Ever made a Swedish heart? My grandmother send me a V-day craft project in the mail!
Not sure I’ve quite figured it out yet!
I worked all morning on a Home Neat Home post and polished up my Kath, RD page with a ton of freelance work, affiliations and media coverage over the past 3.5 years of blogging. I’m glad to have it all in one spot!
Matt and I went out on a run before lunch. Would you believe it is 68 degrees here?!!?! INCREDIBLE! The high on Friday is in the 70s! I’ve taken the winter off of running more than ~4-6 miles here and there. Warmer weather makes me crave a hard run again, so I hope to get back into it soon!
We ran 4.5 miles in 45 minutes all around our neighborhood.
Then we ate eggs! Is it Easter yet?
I made a green salad with a few veggies, drizzled in olive oil and honey and salt and pepper, topped with an egg, topped with a chopped fig, some chopped rosemary and THE BEST BLEU CHEESE!!
Plus half an apple (shared with Matt) with Nuttzo PF!
Sparkles
I’ve been craving lemon cookies because of my JR Watkins lotion. Do any of you have any good lemon cookie recipes that are similar to Girl Scout cookies?!
Joyce @ Flowing to Fifty says
Sadly, no good lemon cookie recipes for you. But now I have to go research the Swedish heart! Looks like a lovely puzzle/card. Enjoy your V day.
Annette says
What a lovely run I am sure. No lemon cookies- but make sure you grate (a clean!) lemon rind into whatever recipe you use because it brings out the flavor so much more!
Christie {Nourishing Eats} says
Wow, you have had so many accomplishments from this blog – go Kath!!! It is 70* here also, I was able to get out for a really long, nice walk and it was awesome. Spring is in the air so early and I couldn’t be happier!
Hillary [Nutrition Nut on the Run] says
Enjoy the sunny “spring” weather. We had our share last week, now it’s typical February rain today =/ Beautiful lunch – mmm!
Melissa @ HerGreenLife says
I’m glad I got out and enjoyed the wonderful weather here over the weekend, but this makes me sad that now I’m stuck at my desk at work all week 🙁 I’ll at least be getting out and taking walk breaks every day, though.
We also have lots of greens for salads this week, thanks to local farmers with hoop houses. I like hard boiled eggs on salads, but I’ve never thought to top a salad with a fried egg. Interesting . . .
Allison @ Happy Tales says
Looooove the heart-shaped nutbutter on your apple!! And today is GORGEOUS here in Charlotte… it’s up in the 60’s here, too!! Happy Valentine’s Day to y’all! 🙂
Stacey (The Home-Cooked Vegan) says
It’s the same weather here! I LOVE IT. We are expecting 73 on Friday, woo hoo! Glad you were able to go for a run on this beautiful day 🙂 Enjoy your Valentine making!
Holly @ Couch Potato Athlete says
I love that it is getting warmer out!!!
And how adorable is that Nuttzo heart on your apple! If that wasn’t cone on purpose I am super impressed! 🙂
No idea about lemon cookies, but I want some!
caroline says
thats ALL you ate for a meal after running 4.5 miles?!
KathEats says
It was plenty filling!? Do I need to do a calorie count for you?
caroline says
I’m sorry, you’re right I shouldn’t judge by just a picture-that’s unfair. You don’t deserve that, especially on valentines day. Keep up the good work, your blog is wonderful and I do admire your creativity with food!
Katy (The Singing Runner) says
I hear you on wanting to run in this wonderful weather! I can’t wait till I’m healed from my injury! I always seem to get injured when the weather is at it’s best. :/ Haha…oh well!
Averie (LoveVeggiesAndYoga) says
marvelous job, Kath, on getting everything assembled all in one place. Such a great feeling but such an undertaking. Glad you’ve got it all organized.
Love the heart-shaped dollop of Nuttzo, too 🙂
Samantha says
My kids have been making those hearts all week 😀
Mom says
Oh good! We need to send your kids to Charlottesville to show Kath.
Samantha says
That would be fun, but I think Google-ing would be cheaper 😉
lynn @ the actor's diet says

Angie @ Musings of a Violet Monkey says

As much as I love eggs, I have never eaten a fried egg on a salad. You always give me such great food combination ideas! Happy Valentine’s Day!
