Body Pump was great. Lauren met me there and she did great this week! She ALSO brought me a jar of SUNFLOWER BUTTER!!!!!!!! WHEEEE!!!!
The Local Food Hub also delivered our local produce to the bakery and brought us blackburries!!! Poppin ‘em like candy!
After Pump (which was killer on the upper body today – feeling rather weak up top!) I showered and biked down to the bakery. I always arrive right at 12 when our lunch rush begins and had to postpone lunch a bit. Finally got to sit down around 1PM to a delicious sandwich-turned-salad!
I topped some garden greens leftover from our employee meeting with the makings of our Tofu & Pesto sandwich
High Five on the side!
I also brought in a chopped peach from home. I was going to bring him in whole, but I realized he would be majorly squished from my gym clothes, so I chopped him up instead. I much prefer chopped fruit anyways!
This was one of those healthy lunches that leaves you warm + fuzzy inside because it was so delicious + nutrition : )
It’s time to tackle June payroll, taxes, sales tax, and other “close the books” expenses. Not the most fun part of running a business!!
T-4 hours till First Friday Fun!
Jenny @ Fitness Health and Food says
oh my goodness what a fresh, beautiful and delicious looking lunch! 🙂
I hope you get your work done soon so you can enjoy the holiday weekend! 🙂
Hillary says
Those berries look too good to be real!!
Melissa @ HerGreenLife says
Seeing your blackberries reminded me that I’m supposed to email some people about getting starts for blackberry canes for our garden. Thanks 🙂
Gina @ Running to the Kitchen says
I think chopped up fruit is way more satisfying than eating it whole too.
Freya (Brit Chick Runs) says
Tofufu and pesto – nothing like it! I’m officially a pesto fan now too 🙂
Hillary [Nutrition Nut on the Run] says
I prefer chopped fruit > whole fruit, too.
Happy Friday!
Meagan says
While I lived just a little too far away (Northern VA) to make a trip to Charlottesville easy (I’ll make it there sometime!) you inspired me to seek out my local Great Harvest Bakery (Vienna, VA). Went there this morning and picked up Red, White, and Blueberry scones for 4th of July weekend, a carrot raisin muffin, and got offered a free sample of apple-scrapple bread, which I am now eating along side my lunch salad. Yum!! I tried to explain to the two guys behind the counter that I was coming there because I got inspired by your blog…but I am pretty sure they thought I was crazy! Oh well. 🙂
KathEats says
Wheee!
Baking 'n' Books says
What time does the bakery open and close during the week?
I’ve never had pesto! (I don’t think?) I’m addicted to marinara – with cheese – oye.
Are you getting many customers that stay to eat? Or take take and go?
Do you eat “in the front” where others can? Or have an employee room to ‘hide-away’! 😉
Lauren @ What Lauren Likes says
I cant seem to find that brand of sunflower seed butter near my area! It looks soo tempting though!
lynn @ the actor's diet says
dontcha love when people bring you little gifts like nut butter? it totally makes my day!
Holly @ The Runny Egg says
I am a fan of chopped fruit as well — maybe because I like to eat with utensils instead of my hands? I don’t know.
Baking 'n' Books says
Yeah, it eliminates juice running down your chin as well 🙂
Emily says
Well I think that would be the most fun part of running a business (after nibbling on yummy bread, that is), but that is what you get for “talking to” an accountant!
Also, the peach and berries look AWESOME!
Happy Holidays!
Catherine@happinessafterheartache says
I like whole fruit, myself. Love that satisfying bite, and eating all the way down to the pit. And getting your hands all juicy and sticky. Weird, I know.
chelsey @ clean eating chelsey says
I love blackberries so mch, but I hate the big seeds! They’re always getting stuck in my teeth!
Tami@nutmegnotebook says
I would hate the paperwork as well but having a lunch like that would make it all worth while!
The peaches are so delicious right now!
Cait's Plate says

Kath, how do you bike and not have your lunch spill in your bag? I love to pack fruit, but it almost always drips in my bookbag.
KathEats says
Maybe it’s my tupperware? I have the little glass containers. They do leak sometimes – I put them in a lunchbox by Built NY

Awesome lunch!! I love how you refer to the peach as a “he.” (haha) I do the same thing with foods. Drives my husband nuts. 🙂
Kate (What Kate is Cooking) says
I haven’t had blackberries in ages! I crave them 🙂
Molly @ RDexposed says
Pesto sounds so good right now! I need our garden basil to grow a bit more before picking every last leaf for basil though.
J3nn(Jenn's Menu and Lifestyle Blog) says
Love the blackberries! I wanted some but they didn’t look so great at the store and were too expensive. Hopefully I’ll have some nice ones soon. 🙂

Christine (The Raw Project) says

Kelly @ Foodie Fiasco says
The blackberries are gorgeous. Between them, the chopped peach (chopped fruit does rock), and the tofu pesto? Sounds like a good food day to me. 🙂 Good luck with the “close the book” expenses. It’s nice to have that sort of work over and done, isn’t it?
Ellie@fitforthesoul says

Mmmmm pesto tofu!!!! 🙂
Margo @ Peanut Butter Trees says
I’m much more likley to eat my fruit servings if I chop them beforehand. I don’t know what it is, maybe that’s easier to eat while reading/working? Either way, it helps to get my fruit in!
robin says
So do you ever eat red meat?
KathEats says
Yes. I love bison and grass-fed beef. I only eat sustainable, human sources
Angie @ Musings of a Violet Monkey says
HumanE sources? 🙂
(I’m not picking on you, I swear. This just made me chuckle!)
