I have got to step away from the computer – my shoulders have been killing me lately and Matt hurt his neck (not too bad) so he can’t massage them! (Or rather, I haven’t asked). I’d book a real massage but I am too busy to spare a morning or afternoon right now!
Lunch is always a nice break 🙂
I made a killer pesto panini!
I used the Pestos with Panache Smoked Almond + Prosciutto pesto – so amazing! Smothered that on a slab of raw tempeh on Great Harvest Dakota and gave it a buttery sizzle in a pan
Think I got a little too excited with the heat!
On the side – the last vegetables we have for salad
Spinach, carrot and pepper plus orange, date, sunflower and buckwheat. Balsamic for drizzle
Drank.
My workout today involves walking + biking while running errands. Our weather is iffy so normally I would just drive, but today I am just prepared to get wet!
Let’s hope I don’t get caught in thunder and lightening though…that would be scary.Peace!
Justeen @ Blissful Baking says
The pesto panini does look killer. Awesome lunch!
Lucy @ The Sweet Touch says
Ack – it must be raining everywhere today. It hasn’t stopped here in over a week!!! You know it’s bad when it smells like worms the minute you step outside. But hurray for the good attitude – be careful if you go biking in it!
Holly @ The Runny Egg says
The panini looks super delicious — and I like them a little more on the burnt side too. So crunchy and good.
Angie @ Musings of a Violet Monkey says
I’ve never had tempeh… (and I was a vegetarian for 5 years!). What is your favorite brand?
That pesto looks divine! I just planted 4 basil plants, and hope to be able to make scads of pesto this summer, again.

I like this brand/flavor or the Litelife Flax has good nutritionals.
Danielle @ weightsandmeasures says
Sandwich looks delicious! I love fruit in my salads. I hope you don’t get stuck in a storm!
Angela @ Eat Spin Run Repeat says
Yummm your panini looks so amazing! My shoulders are killing me too – I can’t wait for 5pm to come so I can get away from my desk!
Freya (Brit Chick Runs) says
Pesto and tempeh!? Why have I never thought of that!!?? Ohmy, sounds so good.
I hope you avoid the rain 🙂
Sarena (The Non-Dairy Queen) says
Sorry about your shoulders and Matt’s neck. That stinks! Epsom salts always help me when I get sore. Lunch looks delicious!
a farmer in the dell says
I was just going to mention the same thing! Epsom salt baths are the best for sore muscles. And maybe a glass of wine too.
KathEats says
I did PR for the Epson Salt Council for 2 years – I should know better!! Need to pick some up 🙂
Kate (What Kate is Cooking) says
I would freak out if I got stuck in a thunderstorm- I’m scared of lightning! Hope the weather cooperates for you 🙂
Kaley [Y Mucho Más] says
Well, you can always wear a garbage bag poncho! Those are quite useful!
Amanda (The Nutritionist Reviews) says
Looks like a great salad with the orange!
Miranda @ Working Mom Works Out says
Be careful working out if you’re already sore. 🙁
KathEats says
It was just walking and biking – no upper body anything. And the only thing that makes my shoulders feel better is to get OUTSIDE and away from this computer!!
Baking Books says
You find your shoulders? I always find my back – mid back especially. I know I sit too rigidly too…and not even fully in the chair! Do you find your back?
Love the colors of the pics! Good luck with the rain – I went out for a walk and got drenched 10 minutes later. I know it’s only water. But it’s cold. And only okay for the first 10 minutes – before you have an extra 10 lbs of “wet” added to you to drag home…
SquatLikeALady says
I also want to know what your fave brand of tempeh is! I am having terrible luck with it so far. =0(
Seems like the weather has been iffy all year!

See my comment above 🙂

I’ve been on a big pesto kick lately and have been adding it to everything lately! (Thanks, Mom, for sending me back to school with a batch;) )

I know that feeling of being overwhelmed, over worked, and running low own food for home. Best of luck. I hope you can carve out a little time for yourself.
Joy says
I love all kinds of vegetarian products (like veggie meat, tofu, etc.) and incorporate them into my diet often so as to lessen my meat intake but for whatever reason, I cannot get into tempeh. I don”t know what it is but I actually have a visceral hatred of it, lol. You do make it look appetizing though 🙂
Karen says
Joy, I like it plain raw or steamed, without any flavorings but do have a hard time converting others. Try marinading it (and/or saute it) in some appealing combination of tamari (or Bragg’s amino acids), mustard, spices. Or, try sauteing in fresh juice from an orange, tiny amount of agave w/ ginger. Just about any flavoring that will complement your meal would be good – tempeh is pretty much a blank canvas.
Don’t give up yet – it’s such an easily digestible form of fermented minimally processed soy w/tons of fiber and protein, even in the smallest of portions.
Joy says
Thanks, Karen!! I’ll def. use some of your suggestions. I want to love it, I just don’t yet, lol. But Kath makes it look so good, I’ll def. try, try again 🙂 Thanks again for the suggestions!
Liz @ Tip Top Shape says
I totally understand having to get away from the computer. If I stay on for too long it wreaks havoc on my eyes.
Cait @ Beyond Bananas says
I would so love to be able to have all of the meals that you have! I have yet to see ONE that I would be disappointed with!
kaila @ healthy helper! says
I hope you have better luck than me with the weather….i just got caught in an awful thunder storm while on a run! Luckily I wasn’t to far from home! Aren’t oranges on salads the best!?!?

I am new to your blog and have loved loved loved your site! All of your ideas are so fabulous. I’m grateful for you!
Your salads look incredible!! When you use honey/oil/lavendar salt as your salad dressing, how do you make that…about 1/2 honey, 1/2 olive oil and a little salt?
Thank you so much,
Meredith
KathEats says
Welcome Meredith!
I drizzle on about 1/2 to one teaspoon each of honey and olive oil, depending on the size of the salad. Then I just pinch 2-3 pinches of salt on top.
Meredith Boyd says
Kath, Thank you so much. So appreciate your reply and can’t wait to try. When you used the balsamic drizzle today, did you just drizzle a little balsamic vinegar on top of that delicious looking salad?
KathEats says
Yup!
Chelsea @ One Healthy Munchkin says
I hope you managed to avoid the rain, and especially the thunderstorm! I refuse to go out if there’s any chance of lightening now because of my past run in with lightening hitting a tree (err, rather, the tree’s run in with ME). 😛
Averie (LoveVeggiesAndYoga) says

*laughs* To me, nothing is toasted until it’s verging on burnt! I’ll eat it if you don’t wanna! 😛
Lauren says
I love the sandwich salad combo for lunch. PS-If you book a massage, I would drive down to NC and go with you! LoL, I’ve been dying for one for months now but I just can’t seem to find the time!! I need to make it a priority. I feel like if I can make time to workout, I can also make time for much needed muscle therapy. 🙂
Melissa says
Ack! We are having mad crazy weather around here! Hope you weren’t caught in it!
