The rain is coming down
I emailed Kelsey last night to see if she wanted to go to EarthFare for lunch and we decided to do a potluck lunch. It certainly takes the sting out of having to pack a lunch when you know there will be other parts coming!
Here’s our spread:
I brought GH Flax Oat Bran Buns and Kerrygold cheese and she brought Crazy Pumpkin Bean Dip and Cabbage Slaw and another cheddar to make sandwiches. The Crazy Pumpkin Bean Dip was really good –but really strange! It had “all of the above flavors” in it.
She brought carrots; I brought Food Should Taste Good Lime Chips!
And I brought strawberry salad with flax + honey. It looks gross but tasted good
We had leftovers and I nibbled my way through more dip, more strawberries and the rest of my chips (which I had planned to save for Foodservice)
1 class, 1 test to go and it’s home free till the weekend (sans Food Science Lab on Friday…)

At my work they’ve been trying to do somewhat regular pot lucks but they turn into a weird mix of not so great stuff… and someone always brings a KFC family meal… blech!

Great lunch! I love doing potluck lunches with friends. A friend of mine used to bring her dog to the park across the street from my work and we’d have potluck lunchs! Looks delish.

Love the idea of strawberries with flax and honey. I also really like strawberries with a touch of honey and balsamic vinegar — you marinate it for an hour or so. I fell in love with this dish in Italy!
