Had a GREAT morning:
- Bought a new COMPUTER!!!!!!!!!!!!!!!!!!!!!!!!!!! An HP desktop. So excited I’m about to burst.
- Turned in a looming assignment
- Had a fabulous run
I set out running around 11:30. I had positive energy, so I decided to make it a speed day. When I run for speed I breathe HARD. And what tires on me first is my lower calves. Guess I’m pushing off harder? Two tricks I do for speed:
1) Sprint down hills. I try to get my pace under 7:00 going downhill (and my neighborhood has lots of hills, so this happens a lot)
2) Run up hills on my toes. My uphill pace is about 9:00 so I am averaging between 8:25-8:30 on the flats these days.
I ran about 4 miles in my neighborhood and ended at a middle school track where I decided to do a timed mile. I ran the 4 laps not as fast as I could but as fast as I could maintain with a solid pace and finished in 7:41. Need to bump that up and multiply it by 3 for my 5K this weekend! I’m a HUGE believer in muscle memory, so I wanted the last thing I ran to be fast. Practice makes perfect! I jogged a slow mile back to my house and probably did about 5.5-6 total. My legs are tired!!
That extra mile took a bite out of my lunch time, and I ended up rushing out the door with a satchel of packed foods –
Main course was a Brie and Pumpkin Butter sandwich on High Five Fiber [Crunch!]
Brie is the new Laughing Cow 🙂
I ate half of my sandwich in the car (not exactly placemat friendly!) along with a giant carrot. I just finished the rest of the sandwich now – at 3:30. My run took away my appetite so I wasn’t starving during class, but I think I’m going to have my snack now too because I can feel it catching up with me…
Gotta new cottage cheese!!! + Mix My Granola for more crunch
All packed up plus…
The carrot I ate in the car and a pear and Glo-Bar to have during MNT. I didn’t have time to pack a dinner so I hope I don’t get too hungry before I get home at 8:30! If so, I’ve got even more snacks to tide me over 🙂
[OMG – just took a bite of the Lemon Verbena Berry cottage cheese and it is heavenly good!!!!!!!!!!!]
Sorry to be so scattered brained! Must study!

The pear mangosteen is my favorite Rachel’s flavor, but this lemon verbena is a close second.

Also have discovered that great harvest bread. SO glad to live in a town with a G.H.! Finally!
Mama Pea says
I can’t decide if you are more excited about your computer or the cottage cheese. I’ll trade you some gruyere for a new laptop.
Erin says

Loved your description of your run – sounds like a perfect run. Where did you find that baby brie? I think I need to have those on hand! The tiny little jar with granola in it is too cute, too!

Aren’t those mini bries from Costco SO perfect?! I can never finish a whole humongo wedge before they go bad so the minis rock my cheesy socks!

Heather @ Health, Happiness, and Hope says
Congrats on getting a new computer! I’d love to see some pics! 🙂
I totally agree on the “run uphill on your toes.” I live in the country on some very hilly roads, and I use that concept whenever I run.
Gabs says
Do you eat the whole carrot, unpeeled? If so, do you always buy organic?
Eileen says
I have the same question as Gabs about the carrot? I have out of habit more than anything else peeled my carrots, but I am wondering if I’m missing out on some nutrients by doing so… just curious.
I am now on the lookout for tiny bries like yours- I love brie!!!
Have a good night in classes.
K says
WOOHOO for a new computer!! Their always so shiny and fast! I love the looks of that brie – yum!
Hallie (Healthy Twists) says
That sandwhich looks incredible and I don’t even like Brie! Haha I say that about most cheesy things though. Congrats on the new computer. I want/need a new one SO bad but I’m making myself hold off…maybe if/when I start grad school next year, I’ll be able to justify the purchase. Right now I share my boyfriend’s computer, so when he has to study and I want to blog, guess who wins? 😉
Edna says
I want your cottage cheese! You guys in the states are so lucky – we can’t get anything interesting like that in the UK. I’m pretty sure the British are not meant to eat healthily – its so much harder!
Congrats on the new PC – very exciting!
Wendy says
YAY for the new computer!!! And that cottage cheese looks yummy.
Way to go on the run!, But please, please, for the sake of your knees be careful on the downhills!! I know they feel easy and make you want to fly, but when I was struggling w/knee issues over the summer, downhills would ALWAYS make them hurt worse. Make sure your form is good – here is a link to a good article from Runner’s World:
http://www.runnersworld.com/article/0,7120,s6-238-263-264-13100-0,00.html
On the uphills, though, I do the same thing as you. And I use the rubber band mental trick – imagine a rubber band stretching b/n you and the top of the hill and pulling you up. Sounds silly, but it works! Hills=speedwork in disguise!!
Sarah @ The Foodie Diaries says
I need to find those little Brie wedges; do you the brand’s name?
Also YAY for HP!!! I LOVE mine!
Jenna says
brie cheese and pumpkin butter! sounds like an interesting combo!

