first to admit I have addiction to pumpkin. Once October hits (okay… maybe September), I add it to whatever I can.
As a foodie, I always have my eye on the latest trends. Have you noticed how popular dates are lately?! These tasty fruits are finally receiving the attention they deserve!
Seeing all of the versions of pumpkin and date recipes out there inspired me to create my own!
With only three ingredients, this recipe seemed too simple at first. But, my mama taught me that sometimes simple is best. Boy was she right! These tasty little guys are tender and sweet. Best part? No baking required!
Start by adding a half cup of pitted dates and one cup of pumpkin in a food processor. Process until smooth.
Then, add a half cup of coconut flour.
Let it whirl and you’re left with this beauty! Coconut flour is very absorptive. It holds everything together while providing a soft texture and delicious flavor.
Roll the “dough” into balls.
Feel free to keep them plain or roll them in coconut or chopped nuts!
The dates and coconut provide the perfect amount of sweetness. With no refined sugar, these bites make a healthy treat!
Pumpkin Coconut Date Bites
Ingredients:
- 1 cup pumpkin
- 1/2 cup pitted dates
- 1/2 cup coconut flour
- Optional: shredded coconut and chopped nuts for garnish
Instructions:
- Pulse dates in the food processor until mostly smooth.
- Add pumpkin and blend.
- Add coconut flour and blend until well combined.
- Roll into bite-sized balls.
- Roll into shredded coconut and/or chopped nuts, if desired!
Enjoy as a healthy treat or as a tasty snack!

I would give it a go! You may have to add a little sweetener since coconut flour provides some of the sweetness!

It depends on how many bites you make from the batter! If you make 12, they”ll come out around 30 calories each!

I would think so because of the pumpkin…the dates and flour would be fine at room temp but I wouldn’t want to leave canned pumpkin out for long periods unrefrigerated.

These were pretty good, I added some pumpkin pie spice and a hint of maple syrup. The texture weirds me out a little for some reason though. Never liked the texture of pumpkin pie and it’s very similar to that.

Just made these. I am a no-refined-sugar gal, and these really needed a touch more sweetness. Honey maybe? And pumpkin pie spice sounds like it would be a good addition. Texture was a bit strange. Either way, I’m thankful to have tried something new!
