Because I have anything but the post-Christmas blues! I’ve actually had a blast these past few days taking down our decorations and detoxifying my body with a few good workouts and healthy food. The best formula! See above breakfast for example 🙂
I’ve been living at the Juice Laundry this month. For five years I’ve been waiting for a juice and smoothie place as hip and cool! I want to do an on-site video soon : )
I finally tried their overnight oats, which you can customize with any toppings you like. I went with banana, chia and raw granola. The overnight oats are made with cashew milk and without yogurt (I believe they are vegan and officially gluten-free). I loved the sweetness the cashew milk brought – and great texture!
This is a lunch photo I never shared from before the holiday – salad with leftover panko tofu and green curry veggies!
And here’s yesterday’s lunch – an Asian crunch kale salad that I have in the recipe queue topped with manchego and smoked salmon!

Curious about the first picture of the sunny side up eggs with grapefruit. I am in the camp of sunny side eggs, I love a runny yolk (miss them now that I’m expecting!), but I never make them without toast to soak up the yolks once they break. Do you really just eat them alone and enjoy them? Do you use a spoon? Haha weird question but I’m curious!!

Haha good question. I try to soak it up with the white and fork, but sometimes I do have to lick the plate at the end 🙂