Angela (Oh She Glows) says
I’m so pumped for you and your airport run! hehehe. Something about that makes me laugh…I love the idea! I’m sure you will ‘fly’. Ok that was lame! lol
Andee (LAEasyMeals) says
I feel you, school work is getting so busy now before the holidays. It’s definitely harder to make home cooked meals, instead it’s mostly cooking in the morning and eating out of a tupperware at night 🙂
Joelle (The Pancake Girl) says
Gahhhh I love Rachel’s cottage cheese!! It is delish, esp the pear flavor!
Yay for a brand spankin’ new computer!
Brynne says
Pumpkin butter and brie seriously sounds like it should be on PB&J’s level.
Bev says

Naomi (onefitfoodie) says

lemon verbena cottage cheese sounds so interesting! 🙂
Rita says
that sandwich looks great! I never would have thought of the combo of pumpkin butter & brie, but it sounds amazing.
Liz says
Hey I’m sorry if the answer to this question is out there and I couldn’t find it… but, where are your little spoons from? (like the green one in your new header) they’re adorable!!
Caroline says
As I am reading along and I see the flavor of your cottage cheese I am thinking “hmmm Lemon Verbena Berry, that sounds like it would be weird or absolutely to-die-for”. I guess you answered my question and I am going to have to find it!
Kath says
RE. BRIE: From Costco! The brand is that one with like IL in the title and the Italian flag. Sorry I am too lazy to go check! I will try to remember to photograph the label next time!
Gabs + Eileen,
I eat the skin and I do not buy organic carrots. As far as I know, they are not part of the dirty dozen? I do always wash them though and I take off any bad spots. I don’t think you’re really losing any nutrients by peeling them – just a layer of carrot flesh.
Wendy,
Thanks for the article!
Liz,
It’s on the FAQ page 🙂 But they are Crate + Barrel.

Cynthia (It All Changes) says
I love those tricks for hill running. I never know how to do them for working up speed so I love the tips.

That’s awesome about the new computer! Congrats!!!!
I’ve been meaning to try those cottage cheeses. They are pricey but the flavors sound so good!
Stephanie says
hope you liked the lemon verbena rachel’s ! i was not really a cottage cheese fan until i tasted this exactly flavor – totally hooked & love it 🙂
Kath says
Whitney,
I don’t know of any, but you should try reaching out to some RDs in your town and see if you can shadow them or do a summer internship?
Best of luck!
Kath
Katharina says
I have a question for you Kath. What brand are those individualized bries?? That’s such a great idea! And I love brie with pumpkin butter. Actually camembert is delicious too and grill it then layer on some sweet basil. It’s spectacular!
BroccoliHut says
I am seriously considering getting a Costco membership for those cute little brie cheeses alone!
Vesone says
This is the first time I’ve come across your website and I have to say a couple of things.
I’m definitely trying some of the recipes on this website, definitely different than anything I’ve incorporated into my own lifestyle.
Your energy is infectious and it’s just through writing, I’ve really enjoyed reading through your articles and learning a little more about you…I can see why your blog is so popular.
And one last thing, your pictures are insane! The reason I’m trying the recipes is because of the presentation you give them with the gorgeous photos.
I look forward to more of your content. Awesome stuff.
Kath says
Thanks so much Vesone !

Brie & pumpkin butter eh? I can see how that would work. Although really, what doesn’t go with brie? 😀
Meagan says
BRE yum!!