Eliz@The Sweet Life says
I love the Swedish heart AND the logos on your page! Wow–very impressive.
Maryann (The Balanced Bean) says
I agree–I am just not down with running in the winter!!
Mary (What's Cookin' with Mary) says
your lunch looks like mine !
Emily says
Hi Kath! I’ve been searching for some copycat girl scout lemon cookies, too. I found this site that had some recipes: http://shine.yahoo.com/channel/food/girl-scout-cookies-year-round-9-copycat-recipes-youll-love-2438912#photoViewer=1
I haven’t tried any of the recipes yet, though.
KathEats says
Cool, thanks!
Ashley says
Best lemon cookies ever: Paula Deen’s Gooey Butter Cookies! (http://www.foodnetwork.com/recipes/paula-deen/chocolate-gooey-butter-cookies-recipe/index.html) Just replace the chocolate cake mix with lemon cake mix. My mom and I dislike lemon desserts but LOVE these. Sadly, they aren’t healthy – but they’re completely worth it.
KathEats says
Ooo!! I don’t have cake mix in my house though 🙁
Maddie (Healthy Maddie) says
I’m loving the warmer weather! The PB heart on your apple is so cute.
Valerie @ City|Life|Eats says
Love the apple with the heart 🙂
Natalia - a side of simple says

You’ve built up quite a an extended portfolio, online and in print! Congratulations!
Angela @ Eat Spin Run Repeat says
I wish I had a lemon cookie recipe because I love the Girl Scout ones! The Beyond The Blog section looks great Kath – it must be so nice to look back at all those accomplishments. Congratulations!
Sarah @ The Strength of Faith says
It’s beautiful here, too! It got up to 55! (CT – that’s warm for here!) I stopped at one of the waterfalls on my way home to take some photos – http://www.thestrengthoffaith.com/2011/02/gorgeous.html. It was funny to see the water gushing through the holes in the ice.
Thanks for organizing all of that info! I can’t wait to see some of the online stuff you’ve done.
Baking 'n' Books says
I am excited to go check about that page – thank you. I had a work lay-off today and am terrified. I need hope. Badly.
Would love some of that sun!! (literally and figuratively 😉 )
Jessica @ How Sweet It Is says
I used to love those lemon girl scout cookies. Mmmm.
Lynda says
Happy Valentine’s Day! I’ll think of a healthy lemon cookie, and get back to you. Just wanted to share a new sprouted bread I love from French Meadow Bakery; Sprouted 16 grain & seed. Found it at my local health food store and loooooovvve it!! I thought you would too.
Give it a try, thanks for all your wonderful recipes and photos, you inspire me everyday!
Lynda
Mary @ Bites and Bliss says
I remember making Valentine’s Day crafts in elementary school..they were always so much fun. 🙂
Alexa @ The Girl In Chucks says
JR Watkins! OMG! I just thought about something I haven’t thought of in years…the Watkins Man!
Back in the day, Watkins products were sold door to door. It was really important for people who lived out in rural areas and such. Over time, the practice faded, however I remember in the 80s, my grandmother used to get visits from the Watkins Man. They would schedule an appointment (like you would with an Avon rep) and the Watkins Man would come to our living room and show us all of his new products. Then my grandmother would place an order.
Thinking back, I guess my grandmother didn’t really need to call the Watkins man…we lived in San Francisco, after all. Maybe it was a throwback to her days growing up in northwestern Georgia, far away from big cities? No idea. I just remember The Watkins Man, and it makes me smile! 🙂
KathEats says
Interesting story!
Kiran says
Love the apple with Nutzo! Happy V-day Kath & Matt 🙂
Hannah says
Rosemary and blue cheese! What a wonderful idea to combine those two strong flavours!

PS. Love the nut butter heart on your apple 🙂
KathEats says
THanks y’all!
Alaina says
We were in the high 40s today and I loved it! I can’t wait for more outdoor running weather.
Is your heritage Swedish? My great grandmother was born in Vastervik, Sweden. I would love to go during the summer solstice. 🙂
Marci says
Your freelance work is really inspiring. Not just Oprah but all of it. I have done some local things (not that Houston is small!) but moving bigger has been a challenge. It’s always great to see what is possible to come from blogging.
Simply Life says
the new pages/updates look great!
Laura @ Sprint 2 the Table says
Have you tried the Trader Joe’s lemon cookies? THey are pretty good!
Read about an MIT grad invention that turns brewery waste into fuel to power the plant and thought of you guys: http://bit.ly/fhhl23. So cool.
KathEats says
We don’t live close enough to TJs!
Cool about that brewery!
Amanda (The Nutritionist Reviews) says
The fixed up pages look great! You have had many accomplishments!
Katelyn @ Chef Katelyn says
I think my insides would literally explode if it were 68 degrees here, I would be so happy I would turn into bits and pieces! That lunch looks beautiful, and I can’t wait to check out all of your “behind the blog” work!
p.s. I used to make those hearts ALL the time, if I remembered how to do them though I would so tell you!
Sarah says
I’m in Richmond and I’m loving the warmer weather too. The Nuttzo heart is adorable as is your grandma’s gift! As for the redesigning, it is amazing that you have accomplished so much in 3.5 years of blogging. Congratulations.
I haven’t had the Girl Scout Lemon Cookies but last winter I made and loved Buttermilk Cookies with Lemon Zest and Lemon Glaze. I wrote about them here: http://citysatiety.blogspot.com/2009/12/buttermilk-cookies-with-lemon-zest-and.html and I found the recipe through Molly of Orangette: http://orangette.blogspot.com/2008/04/because-of-cookies.html who adapted it from Gourmet.
KathEats says
Thanks!
Toni says
I would love to read your articles that you published in the magazines, but when i click on them it is too small to read. Can you make links to the actual articles? Very impressive!
KathEats says
They are not all online. You can find the Breathe ones all at ReadBreathe.com though.
Anna says
When you find a winning recipe….you HAVE to share it!!! Lemon Pastry Cream GS cookies are my faaaavorite, even though they don’t make them as sandwich cookies like they used to 🙁
Chelsea @ One Healthy Munchkin says
Wow Kath, you’ve done so much! Congrats on all your accomplishments!
Lori says
Not really like the Girl Scout ones, but these lemon drop cookies are wonderful! She has a ton of lemon recipes on her blog…
http://www.yourhomebasedmom.com/the-cookie-jar/
Sarah (Running to Slow Things Down) says
I love the Girl Scout lemon cookies. So delish. Sadly, I have yet to find a recipe that is quite so good. BUT, I do love Giada’s lemon ricotta cookies from the Food Network. 😀
The heart shaped, nut buttered apple is adorable. And what a lovely salad. 😀
Katie says
Wow! Congrats on your accomplishments Kath!!!!! So glad you got that page all together and neat too!!!
I love your apple with PB!!! Looks so sweet!
I hope you and Matt had a wonderful Valentines Day! Looks like you did! xo
Jess (Sweet Potato) says
I love that you made a heart with the spread on your apple 🙂
Emily @ Savory and Savage says
Ohhh, runny egg yolk on a salad? My favorite!
Camille says
I’m hoping warm weather will inspire me to run distances again. Perhaps to eat better as well 🙂
Donna says
The heart crafts are so cute…Thanks to your grandma for “mail” sharing. I, for one, appreciate them. I “get” them…and can remember making them. Even though you said “My grandmother send me a V-day craft project in the mail!”…I think you meant “sent,” I hope others will relate. It’s a vintage project that stands the test of time. Love it. I hope you can figure it out.
Christin@purplebirdblog says
I love the puzzle card!! Too cute!
Stephanie @ Thorns Have Roses says
I love crafts. I admit that my soul is probably as old as your grandmother. 🙂
Joy says
I am behind in my reader so you may have already made the cookies but anyway…
Melissa at trying to heal makes these and I have made them a few times and everybody tells me the lemon ones taste like gs cookies (I am vegan so I’ve never tried these or the gs cookies so I can’t really comment)
Lisa Fischoff says
These are not like girl scout lemon cookies but I made them the other day and they were SO good the whole batch was gone by the next day! http://thesimplespatula.com/?p=524
you can easily replace the limoncello with lemon juice if you like
